8 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1-1/2 cups vegetable oil
1-1/2 cups granulated sugar
1-1/2 cups red or white wine
1/2 cup almonds (toasted, finely chopped)

Steps:

  • Preheat the oven to 375 degrees.
  • Sift the dry ingredients together in a bowl and set aside.
  • Using a hand mixer or a stand mixer fitted with the mixing paddle, beat the sugar with the oil and wine on medium high speed for about 5 minutes.
  • With the mixer running, slowly incorporate the dry ingredients into the wet until a smooth dough forms. Add the chopped almonds and incorporate well.
  • Transfer the dough to a lightly floured surface and gently knead. If the dough is still very sticky, you can add a bit more flour. Allow the dough to rest a bit before shaping.
  • To shape the cookies, pinch off a piece of dough about the size of a walnut. Roll out a cord or thin tube of dough about the length of a dinner knife. Fold in half then twist two times.
  • If you'd like, you can also roll out the dough into ½ inch thick sheets and use a cutter to shape your cookies.
  • Bake in a preheated 375 degree oven for about 15 minutes or until nicely golden brown.

This is an easy working Greek cookie dough & can be worked into various shapes, including the more traditional sprial, ring & S shapes! NOTE: Cooking time is based on having three baking sheets to go in the oven, one after the other! This recipe is very kid-in-the-kitchen friendly!

Number Of Ingredients 13

1 cup white wine
1 cup granulated sugar
1 pinch salt
1/2 cup sunflower oil
1/2 cup olive oil
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 tablespoons sesame seeds, preferrably toasted
1 teaspoon baking soda
2 tablespoons lemon juice
8 cups all-purpose flour (more or less)
2 teaspoons baking powder
4 tablespoons sesame seeds, again

Steps:

  • Preheat oven to 340 degrees F.
  • In a large bowl, beat together wine, sugar, salt, oils, cinnamon, cloves & 2 tablespoons sesame seeds.
  • Dissolve baking soda in lemon juice & stir that blend into the mixture in the large bowl.
  • Sift or whisk flower & baking powder together, then add 5 cups of this mixture to the large bow with the initial ingredients, mixing with handsl
  • Continue adding flour & kneading until dough doesn't stick to the hands ~ Don't use all the flour if it isn't needed! Knead until dough is soft, about 8 minutes.
  • TO MAKE SPIRALS ~ Take a piece of dough about the size of a small egg & squeeze a few times to soften. Scatter a few sesame seeds on the work surface & roll dough through seeds into a strip about 8 inches long. With strip on work surface, wrap into a spiral shape & tuck the end under the cookie.
  • TO MAKE RINGS ~ Take a smaller piece of dough & roll out as above into a strip about 7 inches long. Form into a ring & pinch ends together with wet fingers.
  • TO MAKE 'S' SHAPES ~ Take a larger piece of dough & roll out as above into a strip about 10 inches long. Working from both ends, wrap spirals in opposite directions until they meet in the middle.
  • Place cookies on a nonstick or lightly oiled baking sheet & bake about 30 minutes.

1-1/2 cups butter, softened
1-1/4 cups sugar
4 large eggs, room temperature
2 tablespoons orange juice
3 teaspoons vanilla extract
5-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add 2 eggs; beat well. Beat in orange juice and vanilla. Combine the flour, baking powder and baking soda; gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle., Roll dough into 1-1/4-in. balls. Shape each into a 6-in. rope; fold in half and twist twice. Place 2 in. apart on ungreased baking sheets. , In a small bowl, beat the remaining 2 eggs; brush over dough. Bake at 350° for 7-12 minutes or until edges are golden brown. Remove to wire racks.
