RAINBOW CAULIFLOWER CRUST PIZZA

1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
¼ cup shredded Parmesan cheese
¼ cup mozzarella cheese
1 egg
¼ teaspoon salt
½ teaspoon garlic powder
½ teaspoon basil or rosemary (minced (or dry))
½ teaspoon oregano (minced (or dry))
1/2 cup marinara sauce
1 cup mozzarella cheese
1 cup diced bell peppers (yellow, orange, red, green, or any combo of your choice)
1/2 cup broccoli florets
1/2 cup diced red onion
1/4 cup canned corn (optional and not included in nutritional facts)
1/2 cup tomatoes (diced)

Steps:

  • Preheat oven to 500 degrees F.
  • Remove the stems from the cauliflower and cut into chunks, Place the cauliflower into a food processor and pulse it until it resembles the texture of rice. If you don't have a food processor, you can use a cheese grater or chop it very finely.
  • Microwave the processed cauliflower uncovered in a microwave safe bowl for approximately 4-5 minutes on high. Remove it from the microwave and allow it to cool for at least 4-5 minutes (trust me don't rush this step!). After the cauliflower is slightly cooled, place it in a kitchen towel and squeeze all the liquid out of it. Be sure to squeeze as much liquid as humanly possible.
  • Combine the cooked cauliflower, egg, garlic, cheese, and seasonings. Stir until a dough texture forms. Spread the cauliflower mixture out onto lightly greased parchment paper or a pizza pan in the shape of a pizza crust.
  • Bake the crust for approximately 10-15 minutes (depending on your oven), or until the crust is golden and crispy. I cooked mine for approximately 15 minutes. After the crust is golden remove it from the oven and top with pizza sauce then cheese then the chopped veggies.
  • Place the pizza back in the oven and bake for another 12-15 minutes.

200 gram, Mozzarella Cheese
100 g, Almond Meal
1 large, Egg
0.50 tbsp, Garlic powder
3 cups of diced Tomatoes various colors
50g (1/2 Cup ) Mozarella

Steps:

  • Place a pot on the stove and switch on the medium heat
  • Once the pot is heated, add shredded mozzarella and let it melt completely using spatula to mix from time to time
  • When mozzarella has melted fully (check video), add almond meal and garlic powder and knead with spatula until both gets properly incorporated
  • After you are satisfied with the dough, switch the heat off completely and add egg.
  • Knead the egg into the dough to incorporate it fully with spatula
  • Heat up the oven to 200C or 390F
  • Either use the baking pan with Parchment paper or Pizza Stone Plate with a bit of oil.
  • with your spatula spread the dough throughout the whole surface in either round or rectangular shape. Make sure the thickness of the crust is even
  • Using fork, make tiny holes all over the Fathead crust for the dough to bake evenly (check video)
  • Place it into the oven for 8 minutes
  • Shread mozarella and cut chives into small pieces
  • Separate tomatoes as per color into bowls and cut half slices placing each color into that particular bowl
  • Once the pizza crust is baken, start with placing cheese into the middle
  • From the middles start with the lighterst tomatoes spreading them evenly.
  • Continue with orange, red tomatoes
  • finish the outer layer with the darkest tomatoe slices
  • if you still use chives (later) keep a bit of space at the outer layer for them
  • Bake in the oven for another 8 minutes
  • once baked, take it out from the oven and spread all of the chives onto the outer layer of the pizza

1 teaspoon olive oil
1 small clove garlic, minced

1 1/2 cups shredded whole-milk mozzarella
2 tablespoons full-fat sour cream
2/3 cup almond or coconut flour
2 large eggs, lightly beaten

Steps:

  • For the sauce: Stir together the tomatoes, oil, garlic and a large pinch of salt in a small bowl. Let sit at room temperature for at least 30 minutes (this can be made and refrigerated the night before).
  • Adjust an oven rack to the lowest position with a pizza stone or turned-over baking sheet on it and preheat the oven to 450 degrees F.
  • For the keto dough: Toss the cheese and sour cream together in a large microwave-safe bowl. Microwave in 1-minute intervals, stirring in between each, until the cheese is melted; let cool slightly. Add the flour, eggs and 1/4 teaspoon salt and use your hands to mix into a dough (it will be slightly wet and stretchy).

Keto Cauliflower Crust for 1 pizza crust
1/4 cup cherry tomatoes
1/2 small carrot, peeled and thinly sliced into rounds
1 inch diced yellow bell pepper (about 1/6th of a yellow pepper)
1/4 small red onion, thinly sliced
2 teaspoons extra-virgin olive oil
1 teaspoon kosher salt
3 tablespoons no-sugar-added tomato sauce
1/3 cup shredded shredded low-moisture full fat mozzarella cheese
1 teaspoon dried oregano, to garnish
crushed red pepper flakes, to taste
1 tablespoon chopped parsley

Steps:

  • Preheat oven to 450 degrees F.
  • Place the tomatoes, sliced carrot, bell pepper and red onion on a sheet tray in four separate rows. Drizzle the oil over the vegetables and season with salt. Roast the vegetables in the oven for 10-15 minutes, or until softened and just beginning to brown. Set aside to cool.

150g cherry tomatoes, halved
1 tbsp olive oil, plus extra for drizzling
parmesan , dairy-free cheese or spreadable dairy-free cream (see below to make your own)
small handful of black olives
handful of rocket
140g blanched almonds (soaked in salted water for at least 6-8 hrs)
8g nutritional yeast
300g cauliflower rice
1 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
2 eggs, beaten
25g coconut flour
12g milled flaxseed
1 tsp nutritional yeast, optional

Steps:

  • If making your own plant-based cream, combine the ingredients for this with a pinch of salt and 60ml of water in a powerful blender and whizz until smooth. Add a little more water (up to 40ml) to help create the desired consistency, if needed.
  • Heat the oven 200C/180C fan/gas 6. Put the cherry tomatoes, olive oil and a pinch of salt on a baking tray, toss well and spread into an even layer. Bake for 20-25 mins until the tomatoes are soft.
  • Meanwhile, make the pizza crust. Microwave the cauliflower rice for 5 mins (or gently heat in a frying pan stirring regularly), then using a nut milk bag, cheesecloth or dish towel, wrap the cooked cauliflower and while it's still warm (but not too hot) squeeze out the water as hard as possible with your hands. Set aside for a few minutes, then squeeze out more water in the same way.
  • Heat a frying pan over a medium heat, add the olive oil, herbs and cooked cauliflower, and stir for 5 mins. Take off the heat. Put the beaten eggs in a bowl with a pinch of salt. Add the cooked cauliflower rice, coconut flour, milled flaxseed and nutritional yeast, and mix to combine.
  • On a baking tray lined with baking parchment, shape the pizza crust into a rectangle (about 18 x 20cm). Do not spread it too thin because it will tear. Bake for 15-20 mins until the cauliflower crust is golden and feels dry to the touch.
  • Remove the crust from the oven, add the cheese or cream, roasted cherry tomatoes and black olives. Bake for 5-10 mins until the edges are lightly golden and the toppings are piping hot. Add the rocket, freshly cracked black pepper and a drizzle of extra olive oil.
