KERRIESCHOTEL (MEAT AND RICE DISH FLAVORED WITH CURRY)
This is a family favorite Dutch recipe. Mom made this when we were growing up. The common curry powder found in the grocery is fine for this recipe. If you are looking for the authentic taste, or are a spice connoiseur, you would look for Indonesian curry powder or Sate seasoning. I find it on-line.

Steps:
- Saute onion in butter with curry powder until tender.
- Add broth and aroma seasoning.
- Stir in left over chicken meat and simmer until meat is hot.
- Meanwhile cook rice.
- Place meat mixture and rice in casserole dish.
- Stir to combine and top with crumb mixture.
- Bake approximately 20 minutes at 325 until brown and bubbly.
HUZARENSLA (DUTCH MEAT AND POTATO SALAD)
This traditional Dutch recipe is definitely a meal. We love it. The prep time does not include the chill time.

Steps:
- Mix all the ingredients together.
- Refrigerate for a couple of hours for best flavor.
- Spread on a platter lined with lettuce leaves and smooth the top.
- Decorate top and sides with dollops of mayonnaise, sliced hard boiled egg, sliced tomato, parsley and a dusting of paprika.
- Serve with your favorite bread.

- In a large nonstick skillet, heat 1 tablespoon butter over medium-high heat; saute onion until tender and lightly browned, 3-5 minutes. Remove from pan., In a bowl, mix flour and seasonings; toss with chicken. In same skillet, heat remaining butter over medium-high heat. Add chicken; cook just until no longer pink, 4-6 minutes, turning occasionally., Stir in broth and onion; bring to a boil. Stir in rice. Remove from heat; let stand, covered, 5 minutes (mixture will be saucy). If desired, sprinkle with cilantro.

CURRY SPAGHETTI ALFREDO

Steps:
- Heat oil in a pan on medium-high heat.
- Sauté onion, dried basil, dried oregano and lemon grass until it turns soft and a bit golden.
- Dump in ground meat, garlic, curry powder and curry leaves, and stir cook for awhile until the meat is getting done.
- Pour in chicken broth, along with all the ingredients except alfredo sauce and heavy cream.
- Simmer for 25-30 minutes.
- Add in alfredo sauce and heavy cream, stir until it's thickened.
- Season well with salt and pepper.
- Remove curry leaves.
- Save a few cups of the curry sauce and set aside. Mix the rest of the sauce with the cooked spaghetti.
- Before serving pour some curry sauce on top and garnish with parsley.
