1 small head cabbage
2 cups diced potatoes
1 (16 ounce) package smoked kielbasa sausage, sliced
1 cup milk
2 eggs, beaten
1 teaspoon salt
½ teaspoon ground black pepper
4 slices bread, cut into cubes
½ cup butter, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove and wash outer leaves from cabbage; line a 13x9-inch baking dish with the leaves to cover the bottom entirely. Shred remaining cabbage.
  • Mix shredded cabbage, potatoes, and smoked sausage in a bowl; spread atop the cabbage leaves in the baking dish.
  • Whisk milk, eggs, salt, and pepper together in a bowl; add bread cubes. Set aside until bread absorbs some liquid, 1 to 2 minutes; pour over the cabbage mixture. Top with butter slices.
  • Bake in preheated oven until the potatoes are tender and the top is lightly browned, about 45 minutes.

1 kielbasa, ring in bite-sized pieces
1 cabbage, cut up, discard outer layer and core
1 red onion, diced
carrot, in bite-sized pieces
potato, in bite-sized pieces
1 1/2 cups chicken broth (optional)

Steps:

  • Inside crockpot layer carrots, potatoes, cabbage with the kielbasa pieces on top. Pour either 1 1/2 Celsius water or chicken broth over the top. Cook on low for 8 hours. I've found that there is so much flavor in the kielbasa alone that I don't even need to use the chicken broth for flavor. The small amount of liquid makes everything perfectly moist, leaving an EASY, HEALTHY dinner for your family!

1 tablespoon vegetable oil
3/4 pound smoked kielbasa (Polish sausage), cut into 1-inch pieces
4 cups chopped cabbage
1 onion, sliced thin
3/4 pound yellow-fleshed or russet (baking) potatoes
1/4 cup milk
1 tablespoon unsalted butter, cut into bits

Steps:

  • In a large heavy skillet heat the oil over moderate heat until it is hot but not smoking and in it brown the kielbasa. Add the cabbage and the onion and cook the mixture, stirring occasionally, until the cabbage is browned. Add 1 1/2 cups water and simmer the mixture, covered partially, for 15 to 20 minutes, or until the cabbage is tender.
  • While the mixture is simmering, in a steamer set over boiling water steam the potatoes, peeled and cut into 3/4-inch pieces, covered, for 12 minutes, or until they are very tender, transfer them to a bowl, and mash them with a potato masher. Add the milk, scalded, 3 tablespoons hot water, the butter, and salt and pepper to taste and stir the potato mixture until the butter is melted. Serve the kielbasa mixture on the mashed potatoes.

Well, since we all know how the Corona virus has effected food shopping, I couldn't find corned beef and so found the Polish kielbasa and it worked just fine. It is more like a soup but that's perfect for these still cool days. The splash of cider vinegar gives it a nice "kick."

1/2 c onions, slivered
3 clove minced fresh garlic
2 Tbsp olive oil
7 small red potatoes, quartered, not peeled
14 oz pkg of polish kielbasa, sliced into coins
3 c green cabbage, cut into long, wide pieces
1-1/2 c washed carrots, sliced into baby pieces
4-6 c veggie broth or chicken broth
1/2 tsp celery salt
1 tsp fresh ground black pepper
1/2 tsp fresh chopped thyme or used dried
1/4 c organic apple cider vinegar

Steps:

  • 1. In a large pot, over med-high heat, pour in the olive oil, onions and garlic. Saute for 2 mins. Add Kielbasa. Saute 3 mins. Add potatoes and carrots. Add broth. Cover and bring to a boil.
  • 2. Lower heat to med-low and add the cabbage, celery salt, black pepper and thyme. Bring to a simmer for 30-40 mins or until veggies are softened.
  • 3. Splash in the cider vinegar and let cook another 10 mins.

1/2 pound smoked kielbasa or smoked Polish sausage, cut into 1/2-inch slices
2 tablespoons butter, divided
1/2 large head cabbage (2 pounds), coarsely chopped
1 medium onion, chopped
2 cans (8 ounces each) tomato sauce
1/4 cup sugar
1 tablespoon paprika
2 large potatoes, peeled and cubed

Steps:

  • In a large enameled cast-iron or other ovenproof skillet, brown the sausage in 1 tablespoon butter; remove and set aside. In the same pan, saute cabbage and onions in remaining butter until onions are tender. , In a small bowl, combine the tomato sauce, sugar and paprika; pour over cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add the potatoes and reserved sausage. Cover and simmer for 30 minutes or until potatoes are tender.

1 head savoy cabbage, shredded
1 (15 ounce) can sliced potatoes
1 ½ pounds kielbasa sausage

  • Saute margarine and onions in a large skillet until the onions are soft.

4 -5 large potatoes
1 -2 kielbasa (depends on how much you like meat)
1 head cabbage

Steps:

  • Slice the potatoes into approximately 1-2 inch pieces.
  • Put these in a large pot and cover in water with about an inch over the potatoes.
  • Let the potatoes cook alone for 20-25 minutes at medium heat it will stay on that for the entire cooking process.
  • Slice cabbage into eighth and add to the pot with the potatoes.
  • Let these two cook together for 10 minutes.
  • Cut kielbasa into about inch thick slices and again -- add to the pot.
  • Let the three cook for another 20 minutes.
  • Tada! It is done, turn off the heat and let it sit for about five minutes as it will be hot.

1 lb Polish sausage, sliced (Hillshire Farm's Polska Kielbasa or other smoked sausage)
1/2 cup butter, plus
extra virgin olive oil, for pan
1 1/2 large onions, sliced
2 carrots, diced
2 russet baking potatoes, peeled, diced
1 red bell pepper, diced
1 head green cabbage, cored and thinly sliced
1 teaspoon salt
1/2 teaspoon ground black pepper
1 (1 1/4 ounce) package onion soup mix, dry
1 2/3 cups milk or 1 2/3 cups half-and-half
2 tablespoons cider vinegar (or white wine vinegar)
1 tablespoon sugar
4 eggs, lightly beaten
2 cups Ritz crackers, crushed (or Keebler Club or Wheat Thins)
1 tablespoon caraway seed

Steps:

  • Heat oven to 325º. Butter or spray 9 x 13 casserole dish with Pam.
  • In a large Dutch oven on medium/high heat, sauté sliced sausage in a bit of olive oil until browned. Remove to a bowl.
  • Reduce heat to medium and add butter. Sauté onions, carrots, potatoes, bell pepper, and cabbge until lightly caramelized - about 20 minutes. Add salt, pepper and onion soup mix. Stir in milk, vinegar, and sugar. Add sausage and drippings. Bring to boil. Reduce heat to medium-low; simmer for 5 minutes. Remove pot from heat and let cool slightly, then gently stir in eggs.
  • In a large zip-lock bag, crush crackers with caraway seeds. Into the pot of veggies and sausage, add ½ of the cracker mixture. Pour into prepared casserole dish. Dust top evenly with remaining crackers. Bake at 325º for 45 minutes, or until heated through and top is golden brown.
