2 (9 inch) pie crusts
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground nutmeg
15 ounces ricotta cheese
8 ounces mozzarella cheese
1 cup grated Parmesan cheese
2 cups diced Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press bottom pie crust into glass pie dish.
  • In a large bowl, combine the spinach, salt, pepper, nutmeg, ricotta, mozzarella, Parmesan, and Cheddar cheeses. Mix together well and pour into bottom pie crust. Place second pie crust on top of filling and trim edges.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes. Let stand 10 minutes and cut into wedges.

1/4 teaspoon ground nutmeg
15 ounces ricotta cheese
8 ounces mozzarella cheese
1 cup grated Parmesan cheese
2 cups diced Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press bottom pie crust into glass pie dish. In a large bowl, combine the spinach, salt, pepper, nutmeg, ricotta, mozzarella, Parmesan, and Cheddar cheeses. Mix together well and pour into bottom pie crust. Place second pie crust on top of filling and trim edges. Bake at 350 degrees F (175 degrees C) for 40 minutes. Let stand 10 minutes and cut into wedges.

1 (3 ounce) package cream cheese, softened
6 extra large eggs
1/4-1/2 cup shredded sharp cheddar cheese
1 (10 ounce) package frozen chopped spinach, cooked & thoroughly drained
2 tablespoons minced onions (to taste)
1 tablespoon minced parsley
1/2 teaspoon salt
pepper
4 -6 frozen patty shells, partially thawed
2 tablespoons grated parmesan cheese

Steps:

  • Thoroughly beat together cream cheese, eggs and cheddar cheese.
  • Stir in spinach, onion, parsley, salt & pepper.
  • Press patty shells together with fingertips.
  • Roll out patty shells, removing any seams, to a circle large enough to fit a 10" pie plate with about 1/2" of dough hanging over the edge of the dish. (For a thin crust, use 4 patty shells; a thicker one use 6 shells.).
  • (I have also used a 11" x 7" rectangular baking dish with success)
  • Place dough in pie plate. Flute edges with excess hanging over the plate (Thick fluting will give attractive, puffy edge.).
  • Let dough rest at room temperature five minutes.
  • Pour spinach filling into pie plate. Sprinkle with parmesan cheese.
  • Bake in oven preheated to 425* about 25 minutes or until edges of filling is set and crust is brown or a knife inserted near center comes out clean.
  • (For some reason, the baking time has varied, so check it and remove when it is 'set' and the crust is nicely browned.)
  • Remove from oven. Let stand at room temperature about 10 minutes before cutting in wedges to serve.

This Italian spinach and ricotta pie (torta pasqualina) from the region Liguria is traditionally eaten for Easter, but can of course be served any time of the year.

1 pound fresh spinach, or more to taste
1 small onion, chopped
1 tablespoon butter
1 (12 ounce) container ricotta cheese
1 cup grated Parmesan cheese
2 eggs
1 teaspoon ground nutmeg
salt and black pepper to taste
1 (8 ounce) package phyllo dough
5 tablespoons melted butter
6 egg yolks

Steps:

  • Place spinach in a skillet over medium heat and cook until wilted, 3 to 5 minutes. Drain, squeeze dry, and chop finely.
  • Heat 1 tablespoon butter in a skillet over medium heat and add onion. Cook until onion starts to soften, about 3 minutes. Add spinach and cook and stir for 2 minutes. Remove from heat and transfer to a bowl to cool slightly, about 5 minutes.
  • Stir ricotta cheese, Parmesan cheese, 2 whole eggs, nutmeg, salt, and pepper into the cooled spinach mixture.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch tart pan or pie dish.
  • Unwrap the phyllo dough. Keep covered with a damp cloth to prevent phyllo sheets from drying out.
  • Lay 1 sheet of phyllo over the buttered dish flush with the edge so that excess phyllo hangs over on only one side of the dish. Brush lightly with melted butter. Top with another sheet of phyllo at a slight angle to the first one. Continue in this manner, with up to 12 sheets, brushing each sheet with butter and working clockwise to lay each at a slight angle to the previous sheet.
  • Spoon cheese and spinach mixture evenly into the phyllo-lined dish. Using the back of a spoon, make six indentations in the filling, then carefully place 1 egg yolk in each. Season each yolk with salt and pepper and drizzle with a bit of melted butter.
  • Take the extra phyllo dough hanging over the edges of the dish and fold it over to the centre to cover the filling, 1 sheet of phyllo at a time, brushing each one with butter. Brush the top of the whole pie with butter.
  • Bake in the preheated oven until the phyllo pastry is a dark golden brown, about 40 minutes. Remove and let cool slightly before slicing. Serve warm.

Make this moreish Middle Eastern-inspired pie for a special occasion when you're feeding a crowd. It's made with curd cheese, but you can use ricotta and mascarpone instead

vegetable oil, for the tin
4 medium eggs
500g curd cheese, crumbled (this can be found in specialist shops), or use 250g ricotta mixed with 250g mascarpone
250g feta, crumbled
2 tbsp soured cream or crème fraîche
500g frozen spinach, defrosted and excess moisture wrung out in a clean tea towel
100ml olive oil
300ml natural yogurt
1 tsp baking powder
500g filo pastry
20g unsalted butter

Steps:

  • Lightly oil a roasting tin (ours was about 25 x 35cm and 4cm deep) and line with baking parchment. Mix the eggs, cheeses, soured cream or crème fraîche, spinach and some seasoning together in a bowl.
  • In another bowl, mix together the oil, yogurt and baking powder. Heat the oven to 200C/180C fan/gas 6.
  • Cut the filo sheets in half so they are roughly the size of the tin. Put one filo sheet in the tin and evenly brush over 1-2 tbsp of the yogurt mixture using pastry brush. Top with another filo sheet, brush over more yogurt mixture and repeat until you've used half the filo.
  • Pour over the cheese filling, then gently spread it to the edges using a spatula. Continue layering the rest of the filo sheets and yogurt mix. Spread any remaining yogurt mix over the top of the final filo sheet.
  • Cut the pie into squares (either nine or 12, depending on how big you want the pieces to be). Will keep frozen for up to a month. Defrost completely in the fridge overnight before cooking. Top each square with a small knob of butter, then bake for 20 mins. Reduce the oven to 180C/160C fan/gas 4 and bake for another 25-30 mins until browned on top. Leave to cool slightly before serving warm. Will keep covered and chilled for up to two days.

2 lbs rib eye steaks
2 sweet onions
1 tablespoon olive oil
kosher salt
fresh ground pepper
garlic powder
4 French rolls
8 slices provolone cheese
1/4 cup sliced pepperoncini pepper (optional)

Steps:

  • Slice meat with food processor as thin as possible. Cut onion into thin slices.
  • Heat oil in large skillet on medium-high. Add meat and onion and season immediately. Feel free to play with your spices. I like to use a seasoned salt and pepper like Krazy Jane's for this dish.
  • Cook meat until done, then taste meat and add more spices as needed. Remove from heat.
  • Meanwhile slice rolls partially open and put two slices of provolone on each. Toast in oven on 425 degrees until cheese is melted.
  • Pile meat and onions onto rolls and top with pepperoncini. Serve hot.
  • TO MAKE AHEAD: Undercook meat slightly and transfer to a crockpot on warm setting, not low or medium as you don't want the meat to overcook. Make the buns as directed and arrange on a platter nest the crockpot. It's okay if the buns aren't warm since the meat will reheat them.

1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) container frozen whipped topping, thawed
1 (6 ounce) package pineapple Jell-O®

  • Drain juice from pineapple. Set the fruit aside. Dissolve the gelatin in the pineapple juice, and microwave for 1 minute.
  • Mix whipped topping and cream cheese until smooth. Mix pineapple into creamed cheese mixture. Stir in gelatin, and mix thoroughly. Pour into pie shell, and refrigerate for 4 to 5 hours.

Steps:

  • Pre heat oven to gas mark 6.Rinse the spinach and cook briefly in the water that it holds. Drain well - I put it in a small colander with a dish on top with a set of old weights in. Get rid of as much liquid as possible.
  • In a bowl combine the soft cheese, grated cheddar. egg and spinach.
  • Add grated nutmeg and salt and pepper to taste. Leave to cool slightly whilst you roll the pastry.
  • Put rolled pastry onto a 30cm enamel pie plate - I find that the pastry cooks better on these.
  • Add the filling. Use the second egg to brush round the edge before adding the top.
  • Crimp the edges to seal, glaze with beaten egg then sprinkle the crushed walnuts on top.
  • Bake for 30minutes until the top is golden.
