1/2 pound thick-cut bacon, cut into small strips
1/3 cup store-bought honey Dijon dressing
1 tablespoon lemon juice
2 heads frisee
Salt and fresh ground black pepper
4 eggs
1 apple (crisp variety such as Gala or Jonagold), thinly sliced
1/4 cup slivered almonds

Steps:

  • Preheat a skillet over medium-high heat. Fry the bacon until browned and crisp. Transfer to a paper towel-lined plate to drain. Reserve 2 tablespoon of bacon drippings for the salad dressing, keep the remaining drippings in the pan to cook the eggs.
  • In the bottom of a large salad bowl, whisk together the bacon drippings, honey Dijon dressing and lemon juice. Tear the heads of frisee into bite size pieces and place in the bowl. Season with salt and pepper and toss to coat the ingredients.
  • Heat the pan the bacon was cooked in and fry eggs to over easy consistency. Season each with a bit of salt and pepper. Divide the salad among 4 plates. Top each with some of the apple slices, almonds, bacon and a fried egg.

2 oranges
1/2 cup extra-virgin olive oil
3 tablespoons sherry vinegar
1/4 teaspoon Dijon mustard
Kosher salt and freshly cracked black pepper
Squeeze of lemon juice
1 bunch fresh kale (about 1 pound)
1/2 cup dried cranberries, roughly chopped
1/2 cup Marcona almonds, roughly chopped

Steps:

  • For the sherry vinaigrette: Peel the oranges with a sharp knife. Remove the segments by cutting between the white membrane of each segment. Squeeze out the 2 tablespoons of juice and reserve. Combine the olive oil, vinegar, juice and mustard together. Season with salt and pepper and whisk vigorously. Finish with a squeeze of lemon juice.
  • For the kale salad: Remove the tough stems from the kale and discard. Finely slice the leaves into thin ribbons and toss together with the cranberries and vinaigrette. Serve on a platter scattered with orange segments and sprinkled with the almonds.

3 tablespoons capers, drained and patted dry
1/2 cup chopped roasted hazelnuts
1 celery heart (pale center stalks and leaves), chopped (about 1 cup)
1 1/2 teaspoons whole-grain or stone-ground mustard
2 tablespoons sherry vinegar
Kosher salt and freshly ground pepper
1 head frisée, coarsely chopped (about 4 cups)
1 small bunch lacinato kale, stems and center ribs removed, shredded (about 4 cups)

Steps:

  • Heat 2 tablespoons oil in a small skillet over medium-high. When oil shimmers, add capers. Cook, stirring a few times, until they swell and darken slightly, 1 1/2 to 2 minutes. Add hazelnuts and cook 1 minute more. Transfer mixture (with oil) to a small bowl. Let cool completely, then stir in celery.
  • Meanwhile, in a large bowl, whisk together mustard and vinegar. Gradually whisk in remaining 2 tablespoons oil to make the dressing; season with salt and pepper. Add frisée and kale, tossing to evenly coat; let stand at least 20 minutes and up to 1 hour. Top with caper mixture before serving.

1/3 cup pine nuts
6 cups baby kale, may use regular kale: remove ribs and tear into bite-size pieces
3 ounces ricotta salata
kosher salt
8 ounces white anchovy fillets, about 30 fillets
1 lemon
1 tablespoon Flat-leaf parsley, chopped, divided
1 teaspoon dried red pepper flakes, divided
2 tablespoons extra-virgin olive oil, divided
2 shallots, finely minced (about 2 tablespoons)
6 cloves garlic
1 pinch dried red pepper flakes
3 tablespoons fresh lemon juice
1 tablespoon champagne vinegar
Freshly ground black pepper
kosher salt
3 lemons
1/2 cup extra-virgin olive oil
1 ounce ricotta salata

Steps:

  • Toast pine nuts: Adjust the oven rack to the middle position and preheat the oven to 325 degrees F. Scatter the pine nuts on a baking sheet. Toast in the oven, shaking or rotating the pan halfway through, until fragrant and golden brown, 8-10 minutes. Remove the pine nuts from the oven and cool to room temperature.
  • Marinate anchovies: Drain and discard the brine the anchovies are packed in. In a small, flat dish, arrange ½ of the anchovy fillets in a single layer, skin side down. Use a traditional citrus zester to zest ½ of the lemon on top; then sprinkle with ½ the olive oil, parsley, and red pepper flakes. Repeat layering once more, finishing with the olive oil. Let the anchovies sit in the marinade at room temperature for at least 20 minutes. (Keeps in the refrigerator in an airtight container for up to 3 months.)
  • Vinaigrette: Trim the root end from the shallots, then discard skin. Finely mince, then place in a medium bowl. Grate garlic cloves on a Microplane and add to the shallots, along with a large pinch of red pepper flakes. Add lemon juice, vinegar, black pepper (about 12 grinds of a pepper mill), and a pinch of salt. Whisk to combine, then set aside to macerate, 5-10 minutes. Meanwhile, use a Microplane to grate lemon zest; add to the bowl. Whisk in the olive oil in a slow, steady stream. Finally, grate the ricotta salata into the bowl and whisk to combine one last time.
  • Dress the salad: Place kale in a large mixing bowl and toss with a pinch of salt. Add several spoonfuls of dressing and gently massage it into the kale, making sure to coat the leaves thoroughly. Add more dressing as needed. (It's always a good idea to start with less dressing and add more as you go.) Layer the salad to assemble: Place a third of the kale on the bottom of a large serving bowl. Drape a few anchovies onto the kale and sprinkle with pine nuts. Finish by grating a thin layer of ricotta salata on top. Repeat this layering process two more times, then serve.

1/2 cup fresh mint leaves
3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
1 tablespoon finely chopped shallot
1 teaspoon coarse-grain Dijon mustard
Salt
Freshly ground black pepper

A mandoline

Steps:

  • Heat oven to 350°F with rack in middle.
  • Spread pine nuts in a small baking sheet and bake until pale golden, about 8 minutes. Let cool.
  • Using mandoline, thinly slice fennel bulb crosswise, beginning at base, into a large bowl, stopping about halfway up bulb (reserve remaining bulb for another use). Toss fennel with radicchio, frisée, and mint.
  • Whisk together oil, vinegar, shallot, Dijon mustard, and 1/4 teaspoon each of salt and pepper in a small bowl.
  • Toss salad well with vinaigrette and pine nuts. Season to taste, if necessary, with salt and pepper.
