CHOCOLATE SPAETZLE
Steps:
- Put the creme fraiche, eggs, and vanilla paste in the blender and puree. Pour the melted chocolate into the running blender. Puree until smooth and emulsified.
- Sift all the dry ingredients (sugar, 5 teaspoons salt, flour, cocoa powder, atomized chocolate) together into a large mixing bowl.
- Make a well in the center of the bowl. Stir the blended mixture into the dry ingredients. Let it rest 30 minutes at room temperature.
- Press mixture through a spaetzle press.into a large pot of boiling water. Cook for 1 minute after they float. Drain. Put into a large bowl and toss with a pinch of salt and enough olive oil just to coat.
- Heat up a large griddle and coat with oil. Toss the cooked spaetzle onto the hot griddle with some drained macerated strawberries. Cook until the spaetzle has crisped up a bit
- Top with chocolate meringue, and strawberry sorbet.
- Toss the strawberries in the simple syrup and let them sit at room temperature for 30 minutes.
- Yield: 2 to 3 servings
- Preheat oven to 200 degrees F.
- Whip whites and sugar together in a large mixing bowl with an electric mixer. Sift together cocoa and powdered sugar. Fold the dry ingredients into the meringue when it has reached full volume. Then fold in the cocoa nibs. Spread the chocolate meringue onto a parchment paper lined sheet pan, sprayed with nonstick spray, about 1/4-inch thick.
- Bake for about 1 hour or until the meringue is hard and completely dried out.
- Yield: 3 to 5 servings
- Heat the water and sugar in a saucepan until the sugar dissolves completely. Cool. Puree the strawberries with enough simple syrup to cover in the blender. Strain through a sieve. Stir the remaining simple syrup into the strained strawberry puree.
- Spin in an ice cream maker and freeze according to manufacturer's instructions.
- Yield: 1/2 gallon
CHAMPAGNE SORBET
I love champagne and it's a natural in desserts. This sorbet captures the airiness and effervescence of the wine, and adding a hint of lemon makes it super-refreshing. Champagnes differ in their sugar contents, which will affect whether or not the sorbet will freeze, so be sure to use Veuve Clicquot yellow label for this recipe.
Yield makes about 3 cups

- Freeze in an ice cream maker. Pack into a plastic container and freeze for at least 2 hours before serving.
MACERATED STRAWBERRIES
Steps:
- Toss the strawberries in the simple syrup and let them sit at room temperature for 30 minutes.
JOHNNY IUZZINI'S VANILLA WHIPPED CREAM
This recipe for vanilla whipped cream is from pastry chef Johnny Iuzzini's "Dessert FourPlay" and is used to make Chocolate-Beet Cakes with Candied Beets and Rose Petals.

Steps:
- Place the bowl of an electric mixer in the freezer until chilled. Return to mixer fitted with the whisk attachment and add cream, creme fraiche, sugar, and vanilla seeds; beat until stiff peaks form. Use immediately or transfer to an airtight container and keep refrigerated until ready to use; rewhisk before using.

PEAR GELéE
use this as a garnish for Chocolate-Pear Cake (page 98), but it would be delicious in the bottom of a glass of champagne.
Yield makes one 9 x 12-inch pan

Steps:
- Run a 9 x 12-inch rimmed baking sheet under cold water and shake off the excess. Line the damp pan neatly with plastic wrap. (The water will help the plastic stick to the pan.)
- Put the water in a small bowl and sprinkle with the gelatin. Let sit for at least 1 minute. Microwave for 30 seconds or heat gently in a saucepan until melted.
- Combine the simple syrup and eau-de-vie in a large measuring cup. Add the gelatin and whisk for about 45 seconds. Whisk in the zest.
- Pour into the baking sheet and refrigerate for at least 2 hours to set. To serve, turn out onto a cutting board and cut into small squares. Or use a whisk to break the gelée up into irregular shapes.
