Number Of Ingredients 7

1/2 pound boneless skinless chicken breasts, cubed
1 can (14-1/2 ounces) chicken broth
1-3/4 cups water
1 to 2 teaspoons chili powder
1 cup frozen corn
1 cup salsa
Shredded Monterey Jack cheese or pepper Jack cheese, optional

Steps:

  • In a large saucepan, combine the chicken, broth, water and chili powder. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add corn; return to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until chicken is no longer pink and corn is tender. Add salsa and heat through. Garnish with cheese if desired.

2 lbs Tyson chicken breast (boneless, skinless)
1 tbsp oil
3 tbsp taco seasoning
24 oz Pace Picante, Medium ((1 jar))
4 cups chicken broth
1 can sweet corn (drained)
1 can black beans (rinsed and drained)
Juice of 1 lime
Cilantro
Shredded cheddar cheese
Sour cream
Tortilla chips

Steps:

  • Cut chicken into bite-size pieces.
  • Heat oil in a large Dutch oven over medium high heat. Once hot, add chicken and taco seasoning and cook for 2-3 minutes per side, or until seared on each side.
  • Add Pace Picante, broth, corn, and black beans. Bring to a simmer, cover, and let cook for 8 minutes.
  • Remove from the heat, squeeze fresh lime juice over the top and stir the soup.
  • Serve warm with your choice of toppings.

This recipe is a favorite of all my friends. Whenever they come over, they want to leave with a jar. Therefore, when I make it I can 14 GALLONS each time. I figure, if I'm gonna spend all day making it, I might as well only do it once a year! I like to serve this salsa with tortillas or use it in cooking. It's great in scrambled eggs and chili.

1 (28 ounce) can whole tomatoes, chopped and liquid reserved
1 (6 ounce) can tomato paste
½ onion, chopped
1 green bell pepper, chopped
6 cloves garlic, minced
¾ cup finely chopped jalapeno peppers
2 tablespoons white sugar
1 teaspoon chili powder
1 cup red wine vinegar
1 tablespoon salt
1 tablespoon ground cumin

Steps:

  • Combine the tomatoes, tomato paste, onion, green pepper, garlic, jalapenos, sugar, chili powder, vinegar, salt, and cumin in a large saucepan. Bring mixture to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the salsa is thickened and is noticeably darker in color, at least two hours. Cool and store it in the refrigerator for up to two weeks or in the freezer for three months.

1 (15 ounce) can chicken broth
2 cups water
1 (16 ounce) jar your favorite salsa
1 (15 ounce) can black beans
1 cup frozen corn
1/4 teaspoon cumin
1/4 teaspoon black pepper

  • Add all ingredients to pot.
  • bring to a boil.
  • reduce heat and simmer 20 minutes, or until everything is heated through.

CHICKEN SALSA SOUP
1/8 c of olive oil
1 white onion, choped
4 lg cloves of garlic
Grill or cook #2 skinless, boneless chix breasts, chop into pieces
64 oz chicken broth
1/3- 1/2 c of green salsa
3 cups of salsa (medium, chunky)
1/2 c chopped cilantro
optional
sour cream and avocado

Steps:

  • In a large dutch oven saute the onion for 5-6 minutes, add in garlic and simmer for 4 minutes Add in broth and get warmed up, + chicken Simmer for 15 minutes, add in salsa and simmer Add in cut up cilantro SERVE with a tsp of sour cream mixed in with each serving top with avocado, if desired
