1 (8 ounce) package egg noodles
1 1/2 lbs ground beef
1 large onion, chopped
1 green pepper, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon oregano
2 (10 ounce) cans tomato soup
1 (6 ounce) can tomato paste
1 cup water
2 teaspoons Worcestershire sauce
2 cups sharp cheddar cheese, grated

Steps:

  • Brown meat; add onion and green pepper.
  • Cook until tender and add seasonings.
  • Set aside.
  • In another bowl, combine soup, tomato paste, water and worcestershire sauce.
  • Set aside.
  • Cook noodles and drain.
  • Place half of the noodles in a greased casserole, then half of the meat mixture, half of the sauce, and half of the cheese.
  • Repeat, ending with the remaining cheese.
  • Bake uncovered at 375 degrees for one hour.

1 lb ground beef
1 (1 1/4 ounce) package sloppy joe seasoning mix
1 (6 ounce) can tomato paste
1 1/4 cups water
2 cups dry elbow macaroni
1 (15 1/4 ounce) can corn
2 cups sharp cheddar cheese, shredded

Steps:

  • Cook macaroni in boiling water. Drain and set aside.
  • Brown beef in a large skillet.Drain.
  • To beef add, sloppy joe mix, tomato paste and water.
  • Bring to a boil. Reduce heat and simmer 10 minutes.
  • Add the macaroni, corn and 1 cup of cheese to the beef.
  • Pour mixture into a 9x13, buttered casserole dish.
  • Sprinkle with remaining cheese.
  • Bake uncovered at 350* for 45 minutes or until hot.

Kids love this buffet-ready casserole dish. My mother-in-law used to make a simpler version of this for my husband when he was growing up. This version pushes the flavor profile a bit. I prefer to have this dish sit overnight before baking as the flavors improve and the pasta absorbs some of the sauce so the consistency is just right.

8 ounces rotini pasta
1 pound ground beef
½ pound bulk mild Italian sausage
¾ cup chopped onion
¼ cup chopped celery
1 clove garlic, minced
1 tablespoon minced green bell pepper
salt and pepper to taste
1 (14.4 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
2 cups shredded Italian cheese blend
1 ½ cups shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook until just al dente, 6 to 8 minutes; drain. Run cold water over the pasta to stop pasta from cooking further. Set aside.
  • Meanwhile, cook the ground beef and sausage until completely browned and crumbled, 7 to 10 minutes. Mix in the onion, celery, garlic, and pepper; continue to cook and stir another 5 minutes. Season with salt and pepper. Remove from heat and stir in tomatoes and tomato sauce. Allow to cool five minutes.
  • Lightly grease a large casserole dish. Spread the pasta over the bottom of the dish. Sprinkle the Italian cheese blend over the pasta. Pour the meat mixture over the pasta and cheese. Cover dish with heavy aluminum foil. Bake in preheated oven for 45 minutes; remove foil and sprinkle Cheddar cheese evenly over the casserole. Continue baking until Cheddar cheese has melted, about 5 minutes. Rest for 10 minutes before serving.

1 pound Ground Beef
1 whole Onion, Small, Diced
1 package Sloppy Joe Seasoning (McCormick's Or Other, 1.5 Ounce Packet)
1 can Tomato Paste (6 Ounces)
1 -¼ cup Water
2 cups Elbow/shell Macaroni
1 can Drained Kernel Corn (15 Ounce Can)
2 cups Grated Cheddar Cheese (divided Use)

Steps:

  • Cook the onion and the meat in a large skillet until the meat is brown. Drain the fat. Stir in the sloppy joe seasoning, tomato paste, and water. Bring to a boil; simmer 10 minutes. Meanwhile, cook the macaroni according to package directions and drain. Stir it into the meat mixture, and at the same time adding the corn and 1 cup of the cheese. Pour into a buttered or greased 9×13 pan, top with the remaining 1 cup cheese. Bake at 350 for about 45 minutes.

This is a good 1 dish meal. Takes a while to prepare but well worth the time. Our college kids love it! We like ours with a LOT of grated cheese. If you like a juicy casserole, add some water while you are mixing ingredients together. I like top my personal serving with hot salsa.

1 medium onion, chopped
1 (2 1/4 ounce) can sliced black olives (drained)
1 (14 ounce) can whole kernel corn (drained)
2 (10 3/4 ounce) cans tomato soup
grated cheddar cheese (We use a 2 lb. brick)
1 (12 ounce) package noodles, we like wide egg noodles,cooked & drained
salt and black pepper, to taste

Steps:

  • Cook ground meat with onions in a large roaster and drain excess grease when meat is browned.
  • Add the cooked noodles.
  • Mix in the olives and corn.
  • Add the tomato soup and water if desired.
  • Add grated cheese (as much as desired- a lot makes it REALY good).
  • Place in large casserole dish and top with more cheese.
  • Bake at 350 degrees about 30 minutes or until the cheese on top is brown and bubbly.

Beef and Noodle Casserole/Johnny Mosetti/

A cousin of the Johnny Marsetti recipes as my family has made it for, well, as long as I can remember! Freezes well, makes plenty and everyone loves it, it's my most requested potluck contribution. The green olives really make the dish special, in my opinion. We double those as my entire family loves the salty contrast of the olives on top of the cheese. We also add extra cheese. Prep time is the longest it's taken me to make this in the past using a knife and hand chopping/shredding everything. Using a food processor will cut your time, I just find them a constant source of frustration and therefore use a knife and hand grater.

2 lbs ground beef
1 onion, diced
4 celery ribs, diced
1 bell pepper, diced (small pepper)
1 (8 ounce) can tomato sauce
1 (10 3/4 ounce) can condensed tomato soup, undiluted
1 (16 ounce) package wide egg noodles
2 cups cheddar cheese, shredded (or more!)
1 (10 ounce) jar pimento-stuffed green olives, sliced
salt and pepper (optional)

Steps:

  • Bring large pot of water to boil and cook noodles according to package directions. Drain.
  • While the noodles are cooking, brown the ground beef with the diced onion, celery and bell pepper until beef is cooked through and vegetables are softened. Season to taste with salt and pepper, if desired.
  • Mix together beef mixture, noodles, tomato sauce, and tomato soup and place in large, rectangular baking dish.
  • Top with shredded cheddar and sliced green olives.
  • Bake uncovered at 350 for 25-30 minutes or until cheese is melted and casserole is heated through.
  • Special Note: I often bake this in two 9x9 pans and then freeze one for later use if I am making this for myself. To use frozen casserole simply thaw overnight in the refrigerator and bake at 350, uncovered, to heat through.

Ingredients
• 2 cups dry rotini pasta
• 1 pound ground beef
• 1/2 pound bulk mild Italian sausage
• 3/4 cup chopped onion
• 1/2 lb white mushrooms washed and chopped
• 1 tbsp minced garlic
• 1 tbsp Italian seasoning
• 1 15-16 ounce can diced tomatoes
• 1 15-16 ounce can tomato sauce
• 2 cups shredded Italian cheese blend
• 1 1/2 cups shredded old Cheddar cheese
Instructions
1.If making in the oven, preheat your oven to 350 °F.
2.Cook the pasta according to the package directions to a firm al dente. Remember, you are cooking it even further in the oven or crockpot, you don't want mush.
3.Fry the ground beef and Italian sausage in a large skillet until browned. Mix in the onion and mushrooms and cook until soft. Add in the garlic, saute for 2-3 minutes.
4.Stir in the Italian seasoning, diced tomatoes and tomato sauce. Simmer briefly, then set aside and cool for 10 minutes.
5.Grease or spray the casserole dish or the inside of the slow cooker. Spread a little bit of the sauce on the bottom of the dish/slow cooker, then top with the pasta.
6.Sprinkle the Italian blend cheese over the pasta, then pour the remaining sauce over the casserole.
7.Cover and cook in the oven for 45 minutes or in the slow cooker on low for 1 1/2 - 2 hours. When ready, uncover, sprinkle the cheddar cheese on top and then cover again until melted.
8.Serve and enjoy!
Recipe Notes
If you have a slow cooker where "low' is super hot, cut the time to 1 1/2 hours. The slow cooker method is great for when you don't want to use the oven but it's not an all day recipe.
