APPLESAUCE COOKIES
This recipe makes 18-20 cookies. These are fluffy, soft cookies that disappear quickly from the cookie jar!

Steps:
- Preheat oven to 375F.
- In a medium bowl, stir together flour, baking powder, salt and cinnamon until mixed well. Put this bowl to the side.
- In a large bowl, beat applesauce, brown sugar and butter with an electric mixer on medium speed until mixed well (about 2 minutes).
- Beat in vanilla and egg.
- Gradually add flour mixture to applesauce mixture while beating on low speed until blended well.
- Place cookies (2-tablespoon sized) onto silicone mat lined baking sheet about 2 inches apart from each other.
- Bake for 10 minutes. Let cool for 5 minutes on cookie sheet before removing.
- Cool on cookie racks.

- Heat oven to 325°F.
- Combine first 4 ingredients. Beat egg, brown sugar, sour cream and applesauce in large bowl with mixer until blended. Gradually add flour mixture, mixing well after each addition.
- Drop dough into 24 mounds, 2 inches apart, onto 2 parchment-covered baking sheets, using about 2 Tbsp. dough for each mound. Top with nuts; press gently into dough to secure.
- Bake 16 to 18 min. or until tops of cookies are firm to the touch. Cool 3 min. Remove to wire racks; cool completely.

- Preheat oven to 375 degrees.
- Make the applesauce - store bought will work as well, but you will have to adjust the sugar to taste. Core, peel and slice 2 medium sweet apples. Puree in a food processor, adding water .5 tbsp at a time until applesauce consistency is reached.
- Cream applesauce, butter and sugar in a mixer.
- Add egg, vanilla and almond extracts, and lemon juice.
- Mix flour and baking soda. Blend into wet mixture a half cup at a time.
- Drop onto a baking sheet lined with parchment paper by tablespoons.
- Bake at 375 degrees for 10-12 minutes, until the cookies are lightly browned and still soft.
- Let cool to firmness on parchment paper, then transfer to a plate or cooling rack.
