KITTENCAL'S FRIED POTATOES AND CABBAGE

I have made this for years, it's just total comfort food that is filling and just plain good, you may reduce the butter amount if desired if you are watching your fat intake ---it has very few ingredients but makes a really great side dish you can even throw in some dryed smoked sausage if you like --- prep time includes boiling potatoes.

1 1/2 lbs russet potatoes, peeled and cut into small squares
1/3 cup butter
1 lb savoy cabbage, corded and sliced thinly
seasoning salt (to taste)
black pepper (to taste)
1/4 cup grated parmesan cheese (can use more or less)

Steps:

  • Cook the potatoes until tender; drain well.
  • Heat the butter in a 10-inch skillet over medium-high heat, the saute the cabbage, seasoning with salt and pepper until tender (about 10-15 minutes, might take longer).
  • Add in cooked potatoes, mashing and stirring them into the cabbage while leaving some lumps remaining, then pressing the cabbage and potatoes to form a cake; cook without stirring until the underneath is crusty and golden brown (about 10 minutes).
  • Sprinkle with Parmesan cheese and serve immediately.

I grew up on my mom's fried cabbage. I loved it even as a kid. To enhance the recipe, I added potatoes and a few spices.

1 head of cabbage
3 medium potatoes
1/4 c oil
1/4 c butter
1 tsp garlic powder
1 tsp salt
2 tsp pepper

Steps:

  • 1. Remove outside leaves from cabbage and discard. Rinse head of cabbage in cold water. Remove whole leaves from cabbage. Discard the core. Wash, peel, and slice potatoes.
  • 2. In a large skillet, over medium heat melt butter with the oil. Add potatoes and cabbage leaves. Cover. Cook on medium heat for 20 minutes, stir occasionally.
  • 3. Add spices, stir to coat. If it's dry add more oil. Cook additional 10 mins, or until veggies are tender.

This is perfect to serve at your Christmas or Thanksgiving table, and I have done so many times and received rave reviews from all, this has been a long time family favorite and sure to become yours also! For a sweeter taste you may increase the sugar amount in the potato mixture by a few tablespoons or to taste, the sweet potatoes may be baked and the pulp removed up to a day in advance if desired --- two 29-ounce cans sweet potatoes, drained and mashed may be used for this recipe, prep time does not include baking the sweet potatoes.

5 medium sweet potatoes
1/3 cup white sugar (use white or brown)
1/2 cup melted butter
2 large eggs, lightly beaten
1 pinch salt
2 teaspoons vanilla
1/3 cup evaporated milk (or use half and half cream or milk)
1/3 cup melted butter
1 cup brown sugar
1/2 cup all-purpose flour
1 1/2 cups coarsley chopped pecans or 1 1/2 cups walnuts

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Line a baking sheet with foil, then spray with cooking spray.
  • Prick each sweet potato with a few holes.
  • Place on the baking sheet and bake for about 1 hour or until fork-tender all the way through to the middle (baking time will vary slightly).
  • Cool the potatoes slightly then scoop out the pulp.
  • Place the pulp in a large bowl.
  • Add in 1/3 cup sugar (start with 1/3 cup and add in more to taste after if desired) melted butter, eggs, pinch salt, vanilla and evaporated milk or milk; mix with a wooden spoon to combine.
  • Transfer/spread the mixture to the prepared baking dish.
  • For the topping; in a small bowl combine 1/3 cup melted butter with brown sugar and flour; mix to combine.
  • Mix in the nuts.
  • Spread over the sweet potato mixture in the baking dish.
  • Bake for about 25 minutes or until completely heated through.
  • Delicious!

This makes a wonderful side dish to pork or beef, you may omit the chili flakes if desired or adjust amount to suit taste

4 slices bacon, chopped
1 medium onion, chopped
1 -2 tablespoon fresh minced garlic
1/4 teaspoon crushed red pepper flakes (or to taste)
6 cups cabbage, cut into thin wedges (1 small head cabbage)
3 -4 tablespoons chicken broth (or use water)
2 teaspoons brown sugar (or use white sugar, or to taste)
seasoned salt & freshly ground black pepper (to taste, or use white salt)

Steps:

  • In a large skillet over medium heat cook the chopped bacon until crisp and browned; remove to a bowl or plate and set aside (do not drain the bacon fat).
  • Add in onion; cook stirring until softened (about 4-5 minutes, adding in the garlic and chili flakes the last 2 minutes).
  • Add in cabbage and broth or water and sugar; cook stirring until the cabbage wilts (about 12-15 minutes) season with salt and pepper towards the end of cooking.
  • Stir in the cooked bacon.

1 lb russet (baking) potatoes, peeled and cut into 1 1/2-inch pieces
3/4 stick (6 tablespoons) unsalted butter
1 lb Savoy cabbage, cored and thinly sliced
3/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cover potatoes with cold salted water by 1 inch and bring to a boil, then boil, uncovered, until tender when pierced with a sharp knife, about 18 minutes. Drain in a colander.
