I have been making this recipe for Kentucky Bourbon Derby Pie® for 10 {plus years}. It's one of the most requested desserts from my friends and family. If you want chocolate pie, this Derby Pie® recipe is for you.

1 9 inch premade pie shell
1/2 cup white sugar
1/2 cup light corn syrup
1/4 cup butter
2 eggs (beaten)
1/8 cup bourbon
1/2 tsp ground cinnamon
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1/2 cup semisweet chocolate chips
1/2 cup pecans (chopped *optional)

Steps:

  • Preheat oven to 325 degrees F
  • In a small saucepan combine sugar, corn syrup, and butter or margarine.
  • Cook over medium heat, stirring constantly, until butter or margarine melts and sugar dissolves. Cool slightly.
  • In a large bowl combine eggs, bourbon, vanilla, cinnamon and salt.
  • Mix well.
  • Slowly pour sugar mixture into egg mixture, whisking constantly.
  • Stir in chocolate chips and pecans. Pour mixture into pie shell.
  • Bake in preheated oven for 50 to 55 minutes, or until set and golden.
  • May be served warm or chilled.
  • I like to serve with a tablespoon of Whipped Cream.

1/2 (14.1-oz.) pkg. refrigerated piecrusts
1 1/2 cups chopped pecans
1 cup miniature semisweet chocolate chips
1 cup light corn syrup
1/2 cup granulated sugar
1/2 cup packed light brown sugar
4 large eggs, lightly beaten
1/4 cup (2 oz.) unsalted butter, melted
2 tablespoons all-purpose flour
2 tablespoons (1 oz.) bourbon
2 teaspoons vanilla extract
1/2 teaspoon table salt
Whipped cream and chocolate shavings

Steps:

  • Preheat oven to 325°F. Fit piecrust into a 9-inch metal pie plate; crimp edges. Sprinkle pecans and chocolate chips evenly over piecrust.
  • Whisk together corn syrup, granulated sugar, and brown sugar in a saucepan. Bring to a boil over medium-high; boil, whisking occasionally, until sugars are dissolved, about 5 minutes.
  • Whisk together eggs, butter, flour, bourbon, vanilla, and salt in a heatproof bowl. Slowly pour 1/3 cup of the hot corn syrup mixture into egg mixture, whisking constantly until fully incorporated. Whisk in remaining hot corn syrup mixture until smooth. Pour filling over pecan mixture in piecrust.
  • Bake in preheated oven until pie edges are set and begin to puff up, but pie center is still slightly jiggly, 45 to 50 minutes. Transfer to a wire rack; let cool completely to room temperature, about 2 hours. Slice and garnish with whipped cream and chocolate shavings.

1¼ cups all-purpose flour, plus more for rolling
¼ teaspoon salt
½ teaspoon sugar
1 stick chilled unsalted butter, cut in pieces
3 tablespoons ice water
2 large eggs
1 cup sugar
1 stick unsalted butter, melted and cooled
¼ cup Maker's Mark® Bourbon
½ cup all-purpose flour
1½ cups walnuts, toasted and coarsely chopped
1 cup semi-sweet chocolate chips

Steps:

  • 1. To make the crust: In a food processor, pulse the flour, salt, and sugar to mix. Add the butter and pulse until the mixture resembles coarse meal with pea-sized pieces. Sprinkle the ice water on top and pulse until large clumps form. Press the dough into a disk, wrap tightly in plastic wrap, and refrigerate until firm, about 1 hour. 2. On a lightly floured work surface, roll the dough into a 12-inch round. Fit into a 9-inch pie dish. Tuck in the overhang and decoratively crimp the edges. Freeze while heating the oven. 3. Preheat the oven to 350°F. Prick the bottom of the dough all over with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake until the is golden and dry, about 20 minutes. Remove the parchment and pie weights. Return the crust to the oven and continue baking until golden brown, about 5 minutes. Let cool slightly on a wire rack. 4. Meanwhile, make the filling: In a large bowl, whisk the eggs and sugar. Continue whisking while adding the butter, then the bourbon. Stir in the flour until well combined. Stir in the walnuts and chocolate chips. Pour into the warm pie shell. 5. Bake until the filling is set and the top golden, about 30 minutes. Cool in the pan on a wire rack. Serve warm or room temperature.

3-4 T bourbon
1/4 c cornstarch (4T)
1 c finely chopped pecans
1/8 c whole pecans (note: to decorate top of pie)
1 cup semisweet chocolate chips
Dirty Whipped Cream:
1/2 c whipping cream
2 T powdered sugar
1-2 t bourbon or vanilla, if whimpy
Beat until stiff

Steps:

  • Combine ingredients: In small mixer bowl, beat eggs slightly. Gradually add sugar. Add butter and bourbon, mix well. Blend in cornstarch. Stir in pecans and chocolate chips. Pour into pastry shell. Bake @ 350 degree for 45-50 minutes. Serve while warm. Top with dirty whipped cream. Freezes well.

1/2 cup Gold Medal™ all-purpose flour

6 tablespoons unsalted butter, melted and cooled
2 teaspoons vanilla
1 cup chopped walnuts
1 cup semisweet chocolate chips (6 oz)
Whipped cream, if desired

Steps:

  • Heat oven to 350°F.
  • Press pie crust in 8- or 9-inch pie plate; crimp edges as desired. Place in refrigerator.
