ROAST DIVER SCALLOPS WITH BAKED FINGERLING POTATOES AND WHITE TRUFFLES



Roast Diver Scallops with Baked Fingerling Potatoes and White Truffles image

Number Of Ingredients 10

1 pound fingerling potatoes, "Ruby Crescent"
1/2 cup Kosher salt, for baking potatoes
1 small bunch fresh chervil, or flat leaf parsley if unavailable, 1/2 chopped, 1/2 reserved for garnish
2 ounces white truffle oil
4 tablespoons whole unsalted butter, room temperature
Salt and pepper, to taste
1 pound sea scallops, (U-12), should be "Dry", "Dayboat", or "Divers"
1 white truffle, approximately 1-ounce
1/4 canola oil, for sauteing scallops
1 truffle slicer

Steps:

  • Scrub potatoes well and drain. Lay Kosher salt in an even layer of a baking pan to accommodate all the potatoes in one batch without crowding. Bake in a preheated 375 degrees for 20 to 30 minutes until just tender. Remove and let cool. This step should be done 1 hour or as many as 4 hours before serving. While potatoes are baking, check through scallops and remove any remaining tough membranes. When potatoes are cool enough to handle, cut, with a sharp paring knife, the top 1/4 off and hollow out the potato to form a "boat". Reserve potato interiors and tops. Combine scooped out portion with the chopped portion of chervil. 1/2 of truffle oil and butter, season with salt and pepper to taste and refill potato "boats" and reheat in preheated 325 degree oven for 6 minutes. Next, heat 2, 10-inch, skillets until quite hot, as potatoes are reheating. Season scallops and pat dry with paper towels. Distribute canola oil evenly in both pans and put 1/2 scallops in 1 pan. 1/2 in the other taking care to put the "cut" side down and not to overcrowd them. Sear well until browned (approximately 2 to 3 minutes each side.) Remove scallops from pan and drain on paper towels briefly before arranging attractively on 4 warm plates with the now hot twice baking potatoes. Drizzle remaining truffle oil over scallops and potatoes and shave truffle over all garnishing with chervil sprigs.

Live Shell Roasted Jumbo Day Boat Scallops image

4 live day boat scallops
2 tablespoons sake
4 tablespoon dashi stock
1 teaspoon soy sauce
1/2 teaspoon chili oil (Rai-yu preferred)
1/2 teaspoon yuzu (Japanese citrus, can substitute lime)
1/2 teaspoon sesame oil
1/2 cup grated daikon radish
1 teaspoon Ponzu (citrus vinegar)
1/4 cup Garlic Chips, recipe follows
1 scallion, julienned very thinly
2 egg whites
1 1/2 cups salt
1/4 cup sliced garlic
Vegetable oil

Steps:

  • Remove the scallops from the shells using a dinner knife or a butter knife. Remove the intestines and innards and rinse off the sand, if any. Cut the scallops in half, lengthwise. Clean the deeper of the 4 scallop shells and set aside to be used for cooking the scallops in later.
  • Best if cooked over Bincho charcoal (Japanese charcoal), but a conventional charcoal BBQ grill will do, or even a gas range at home.
  • Place scallop shells over a medium fire, pour the sake, dashi and soy sauce carefully into the shells. When the sake comes to a light boil place scallop halves in the broth so they are not stacked, 2 scallop halves per shell. Cook for about 1 minute then flip over the scallops and add the chili oil, yuzu, and sesame oil and cook for an additional 1 minute, the scallops are best to serve medium rare to medium.
  • Mix the daikon with the ponzu and set aside.
  • Whip 2 egg whites then mix with 1 1/2 cups of salt to a solid consistency. Make 4 golf ball size balls and place in center of the serving dish. Remove shells with the scallops from the heat carefully. Place the shells on the balls and press down firmly, so that the shells do not move around on the plate. Garnish with a tiny pile of grated daikon mixed with ponzu and top off with garlic chips and julienned scallions.
  • Heat 1/4-inch vegetable oil in a saute pan over medium heat. Add the garlic and lightly fry until golden brown. Remove to a paper towel lined plate.

SEARED DIVER SCALLOPS WITH CAPER-HONEY SAUCE

1/4 cup sherry vinegar
2 tablespoons salt-packed Spanish capers, soaked in 2 changes of water, then chopped
2 tablespoons honey
1/2 cup fresh dill
1/2 cup fresh tarragon leaves
2/3 cup extra-virgin olive oil
Kosher salt and freshly cracked black pepper
8 diver scallops (U10), washed and muscle removed
3 tablespoons canola oil
2 tablespoons butter

Steps:

  • In a blender, combine the vinegar, capers, honey and about half of the dill and tarragon and blend until smooth. While blending, slowly add the olive oil to emulsify. Season with salt and pepper. Reserve at room temperature for finishing.
  • Score the scallops by making 1/8-inch-deep crosshatches across the top side of each (like a checkerboard). Season with freshly cracked black pepper. Dry the scallops thoroughly on paper towels.
  • In a medium saute pan, heat the canola oil over medium-high heat until it just begins to show ripples. Place the scallops scored-side down into the oil for 2 to 3 minutes. Add the butter to the pan and flip the scallops over; cook for 1 more minute for medium rare. Season with salt.
  • Place the scallops on a serving plate and spoon some of the caper-honey sauce over the top. Top with the remaining tarragon and dill.

1 tablespoon shallot, roasted and diced
2 cups heavy cream
1/2 cup lobster stock
6 ounces brie round, with rind
1 tablespoon tomato paste
2 red peppers, roasted
1 tablespoon fresh thyme, chopped
salt and pepper
1/4 cup olive oil
20 jumbo deep sea scallops (diver scallops)
1/2 cup flour
1/4 cup sambuca romana

Steps:

  • Sauce:
  • Heat oil in a medium pan and lightly brown garlic. Add cream, shallots, and stock. reduce by half. Remove from heat and stir in brie, tomato paste, roasted peppers, and thyme. Puree in a blender or food processor until smooth. Add salt and pepper.
  • Scallops:.
  • Heat olive oil in a saute pan over medium heat. Dust scallops with flour and saute until brown. Pour sambuca into pan to deglaze (be careful when pouring liquor into hot pan to avoid flaming). Place 5 scallops on each plat in a pool of sauce.

Large sea scallops are combined with garlic, shallots, butter, and bread crumbs then baked to perfection. Being from Maine, we love our seafood, and this is one of the greats!

16 sea scallops, rinsed and drained
5 tablespoons butter, melted
5 cloves garlic, minced
2 shallots, chopped
3 pinches ground nutmeg
salt and pepper to taste
1 cup bread crumbs
4 tablespoons olive oil
ΒΌ cup chopped parsley
1 lemon wedges for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.
  • In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops.
  • Bake in preheated oven until crumbs are brown and scallops are done, about 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.
