GREEN BEAN DUMPLING SOUP
Posted in response to a request for a soup popular in Kansas. The recipe was found in a Colorado paper, but by a Kansas chef. I have not made this, see notes below for additional comments. Prep time is estimated.

Steps:
- In a large soup kettle, saute potatoes in oil for about 10 minutes, stirring often. Add stock and beans and cook until tender.
- In a saucepan, melt the butter or margarine and saute the onion and garlic until translucent. Add the flour and cook for three minutes longer. With a whisk, stir in the milk and keep whisking until the mixture is thickened. Set aside.
- While the soup is simmering, prepare the dumplings. Blend the flour and the egg. Add milk until a thick, doughy mixture is made. You can add salt to taste. Drop the dumplings by a teaspoon into the boiling broth. Whisk the milk and flour mixture into the soup. Add milk or cream as needed to adjust the consistency.
- Note: The measurements are rather inexact. My own thought is that you probably need 3 tbsp butter and 3 tbsp flour in the roux to make a thickener that would thicken this amount of liquid adequately. The forum poster found the soup too thin. The dumplings were described as tasty, but heavy, and you might want to substitute your own favorite recipe.

TURKEY AND STUFFING DUMPLING SOUP
Perfect for leftover Thanksgiving dinner. For leftover stuffing, add an egg to help it keep it's shape, if needed. Adapted from Baked by Rachel blog.

Steps:
- Put all soup ingredients in crockpot. Cook on high 4 hours.
- About an hour before the soup is done, preheat oven to 425.
- Combine broth and eggs, add bread and let absorb.
- Add remaining ingredients and toss to combine.
- Grease cookie sheet or use parchment paper.
- Make stuffing balls with cookie scoop (or by hand).
- Bake 20 minutes.
- Serve soup with stuffing dumplings.
- Store leftovers separately.

ASIAN DUMPLING SOUP
An older recipe from Sunset magazine. When I'm the only one home for supper, this is probably my favorite thing to make. It's a quick, soothing recipe, and I get to have leftovers for lunch the next day! Note: Zaar does not recognize "potstickers", but that's what I mean by stuffed wontons.

- In a 5- to 6-quart pan, add chicken broth, ginger, garlic, rice vinegar, and soy sauce. Bring to a boil over high heat.
- Add potstickers or won tons and simmer, uncovered, until hot in center (cut to test), 6 to 8 minutes.
- Add sliced green onion.
- Serve in bowls and add Asian (toasted) sesame oil to taste.

- To a medium saucepan over med-high heat, add water, chicken bullion, seasonings, and chicken if using. Bring to a gentle boil.
- Meanwhile, Mix all dumpling ingredients to form a thick dough.
- When pot is ready, drop dumplings by heaping teaspoons into simmering liquid. Do in batches, about 6 at a time. Cook, turning occasionally, for 10-15 minutes, or until dough is cooked through. the soup will thicken up to a creamy sauce as the dumplings are simmering. Serve up in a bowl and enjoy immediately.
- NOTE: as the liquid thickens from the batches of dumplings, simply add more water or chicken stock as needed.
SOUTHERN GREEN BEAN DUMPLING SOUP
My son & daughter-in-law raved about this German soup but it just didn't sound like something I would like. One evening my little granddaughter asked my husband and I to stay for dinner and we accepted without knowing what was cooking. Needeless to say, we had our first taste of the infamous Greenbean Dumpling Soup ....and fell in love with it! I prefer my dumplings more like spaetzle than the regular biscuit type-dumplings. Also, either French-cut or regular green beans can be used. I do not use the roue - I thicken in the soup liquid. Be aware that it does make a lot, so adjustments for serving size may be needed.

- In large pot/kettle mix water and bouillon cubes; add potatoes and green beans (draining is an option); bring to boil.
- For dumplings:.
- Mix together flour (1 1/2 cup) and eggs - adding enough water to make the dough sticky. Add dough to boiling water 1/2 T at a time (will float to top when done; reduce heat.
- For roue:.
- Brown flour (1 1/2 - 2 T) and Criso in small cast iron skillet; gradually add to liquid stirring until soup thickens to desired consistency.
- To complete:.
- Add whipping cream and pepper to taste; simmer until serve.

- Put the broth, ginger, soy, wine, vinegar, sesame oil, sugar and salt in a soup pot and bring to a boil over high heat. Adjust the heat so the broth simmers and cooks to lightly flavor with ginger, about 10-15-minutes.
- Add the carrots, and simmer until tender and cooked through, about 5 minutes. Just before serving, add the dumplings, cook for 3 minutes, stir in the scallions and spinach and cook until the greens wilt, about 1 minute. Divide among warm bowls and serve. Serve with chili sauce on the side if desired.
- Optional- Cook the dumplings according to package directions for potstickers- Serve dumplings on the side of soup.

- Place in large pot potatoes, green beans, water, and bullion. Bring to a boil for about 10 minutes or until potatoes are tender. Meantime, mix 1 cup flour, egg, and enough cream to make a sticky dough mixture. Drop by small spoonfuls into boiling soup. They float when done. Cook flour and grease/butter for 1 minute and add the remaining cream and mix into a slurry. Add this to the soup to thicken up.
