2 pounds smoked kielbasa or Polish sausage, halved lengthwise and cut into 1/4-inch slices
1/4 cup finely chopped onion
3 bacon strips, finely chopped
3/4 cup honey barbecue sauce
1/4 cup packed brown sugar
1 tablespoon prepared horseradish
2 teaspoons water
2 teaspoons minced garlic
1/2 teaspoon crushed red pepper flakes
Hot cooked rice

Steps:

  • In a Dutch oven, saute the kielbasa, onion and bacon until onion is tender; drain. Add the barbecue sauce, brown sugar, horseradish, water, garlic and pepper flakes. Bring to a boil; cook and stir for 2-3 minutes or until sauce is thickened. Serve with rice. Freeze option: Place cooled individual portions in freezer containers without rice. Freeze up to 3 months. To use, thaw in refrigerator overnight. Place in a saucepan; heat through, gently stirring and adding a water if necessary. Serve with rice.

This Kiełbasa Fried Rice is a one-pan wonder. Full of smoky sausage, fluffy eggs, and toasty rice - plus all the lonely veggies that are already sitting in your refrigerator. If you have 15-20 minutes, you're up for a treat!

1 medium (4.5 oz, 130 g) onion
1 (7 oz, 200 g) red bell pepper
1 (7 oz, 200 g) yellow bell pepper
5 mushrooms finely sliced
9 oz (250 g) kiełbasa sausage
1 tbsp sesame oil
0.5 cup frozen peas and carrots
2 eggs, lightly beaten
1.5 cups (375 g) cooked rice
2 tbsp soy sauce
2 tbsp chopped green onions (optional)

Steps:

  • Peel a medium onion (white, yellow, red - up to you) and chop it finely. Set aside.
  • Deseed 2 bell peppers and slice them up. Do the same with mushrooms. Set aside.
  • Slice the sausage into rounds, roughly 0.5 inch (around 1 cm) thick.
  • Preheat a large frying pan (or wok if you have one) to medium heat. Cover the bottom of the pan with a solid tablespoon of sesame oil. Move the skillet around to distribute the oil more evenly.
  • Drop in chopped onion and peas and carrots and fry stirring occasionally.
  • As the onion turns translucent, add in kiełbasa rounds and chopped mushrooms. Add in chopped bell peppers. Stir and fry for 2-3 minutes.
  • Slide the veggies & sausage to the side, pour in the beaten eggs onto the other side. Scramble them using a spatula. Once almost cooked, mix the eggs with the rest of the skillet's contents using a spatula.
  • Add in the pre-cooked rice. Pour two tablespoons of soy sauce over it. Stir and fry the mixture until heated through and combined.
  • Garnish with chopped green onions (optional).

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.

1 1/2 cups long grain white rice
2 cups water
1 medium onion, sliced lengthwise into strips
1 lb smoked sausage or 1 lb polska kielbasa, cut into 1-2-inch chunks
2 (16 ounce) jars salsa (choose your favorite level of heat, I used medium and mild)
6 tablespoons brown sugar
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce

Steps:

  • Heat oven to 350 degrees.
  • Combine rice and water into 13 x 9 inch baking pan.
  • Cover rice with sliced onions and sausage.
  • In a medium size mixing bowl, combine the remaining ingredients, adjusting to taste.
  • Pour salsa mixture over sausage, onion and rice mixture, covering evenly.
  • Cover pan with aluminum foil, and bake for about an hour, until all the water is absorbed and the rice is cooked completely.
