You might find yourself purchasing zucchini in your grocery store all year around just to make these, they are *that* good! --- you will be lucky if these even make it to the table lol! you may also add in some canned corn niblets or some cooked rice, although garlic powder may be used I strongly suggest to use fresh minced garlic, this recipe is very forgiving so don't worry about the the exact measurments--- these are delicious served with sour cream :) also take a look at my recipe#138173

4 cups coarsely grated zucchini, packed (one thin zucchini about 10-inches in length)
2 large eggs, slightly beaten
1 small onion, finely chopped (or use green onions)
1/2 cup all-purpose flour
2 -3 teaspoons fresh minced garlic (or to taste, or use 1/2 teaspoon garlic powder)
1/3-1/2 cup grated parmesan cheese
1 cup shredded mozzarella cheese (can use cheddar cheese)
1 teaspoon seasoning salt
1 -2 teaspoon fresh coarse ground black pepper (or to taste)
olive oil (for frying, or use vegetable or Canola oil)

Steps:

  • Hand squeeze out as much of the moisture in the zucchini as possible (this is important!).
  • Place the zucchini in a large bowl.
  • Add in all remaining ingredients except oil.
  • Mix well to combine and adjust seasoning salt and black pepper to taste.
  • Heat oil in a skillet over medium-high heat.
  • Drop the zucchini mixture by heaping tablespoons into hot oil and fry on both sides until golden brown.

This is an easy yet tasty recipe for zucchini, I make it often especially when I have my summer's crop ready, I find that a good quality Italian dressing will really make the difference, you can slice the zucchini in slices lengthwise also if desired, pick a large thick zucchini for this --- servings is only estimated.

1 large zucchini (washed, scrubbed and left unpeeled)
1/4 cup Italian salad dressing (can use a little more)
2 tablespoons olive oil
1 garlic clove, finely minced
fresh ground black pepper (to taste)
kosher salt (to taste) or table salt (to taste)

Steps:

  • Slice the zucchini into 1/2 to 3/4-inch slices (or as desired).
  • In a large bowl whisk together the salad dressing with olive oil and minced garlic.
  • Place the zucchini slices in the bowl and toss to coat.
  • Place on a plate, then sprinkle with freshly ground black pepper.
  • Allow to sit at room temperature for 10 minutes.
  • Place onto a hot grill.
  • Grill for about 4-5 minutes or until nice grill marks appear and the slices are slightly limp.
  • Remove to a plate then sprinkle lightly with kosher or table salt.

1 -2 tablespoon olive oil
1 onion
3 tablespoons japanese sesame seeds
2 tablespoons soy sauce
2 tablespoons butter

Steps:

  • Peel and cut up zucchini and onion into bite size pieces.
  • Pour olive oil into frying pan and heat on medium to high.
  • After pan is heated, add the zucchini, onion, sesame seeds, soy sauce, butter, salt, and pepper.
