GIANT SPRINKLE MACAROONS

Number Of Ingredients 9

1 cup sweetened condensed milk (reserve the rest of the can to add to your morning coffee!)
2 teaspoons clear imitation vanilla
1/2 teaspoon almond extract
One 14-ounce bag sweetened shredded coconut
2 large egg whites
1/4 teaspoon kosher salt
1/4 cup rainbow sprinkles, plus more for sprinkling
1/3 cup rainbow sprinkles
3 ounces chocolate (any kind!)

Steps:

  • For the macaroons: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment and set aside.
  • In a large bowl, combine the condensed milk, vanilla and almond extract. Mix in the coconut and set aside.
  • In a separate bowl, beat the egg whites and salt until stiff peaks form. Fold the egg whites into the coconut mixture, then gently fold in the sprinkles. Spoon lightly packed 2-inch balls of the mixture onto the baking sheets, 1 inch apart, and sprinkle the tops with more sprinkles.
  • Bake until golden brown; begin checking for doneness at 18 minutes. Let cool for a few minutes on the baking sheets, then transfer to a wire rack to cool completely.
  • For the topping: Place the sprinkles in a shallow dish. Microwave the chocolate in a microwave-safe bowl in 30-second increments, stirring after each, until melted (or melt in a saucepan over low heat, stirring often).
  • Dip the bottoms of the macaroons in the chocolate, scrape off any excess and then dip the chocolate in the sprinkles. Place back on the parchment and let cool at room temperature or in the fridge. These can be kept at room temperature for about 3 days or in the fridge for up to a week.

1/2 pound (2 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
1/4 cup light brown sugar, lightly packed
1 extra-large egg, at room temperature
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon kosher salt
8 ounces bittersweet chocolate, chopped, such as Lindt
Fleur de sel or sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Arrange three racks evenly spaced in the oven (see Cook's Note).
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter on medium speed for 3 minutes, until creamy. Add the granulated sugar and brown sugar and beat on medium speed for 2 to 3 minutes, until light and fluffy. Scrape down the bowl with a rubber spatula. Add the egg, vanilla, and 2 tablespoons of warm water and mix on low speed just to combine. In a medium bowl, whisk together the flour, baking soda, and kosher salt. With the mixer on low, slowly add the flour mixture, then the chocolate (including the fine chocolate dust) to the batter until combined. Mix well with a rubber spatula.
  • With a 2 1/4-inch standard ice cream scoop (or 1/3 cup measure), make 12 rounded scoops of dough and place them on a sheet pan. Freeze the dough for exactly 15 minutes, then arrange 4 balls of dough--spaced wide apart--on each of three sheet pans lined with parchment paper. Bake for 10 minutes, until the cookies are slightly puffed in the center. Remove the pans from the oven and bang them on the stove top, until the center of the cookies deflate. Bake for 3 minutes, then bang the pans again, repeating baking and banging every 3 minutes, for 18 to 20 minutes total, until the edges of the cookies are golden brown. (The centers will be lighter and not fully cooked.) Rotate the sheet pans in the oven so the cookies bake evenly. Sprinkle the cookies with fleur de sel and cool completely on the pans.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon pumpkin pie spice
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/2 cup mini chocolate chips
1 stick (8 tablespoons) unsalted butter, melted
2/3 cup packed brown sugar
1 cup canned sweet potato puree
1/3 cup sour cream
1 large egg

Steps:

  • Preheat the oven to 350 degrees F. Coat the cups of two 24-cup mini muffin tins with cooking spray.
  • Whisk together the flour, baking powder, pumpkin pie spice, salt, baking soda and chocolate chips in a medium bowl. Whisk together the butter, sugar, sweet potato, sour cream and egg in a large bowl until well mixed. Fold the flour mixture into the sweet potato mixture, and stir until just combined (it's OK if there are some lumps).
  • Fill each muffin cup with a generous tablespoon of batter. Bake until the muffins have pulled away from the sides of the tins and a toothpick inserted in the center of a muffin comes out clean, 12 to 16 minutes. Tip the muffins out onto a cooling rack. Serve warm or at room temperature.

2 cups butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1-1/2 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup quick-cooking oats
1/2 cup crisp rice cereal
1/2 cup colored sprinkles
1/2 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Add the eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in remaining ingredients. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. I coach young kids in running and to encourage a young girl I told her I would make her cookies. She wanted a cookie with sprinkles, M&Ms®, and chocolate chips and this is what I came up with. The kids loved them so much I make them whenever they set a personal record.

¾ cup butter, at room temperature
¾ cup light brown sugar
½ cup white sugar
1 large egg
1 large egg yolk
2 teaspoons pure vanilla bean paste
2 ¼ cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
½ teaspoon salt
½ cup mini candy-coated milk chocolate (such as M&M's®)
½ cup chocolate chips
¼ cup multicolored candy sprinkles

Steps:

  • Cream together butter, brown sugar, and white sugar in a large bowl with an electric mixer until fluffy. Add egg, egg yolk, and vanilla paste; beat until well incorporated.
  • Add flour, cornstarch, baking soda, and salt and mix until a dough has formed. Stir in mini M&Ms, chocolate chips, and sprinkles. Cover dough and refrigerate for 6 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Drop cookie dough by rounded tablespoon onto the baking sheet using a cookie scoop. If desired press in extra sprinkles and/or mini M&Ms on top of the cookie dough.
  • Bake in the preheated oven until cookies are starting to brown at the edges, 12 to 14 minutes. Transfer to a wire rack and allow to cool.
