4 lbs lean boneless chuck roast, trimmed
1 1/2 cups ketchup
1/4 cup brown sugar, packed
1/4 cup red wine vinegar
2 tablespoons prepared dijon-style mustard
2 tablespoons Worcestershire sauce
1 teaspoon liquid smoke
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
12 hamburger buns

Steps:

  • In large bowl, combine ketchup, brown sugar, vinegar, mustard, Worcestershire and liquid smoke.
  • Stir in salt, pepper and garlic powder.
  • Place chuck roast in a slow cooker.
  • Pour ketchup mixture over chuck roast, cover and cook on low for 8-10 hours.
  • Remove chuck roast from cooker, shred with a fork and return to slow cooker.
  • Stir meat to evenly coat with sauce; continue cooking approximately 1 hour.
  • Spoon meat onto toasted buns and top with additional barbecue sauce, as desired.

4-1/2 pounds ground beef
1-1/2 cups chopped onions
2-1/4 cups ketchup
3 tablespoons prepared mustard
3 tablespoons Worcestershire sauce
2 tablespoons vinegar
2 tablespoons sugar
1 tablespoon salt
1 tablespoon pepper
18 hamburger buns, split

Steps:

  • In a Dutch oven, cook beef and onions until meat is no longer pink and onion is tender; drain. Stir in the ketchup, mustard, Worcestershire sauce, vinegar, sugar, salt and pepper. Heat through. Serve on buns.

I found this recipe on allrecipes, and wanted to get it into my cookbook because my family LOVED it! I used a roast instead of the brisket, and it fell apart, it was so tender. The sauce can be a little thin, so more cornstarch may be needed. I also ran the sauce through the blender while I was shredding the beef, because my family doesn't like chunky onions.

1 large onion, chopped
1/2 cup brown sugar
1 teaspoon ground black pepper
1/4 teaspoon salt
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon dried oregano
2 garlic cloves, minced
1 cup ketchup
1/2 cup water
1/2 cup white vinegar
2 tablespoons canola oil
2 tablespoons Worcestershire sauce
3 drops liquid smoke flavoring
3 lbs beef brisket or 3 lbs roast
2 teaspoons cornstarch
10 whole grain buns

Steps:

  • Combine the onion, brown sugar, pepper, salt, chili powder, paprika, oregano, garlic, ketchup, water, white vinegar, canola oil, worcestershire sauce, and liquid smoke into a slow cooker, stir. Lay beef into the sauce. Cook on low for 10 hours.
  • Remove the beef from the sauce, keeping the sauce in the slow cooker, and shred with 2 forks. Remove 1/4 cup of the sauce from the slow cooker and pour into a bowl. Whisk the cornstarch into the sauce, stir the mixture back into the slow cooker. Add the shredded beef, stir. Serve hot on whole wheat buns.

Adapted from a family friend's recipe. Delicious and my husband asks for it all the time! Great as leftovers and can be made into a beef stew too! Serve on toasted sourdough roles and serve with coleslaw (we like the Fanny Flagg recipe).

1 beef roast (O-bone or chuck is good, serves 3-5)
6 ounces of your favourite barbecue sauce (We like Chris & Pitt's - just make sure it has a lot of bite!)
1 cup water
1 (8 -16 ounce) can heinz French onion soup (depending how much broth you want with the beef)
1 tablespoon dry mustard
2 tablespoons Worcestershire sauce
1 tablespoon horseradish sauce
2 -3 tablespoons brown sugar
salt and pepper

Steps:

  • Place all ingredients in a slow cooker.
  • Cook on high for approximately 5 hours (longer is okay).
  • Add more bbq sauce (to taste) and salt and pepper and make sure the meat has come off the bone and is stringy.
  • Cook for a further 30 minutes.
  • Serve on toasted buns.

1 boneless beef chuck roast (3 pounds)
1-1/2 cups ketchup
1/4 cup packed brown sugar
1/4 cup barbecue sauce
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 teaspoon liquid smoke, optional
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 sandwich buns, split
Sliced onions, dill pickles and pickled jalapenos, optional

Steps:

  • Cut roast in half and place in a 3- or 4-qt. slow cooker. In a small bowl, combine the ketchup, brown sugar, barbecue sauce, Worcestershire sauce, mustard, liquid smoke if desired and seasonings. Pour over beef., Cover and cook on low for 8-10 hours or until meat is tender. Remove meat; cool slightly. Skim fat from cooking liquid., Shred beef with two forks; return to the slow cooker. Cover and cook for 15 minutes or until heated through. Using a slotted spoon, place 1/2 cup on each bun. Serve with onions, pickles and jalapenos if desired. Freeze option: Place individual portions of cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth / water if necessary.
