KUMQUAT MOJITO
Kumquats have a sweet, edible skin and bitter juice. Chef Allen Susser uses this often-ignored fruit to make mojitos, a popular Cuban cocktail.

Steps:
- Reserve 4 kumquat slices for garnish.
- Place remaining fruit slices in a large cocktail shaker.
- Add the sugar, 4 of the mint leaves and lime juice.
- Crush the kumquats and mint into the sugar with a bar mallet or large spoon until sugar dissolves.
- Pour in the rum; shake well. Fill two tall glasses with crushed ice; strain mojito over ice.
- Fill the glasses with club soda; stir lightly.
- Garnish with remaining mint leaves, kumquat slices and sugar cane.

- In a large pitcher, stir together kumquats, orange juice, and sugar. Let stand 10 minutes. Add fresh mint leaves. Muddle mixture with a wooden spoon, crushing kumquats and mint. Stir in rum. Add ice cubes, and serve immediately. (Or, add ice to 8 glasses, and pour mixture over.)

This is a winter twist on a classic summer cocktail! I love kumquats because they are tangy with a hint of sweetness. When in peak season, they're so juicy they explode with freshness to wake you up from the winter blues.

- Add the whole kumquats, mint and sugar to a small pitcher. Muddle until the mint leaves are broken down, the sugar is dissolved and the kumquats are softened. Add the lime juice and seltzer and stir to combine. Strain into 2 tall glasses filled with ice. Garnish with mint sprigs and the kumquat slices.
