This is my favorite molasses cookie. I use the recipe not only to create little houses for Christmas but also to make bunnies for Easter and stars for the Fourth of July. -Karen Haen, Sturgeon Bay, WI

Number Of Ingredients 14

1 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs, room temperature
1 cup molasses
1 to 1-1/2 teaspoons grated orange zest
5-1/2 cups all-purpose flour
3 teaspoons baking soda
3/4 teaspoon salt
3/4 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup water
Optional: Royal icing or frosting and food coloring of your choice

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in molasses and orange zest. Combine flour, baking soda, salt and spices; add to creamed mixture alternately with water, mixing well after each addition. Cover and refrigerate for 3 hours or until easy to handle. , On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut with a 3-1/2-in. gingerbread house cookie cutter dipped in flour. If desired, create windows using very small cutters of various shapes. , Place 1 in. apart on greased baking sheets. Bake at 350° for 8-10 minutes or until edges are firm. Cool for 2 minutes before removing to wire racks. Use icing or frosting and food coloring to decorate cooled cookies as desired.

2 cups all-purpose flour
¾ teaspoon baking soda
¼ teaspoon salt
2 teaspoons ground ginger
½ teaspoon ground Saigon cinnamon
⅛ teaspoon ground cloves
½ cup butter
⅓ cup Stevia In The Raw® Bakers Bag
¼ cup Sugar In The Raw®
1 eggs
¼ cup Karo® Dark Corn Syrup
⅓ cup Sugar In The Raw®, or as needed

Steps:

  • Preheat oven to 350 degrees F.
  • Combine flour, baking soda, salt, ginger, cinnamon and cloves in a medium bowl; set aside.
  • Beat butter, Stevia in the Raw®, and 1/4 cup Sugar in the Raw® in a large bowl with mixer at medium high speed until well mixed. Beat in egg and corn syrup until smooth. Stir in flour mixture. Refrigerate dough 1 to 2 hours or until easy to handle. (See Tip below.)
  • Place 1/3 to 1/2 cup Sugar in the Raw® in a small dish. Shape dough into 3/4-inch balls; roll in sugar. Place balls 2 inches apart on greased cookie sheets.
  • Bake 7 to 10 minutes or just until edges begin to brown. (Do not overbake or cookies will be dry.) Cool 1 minute on baking sheet, then remove to wire racks to finish cooling.

i love making gingerbread houses, but add to the packaged variety and find this version to be more sturdy for building houses (and economical as well as lower in sugar)

1 lb gingerbread mix, krusteaz brand
3 cups flour
1/3 teaspoon pure stevia powder
1 teaspoon kosher salt
2 tablespoons cinnamon
3 -4 tablespoons ground ginger
1/2-3/4 cup hot water
1/4 cup butter, melted

Steps:

  • add mix and dry ingredients in large tupperware or other bowl, stir well to blend.
  • combine hot water with melted butter and add to the dry ingredients, stirring to mix into a stiff dough. refrigerate for at least an hour to make easier to handle. roll 1/4 thick and cut out house shapes or cookies. bake according to directions or at 350 about 20 min or until golden brown, if you want a ginger snap cookie, bake a little longer.
