HUMBLE BUMBLE CRUMBLE BARS
While developing a treat for my bingo group, I asked my husband for ideas. He suggested a fruity bar. This berry bar is lightly sweet and so easy. -Nancy Phillips, Portland, Maine

Steps:
- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Reserve 1/2 cup crumb mixture for topping. Press remaining mixture onto bottom of a greased 13x9-in. baking pan. Bake until lightly browned, 12-15 minutes. Cool on a wire rack., Stir brown sugar and cinnamon into reserved topping; set aside. In a large bowl, combine applesauce, cinnamon and nutmeg until blended. Spread over crust; top with berries and reserved topping. Bake until golden brown, 30-35 minutes. Cool in pan on a wire rack. Cut into bars.

Steps:
- In a large bowl, combine the flour, 1 cup sugar, baking powder, salt and cinnamon. Cut in shortening until mixture resembles coarse crumbs. Stir in eggs and extract. Press two-thirds of the mixture into a greased 13x9-in. baking dish. , In a large bowl, combine cornstarch and remaining sugar; add berries and gently toss. Spoon over crust. Sprinkle with remaining crumb mixture. , Bake at 375° for 35-45 minutes or until bubbly and golden brown. Cool on a wire rack. Cut into bars. Store in the refrigerator.

JUDY'S BUMBLE BARS
My mom tried a Bumble bar when in Idaho and recreated the recipe. This is her basic recipe which is great. I have tried dried fruit with the basic recipe for a wonderful taste. Note: Since I got this recipe I have not been able to find evaporated cane syrup. My mom's solution was to dissolve pure cane sugar and cook it down a little to make it thicker. I just use corn syrup.

Steps:
- Mix all ingredients together in a bowl and press into a well oiled 9 X 13 pan (I use olive oil spray).
- Bake for 20 minutes at 300 degrees.
- Cut in to bars while hot (it's so much easier than trying to cut when cool!).
