CHEESEBURGER POTATO SOUP

4 sesame seed burger buns, cut into 3/4-inch pieces
1 tablespoon flavorless oil
Kosher salt and freshly ground black pepper
3 slices bacon
1 pound ground beef (93 percent lean)
Kosher salt and freshly ground black pepper
1 medium onion, finely chopped
2 large carrots, finely chopped
2 stalks celery, finely chopped
3 cloves garlic, finely chopped
2 teaspoons mustard powder
2 pounds russet potatoes, diced
6 cups low-sodium chicken stock
1/3 cup chopped fresh parsley
1/4 cup heavy cream
10 ounces shredded Swiss cheese
2 tablespoons pickle brine plus 1/2 cup chopped pickles
Ketchup, for garnish
Mayonnaise, for garnish

Steps:

  • For the toasted sesame buns: Set the oven to broil. Toss the sesame bun chunks on a sheet pan with the oil and a pinch of salt and pepper. Broil until golden brown, about 5 minutes.
  • For the cheeseburger potato soup: In a large Dutch oven, cook the bacon over medium heat until crispy, about 7 minutes. Remove to a paper towel lined plate to cool, then roughly chop. Set aside.
  • Add the beef and a pinch of salt to the Dutch oven and cook, breaking up with a spoon, until browned, 4 to 5 minutes (it will continue to cook through). Add the onion, carrot, celery and a good pinch of salt and pepper and cook until translucent, about 10 minutes. Add the garlic and mustard powder and cook for another minute. Add the potatoes, stock, parsley, 1 1/2 teaspoons salt and a bunch of turns of pepper and bring to a boil, then simmer until the potatoes are tender (pierce with a fork to check), 30 to 40 minutes.
  • Add the heavy cream and 8 ounces cheese and stir until the cheese is melted.
  • Finish the soup with the pickle brine. Taste and adjust for seasoning as desired. Ladle the soup into bowls, then top with some of the remaining shredded cheese, pickles, bacon, a drizzle of ketchup, mayo if you're freaky, and toasted sesame buns.

½ pound ground beef
¾ cup chopped onion
¾ cup shredded carrots
¾ cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
4 tablespoons butter
3 cups chicken broth
4 cups cubed potatoes
¼ cup all-purpose flour
2 cups cubed Cheddar cheese
1 ½ cups milk
¼ cup sour cream

Steps:

  • In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
  • Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
  • Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
  • Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.

This is a long time family favorite, I make this quite often in the fall and winter season, if desired you could add some cooked crumbled bacon, this recipe can easily be doubled.

2 tablespoons butter
2 tablespoons oil
2 carrots, peeled and diced
1 large celery rib, chopped
1 medium onion, chopped
1 -2 tablespoon fresh minced garlic
1/4 cup flour
1 pinch cayenne pepper (optional)
2 cups half-and-half (or 1 cup milk with 1 cup half and half)
3 cups chicken broth
2 1/2 cups cooked diced potatoes (can use more)
3 cups grated old cheddar cheese
salt & freshly ground black pepper (to taste)
parmesan cheese, for sprinkling on to (use any amount desired)

Steps:

  • In a large saucepan melt butter with oil over medium-high heat.
  • Add in carrots, celery, onion and garlic; saute until softened (about 5 minutes).
  • Stir in flour and cayenne pepper; whisk for 1 minute.
  • Gradually add half and half and broth whisking continuously.
  • Bring to a light boil; cook and stir for 2 minutes or until thickened.
  • Add in cooked diced potatoes; simmer uncovered for 15 minutes.
  • Stir in cheese until melted; add to the soup stirring until combined and melted (you may also add in a few tablespoons of Parmesan cheese to the soup if desired).
  • Ladle into bowls then sprinkle with Parmesan cheese.

1/2 pound ground beef
4 tablespoons butter, divided
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1-3/4 pounds (about 4 cups) cubed peeled potatoes
3 cups chicken broth
1/4 cup all-purpose flour
2 to 4 cups shredded Velveeta
1-1/2 cups whole milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
1/4 cup sour cream

Steps:

  • In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender, about 10 minutes. Add potatoes, ground beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes. , Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream.

This also works well using half each ground beef and spicy bulk pork sausage meat, make certain to brown the meat well to increase the flavor, this soup tastes even better the following day so you may want to make it up to a few days ahead and refrigerate just warm on top of the stove before serving, it also freezes very well, the taco seasoning is only optional I also like to add in a minced jalapeno pepper when browning the meat-- see my recipe#80434

1 1/2 lbs lean ground beef
1 large onion, chopped
3 large green bell peppers, seeded and chopped
6 large garlic cloves, minced (the more garlic, the better!)
2 tablespoons taco seasoning mix (optional or can use more)
1 teaspoon crushed red pepper flakes (or adjust to taste)
2 (14 ounce) cans beef broth
2 (10 3/4 ounce) cans condensed tomato soup, undiluted
1 (28 ounce) can crushed tomatoes
1 (4 ounce) can sliced mushrooms, drained
2 teaspoons seasoning salt (or to taste, or can use white salt)
fresh ground black pepper, to taste
2 cups cooked white rice
shredded cheddar cheese (optional)

Steps:

  • In a Dutch oven or or large pot cook the ground beef with onions and bell peppers over medium-high heat until the meat is no longer pink; drain the fat.
  • Add in garlic and chili flakes; continue to cook over medium-high heat until the meat is browned (this may take about 15 minutes or more to brown the meat).
  • Mix in the taco seasoning (if using) cook stirring for 2 minutes.
  • Stir in beef broth, 2 cans tomato soup, crushed tomatoes and drained mushrooms; bring to a boil stirring.
  • Reduce heat to low and simmer partially covered for about 50-60 minutes, seasoning with salt and pepper about halfway through cooking.
  • At the end of cooking add in the rice and heat through.
  • Ladle into bowls then sprinkle cheddar cheese on top.
