Very low-carb keto beef enchiladas. I usually buy the thinly sliced roast beef at Costco®.

½ (19 ounce) can enchilada sauce (such as Las Palmas®)
14 ounces thinly sliced roast beef
1 (16 ounce) package shredded Cheddar cheese
1 (16 ounce) package shredded Monterey Jack cheese
½ medium diced yellow onion
1 (2.25 ounce) can sliced black olives, drained
6 tablespoons sour cream

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Pour some enchilada sauce into a baking dish, barely covering the bottom.
  • Lay out roast beef on a cutting board. Trim each slice to be the size of a taco. Cover with some Cheddar and Monterey Jack cheese. Sprinkle some onion over cheese and roll up beef slices. Arrange rolls in the baking pan. Moisten the top with enchilada sauce. Sprinkle remaining cheese, onion, and olives over enchilada sauce. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until heated through, about 15 minutes. Uncover and continue baking until cheeses brown, about 7 minutes more. Serve with sour cream.

Easy to make and yummy to eat, if you are leading a keto lifestyle and want something similar to a restaurant's beef enchiladas, this is the dish to make. Serve with avocado, sliced jarred jalapenos, sliced black olives or sour cream, whatever your heart desires.

4 large low carb (4 net gms carbs ea) flour tortillas
1 can(s) green enchilada sauce
2 tablespoon(s) heavy whipping cream
1 pound(s) ground beef
1/2 small onion, chopped
1/2 package(s) dry taco seasoning mix
1/4 cup(s) water
1 small can diced mild green chilis
2 cup(s) shredded cheese, any type

Steps:

  • Preheat oven to 350 degrees. Spray 8x8-inch baking dish or 9x9-inch baking dish with nonstick cooking spray.
  • In a medium bowl, mix enchilada sauce with cream.
  • In a skillet over medium heat, saute beef and onion until beef is no longer pink; Drain.
  • Add green chilis and taco seasoning mix and water. Stir and continue to cook until water is absorbed; Remove from heat.
  • Spoon 1/4 cup sauce on bottom of baking dish and spread with spoon.
  • Fill each tortilla with 1/4 beef mixture and top with 2 T. cheese.
  • Place enchiladas in prepared baking dish and top with remainder of the cheese. Bake 20-30 minutes, until bubbly.
