This key lime smoothie made with light coconut milk tastes just like key lime pie and the tropics. It's the perfect drink for summer!

1 can (13.5oz) light coconut milk
1/4 cup fresh key lime juice
zest of 1 key lime
1- 1 1/2 cups ice
1/4 teaspoon vanilla extract
sweetener of choice (*see note)
1/4 teaspoon xanthan gum
1 scoop unflavored collagen powder (optional, leave out for vegetarian/vegan)

Steps:

  • Combine all ingredients in a blender and blend until smooth and slightly thickened, about 30 seconds.
  • Pour into 2 glasses top with additional key lime slices and toasted coconut flakes if desired.

I made this one morning looking for an untraditional flavor for a smoothie. It comes out smooth and creamy. Garnish with a lime wedge.

1 (6 ounce) container Key lime-flavored Greek yogurt
1 frozen banana, cut into chunks
1 tablespoon heavy whipping cream, or more to taste
1 splash orange juice

¼ cup (60 ml) water
1 Tablespoon key lime juice
2 medium kiwi, peeled, halved
1 large ripe pear, halved, seeded
2 Tablespoons (30 ml) honey (optional)
1 cup (240 ml) ice cubes

Steps:

  • 1.Place all ingredients into the Vitamix container in the order listed and secure lid.
  • 2.Select Variable 1.
  • 3.Turn machine on and slowly increase speed to Variable 10, then to High.
  • 4.Blend for 30 seconds using the tamper to press the ingredients into the blades, or until desired consistency is reached.
