Number Of Ingredients 25

12 cups beef broth (see recipe)
1 ounce dried shiitake mushrooms
1/2 -inch piece peeled fresh ginger, sliced
2 teaspoons soy sauce
1 medium head Napa cabbage, halved lengthwise and cut across into 1-inch strips
3 tablespoons kosher salt
1 teaspoon grated fresh ginger
3 cloves garlic, peeled and minced
4 scallions, minced
2 tablespoons seeded and minced hot red chilies
2 tablespoons fish sauce
2 tablespoons water
1 teaspoon soy sauce
1 scallion, minced
2 small jalapenos, seeded and minced
1 tablespoon cider vinegar
1 1/2 teaspoons toasted sesame oil
1/4 teaspoon kosher salt
1 1/2 teaspoons toasted sesame seeds
3 medium cucumbers, peeled, halved lengthwise, seeded and thinly sliced crosswise
4 cups cooked white rice
1/4 cup chopped chives
8 scallions, sliced on the diagonal into 1/4-inch-thick pieces
2 cups grated daikon or regular radish
1/2 pound beef eye round, sliced for carpaccio by your butcher

Steps:

  • To make the soup, place the broth, mushrooms and ginger in a large pot and simmer for 30 minutes. Strain. Stir in soy.
  • At least 1 day ahead, toss the cabbage with the salt in a large bowl and let stand at room temperature for 3 hours. Rinse and firmly press out the liquid. Combine the ginger, garlic, 4 minced scallions, red chilies, fish sauce, water and soy and toss with the cabbage until well coated. Place in a tightly sealed container and refrigerate up to 5 days.
  • For the cucumber salad, combine 1 scallion, jalapenos, vinegar, sesame oil, 1/4 teaspoon of salt and sesame seeds in a bowl, add the cucumbers and toss well. Set aside.
  • Toss the rice with the chives. Place the kimchi, the cucumber salad, the rice, the scallions and the radish in separate bowls. Arrange the carpaccio on a plate. Ladle the soup into bowls. Serve, passing the condiments separately.

Cut beef across the grain into very thin slices. Combine beef, soy sauce, rice wine, sugar, and garlic in a large bowl, tossing to coat. • Discard stems from shiitake mushrooms and slice caps 1/8 inch thick. Trim ends from enoki mushrooms. Trim ends from oyster and white mushrooms and slice 1/8 inch thick. • Arrange scallions, carrots, and mushrooms separately in bunches (like spokes of a wheel) in wok. Clear a space in center and spoon in beef with marinade, then scatter chiles over beef. Add enough water to just cover vegetables, being careful not to disturb the arrangement. • Bring to a boil on a portable burner (see cooks' note, below) on medium-high heat at the table. Reduce heat and simmer, covered, skimming any foam and stirring once or twice to break up any clumps of beef but being careful not to disturb vegetables, until beef is cooked through and mushrooms are tender, 5 to 7 minutes.

8 your choice of dumplings ((mandu), (560 g / 1.2 pounds))
300 g kimchi ((10.5 ounces ), thinly sliced)
300 g firm tofu (, sliced (about 1.5cm, 1/2 inch thickness))
1 pack enoki mushrooms ((200 g / 7 ounces), base stem removed & stems separated)
1 pack oyster mushrooms (or your choice of other mushrooms (200 g / 7 ounces), separated)
20 g green onions ((0.7 ounces), thinly sliced)
40 g onion ((1.4 ounces), thinly sliced)
4 cups vegetable stock (or Korean soup stock)
35 g crown daisy leaves ( (edible chrysanthemum), (1.2 ounces), separated from the main stem, (optional) )
1 red chili (, thinly sliced, (optional) )
2 Tbsp Korean chili flakes ((gochugaru))
2 Tbsp rice wine
1 Tbsp soy sauce
1 tsp Korean fish sauce
1 tsp minced garlic
A few sprinkles ground black pepper
fine sea salt (, if required - I didn't use it.)

Steps:

  • Place the prepared ingredients in a large shallow pot. (FYI, I laid down onion and kimchi at the bottom of the pot, then arranged the remaining ingredients on top, in sections.) Boil the pot over medium high heat until rapidly boiling then reduce the heat to medium low to low. Start serving the dish as individual ingredients get ready. You may turn the heat off at any time. Serve with steamed rice.
