One 1-ounce bag corn chips, such as Fritos
1 ounce shredded Cheddar
3 ounces Pinto Beans, recipe follows
3 ounces chopped Brisket, recipe follows
1 tablespoon BBQ Sauce, recipe follows
One 12-pound brisket or 1 whole bone-in pork butt (Boston butt )
4 ounces ground pepper
4 ounces salt
4 ounces brown sugar
3 ounces paprika
2 ounces chili powder
2 ounces garlic powder
2 ounces onion powder
8 pounds fresh pinto beans
2 yellow onions, diced large
3 jalapenos, diced large
1 tablespoon chopped garlic
Oil, for cooking
One 14.5-ounce can crushed tomatoes
1 cup garlic pepper
1/4 cup chili powder
1/4 cup salt
2.5 gallons ketchup
6 cups apple cider vinegar
4 cups molasses
3 cups steak sauce, such as A-1
2 cups mustard
1 cup Worcestershire sauce
1/2 cup BBQ rub
1/2 cup garlic pepper
1/2 cup ground black pepper
1 tablespoon ground cinnamon

Steps:

  • Take corn chips out of bag (or and open bag and leave chips in).
  • Place shredded cheese on top. Pour Pinto Beans over the cheese (hot beans help melt the cheese quicker). Sprinkle Brisket on top. Garnish with BBQ Sauce.
  • Preheat a smoker or oven for cooking at about 225 degrees F.
  • Trim brisket fat on the deckle (large side) just enough to where there is still fat covering the meat. (You do not need to trim the pork butt.) Stir together the pepper, salt, sugar, paprika, chili powder, garlic powder and onion powder in a small bowl. Apply the rub to all sides of the meat thoroughly. Let sit at room temperature for about 30 minutes. Place in smoker or oven and let cook until internal temperature reaches 200 degrees F, about 12 hours.
  • Let sit 30 minutes, then chop meat.
  • Cover beans with water by 2 inches and bring to a boil to get the outer layer off. Boil 2 minutes, then drain all water and put beans back in pot. Add water to cover 2 inches above the top of the beans. Bring to a boil.
  • Meanwhile, saute the onions, jalapenos and garlic in some oil in another pan until translucent, about 5 minutes. Add the tomatoes, then let simmer for another 1 to 2 minutes and add to the bean pot. Add the garlic pepper, chili powder and salt to the bean pot and let simmer, stirring every 20 minutes, until soft, about 1 hour 30 minutes.
  • Mix the ketchup, vinegar, molasses, steak sauce, mustard, Worcestershire, BBQ rub, garlic pepper, black pepper, cinnamon and 3 quarts water in a 5-gallon bucket.

1 cup fat-free, lower-sodium beef broth
1/3 cup water
1 (10-ounce) can diced tomatoes and green chiles, undrained
4 ounces lightly salted corn chips (such as Fritos)
1/3 cup (1 1/2 ounces) shredded sharp cheddar cheese
1/4 cup fat-free sour cream
1/2 cup diagonally sliced green onion tops

Steps:

  • 1. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add beef to pan; sauté 5 minutes, stirring to crumble. Remove beef; drain. Wipe pan clean with paper towels. Add onion to pan; sauté 4 minutes, stirring occasionally. Add garlic; sauté 1 minute, stirring constantly. Stir in beef, cumin, pepper, and salt. 2. Stir in tomato paste; cook 1 minute, stirring occasionally. Add broth, 1/3 cup water, and tomatoes; bring to a boil. Reduce heat to medium, and simmer 15 minutes or until slightly thick, stirring occasionally. Remove from heat. 3. Place 1 ounce chips in each of 4 bowls, and top each serving with about 2/3 cup beef mixture, 2 tablespoons cheese, and 1 tablespoon sour cream. Sprinkle each serving with 2 tablespoons green onions.

6-pound chicken
1 clove garlic, finely chopped
2 tablespoon oil of choice
1/2 cup chicken broth, divided
3 dried guajillo peppers, finely chopped
1 tablespoon tomato paste
1/2 cup crushed tomatoes
Oil or butter
1/2 Spanish onion, diced
1 bell pepper, diced
1 cup crushed tomatoes
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 cup canned pinto beans
1 cup canned black beans
Serving suggestions: corn chips, shredded cheese, shredded lettuce, diced tomatoes, sour cream, and/or sliced jalapenos

Steps:

  • For the chicken: Add the whole chicken to boiling water and boil until thoroughly and safely cooked. (The skin should take on a visible color change, the temperature can vary depending on the stove, but typically, so long as the water is boiling, you are good to go.) Remove from the water and allow the chicken to drain and cool. Pull the meat in strips from the bone.
  • For the sauce: In a large saucepan, toast the garlic in the oil over high heat until lightly browned, 1 to 3 minutes. Add half the chicken broth and the peppers and sweat for 2 minutes. Add the tomato paste and crushed tomatoes and bring to a boil. Fold in the pulled chicken. Reduce the heat, add the remaining chicken broth, and allow the mixture to simmer 5 to 10 minutes while stirring continuously. Keep warm.
  • For the chili base: In a large saucepan, coat the bottom of the pan with the oil and sweat the onions and peppers over low heat. Stir often enough to avoid browning. Add the crushed tomatoes and spices and bring to boil. Add the beans and reduce the heat to a simmer. Let the base reduce to the thickness you like in your chili. Mix in the chicken and sauce and bring back to a boil.
  • Serve the chili with corn chips, shredded cheese, shredded lettuce, diced tomatoes, sour cream, and/or sliced jalapenos.

2 tablespoons olive oil
2 pounds ground beef
3 cloves garlic, minced
2 tablespoons tomato paste
Two 14-ounce cans kidney beans, drained and rinsed
One 14-ounce can tomato sauce
One 10-ounce can diced tomatoes and green chiles
1/4 cup chili powder
Kosher salt and freshly ground black pepper
8 large flour tortillas, lightly warmed
2 cups grated Cheddar
1 yellow onion, diced small
2 cups corn chips
1/2 cup sour cream
Olive oil, for toasting

Steps:

  • For the chili: Place a skillet over medium-high heat and add the oil. When the oil is hot, add the ground beef and brown, crumbling as you go, until cooked through, 7 to 8 minutes. Add the garlic and tomato paste. Stir and cook for 1 minute. Add the kidney beans, tomato sauce, tomatoes and green chiles, chili powder, salt and pepper, then bring to a simmer. Continue to simmer and thicken, stirring occasionally, for 10 minutes.
  • For the burritos: Add about 1 cup chili to a tortilla, then top with grated Cheddar and some diced onion. Add a handful of corn chips and a dollop of sour cream. Tuck the sides of the tortilla and roll tightly, then set aside. Repeat with the remaining tortillas.
  • Heat a large skillet over medium heat. Add a little olive oil. In batches, toast the burritos until golden, about 1 minute per side.

1/2 lb ground beef
1/4 cup onion, chopped
1/4 cup green peppers, chopped
1/2 tsp garlic, chopped
1/4 cup frozen corn kernels
1 (14.5-oz) can petite diced tomatoes
3/4 cup canned black beans, drained and rinsed
1/2 tsp smoked paprika
1/2 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp chili powder
1/8 teaspoon cayenne
1/2 teaspoon salt
Cornbread Topping:
3/4 cup cornbread mix
1 egg
3 Tbsp milk
1/3 cup Cheddar, shredded

Steps:

  • Preheat the oven to 350°F. Sauté the onions, peppers, garlic, and ground beef in the 10'' skillet over medium-high heat until the beef has browned and is no longer pink. Add corn, tomatoes, beans, and spices to the beef mixture and bring to a simmer. Remove from heat. In a separate bowl, combine the cornbread mix, egg, and milk. Stir until smooth and fold in the cheddar cheese. Use a tablespoon to drop heaping dollops of the cornbread mixture on top of the chili. Bake for 15-20 minutes, or until the chili is bubbly and the cornbread has browned.
