Made with great-tasting Jimmy Dean Pork Sausage, veggies and cheddar cheese, these hearty mini quiches are the perfect addition to your menus, guaranteed to create an unforgettable brunch. Not only are the individual quiches perfectly-portioned, they make for a great presentation and are quick and easy to whip up!

- Ingredients1 pkg. Jimmy Dean® Regular Flavor Pork Sausage Roll1 cup fresh chopped mushrooms½ cup chopped green bell pepper10 eggs¼ cup milk¼ teaspoon ground black pepper1 cup (4 ounces) Cheddar Cheese½ cup sliced green onions
- DirectionsPreheat oven to 350°F. Cook sausage, mushrooms and bell pepper in large skillet over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain.Beat eggs, milk and black pepper in large bowl with wire whisk until well blended. Stir in sausage mixture, cheese, and green onion. Line cupcake pans with 16 baking liners. Spoon mixture evenly into baking cups.Bake 18-22 minutes or until toothpick inserted in center comes out clean. Let stand 5 minutes before serving.
- Cook's Tips:
- Use parchment paper for cupcake liners. Cut a 5-inch piece of parchment paper and press into muffin cups (spraying muffin cups with cooking spray helps parchment stick).

- In a large skillet, brown sausage and onion over medium heat until meat is no longer pink, 4-5 minutes, breaking sausage into crumbles; drain. Stir in chives. , On a lightly floured surface, unroll crescent dough into a long rectangle; seal seams and perforations. Cut into 48 pieces. Press onto the bottoms and up the sides of greased miniature muffin cups. , Fill each with about 2 teaspoons of sausage mixture. In a large bowl, combine the eggs and cheeses. Spoon 2 teaspoons over sausage mixture in each cup. Sprinkle with paprika. , Bake at 375° until a knife inserted in the center comes out clean, 20-25 minutes. Cool for 5 minutes before removing from pans to wire racks. If desired, sprinkle with additional minced chives. Serve warm.
