1/2 recipe No Knead No Rise Pizza Dough
1 can black beans
1 teaspoon taco seasoning
1 cup colby jack cheese
1/2 cup mozzerella cheese
3 cups Romaine lettuce (shredded)
1 vine-ripe tomato (diced)
1/2 avocado (diced)
1/4 cup Cilantro Lime Dressing (or ranch dressing)
1 cup tortilla strips
3 tablespoons cilantro

Steps:

  • Prepare No Knead No Rise Pizza Dough according to recipe directions.
  • Empty black beans into a small sauce pan and heat until warm. Add taco seasoning and mash the beans with a potato masher until well mashed but still has some texture (a few half and whole beans here and there).
  • Spread the mashed black beans onto the dough. Sprinkle both cheeses on top and then bake.
  • While the pizza bakes, shred lettuce and dice tomato and avocado.
  • After removing pizza from the oven, layer on lettuce, tomatoes, and avocado. Drizzle with dressing and then sprinkle on the tortilla strips and cilantro.
  • Eat it. All.

1 (1.25 ounce) package dry taco seasoning mix
1 cup ground beef
1 (14 ounce) package prepared pizza dough, or as needed
½ cup pizza sauce
¼ teaspoon ground cumin
1 pinch salt
1 ¼ cups shredded mild Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Sprinkle taco seasoning on ground beef. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Divide pizza dough in half and flatten each half into a thin crust over a nonstick baking sheet.
  • Bake in the preheated oven for 3 minutes. Remove but leave oven on.
  • Mix pizza sauce, cumin, and salt together in a bowl. Spread 1/2 of the mixture over each pizza crust. Sprinkle beef and Cheddar cheese evenly on top.
  • Bake until crusts are crunchy and cheese is melted, 10 to 12 minutes.

I came up with this when I was craving CPK's Tostada Pizza. It's so easy to put together and it tastes and looks so fresh. I will definately be taking a picture of this one the next time I make it. Baking time is approximate depending on what brand of crust you use.

1 prebaked pizza crust (like Boboli)
1 (10 ounce) can rotel diced tomatoes and green chilies, drained very well
1 (15 ounce) can black beans, rinsed and drained well
1 cup tortilla chips, crushed (or fried tortilla strips)
1 cup Mexican blend cheese, shredded
lettuce, shredded
tomatoes, diced
ranch dressing or sour cream

Steps:

  • Spread the Rotel tomatoes on pizza crust.
  • Scatter black beans over tomatoes evenly.
  • Scatter tortilla chips over that, then cover with shredded cheese.
  • Bake according to pizza crust directions until heated through and cheese is melted.
  • Layer with shredded lettuce and tomato. You can add whatever else you may want like green onions, olives, etc.
  • Drizzle with ranch dressing or dollop with sour cream if you prefer.
  • Enjoy!

Very tasty and quite easy. Note: Do not put veggies on the whole pizza if you want to have leftovers...they get yucky when you try to re-heat. I also like to substitute pepper jack cheese for cheddar.

1 lb lean ground beef
1 (4 ounce) can diced green chili peppers, drained
1 1/2 ounces taco seasoning mix
1 teaspoon chili powder
1 tablespoon cornmeal
1 (10 ounce) package refrigerated pizza dough
1 (15 ounce) can pinto beans with jalapeno peppers, rinsed and drained
1 cup shredded cheddar cheese (about 4 ounces) or 1 cup monterey jack cheese (about 4 ounces)
1 cup shredded lettuce
1 medium tomatoes, chopped
1/2 cup thinly sliced green onion
bottled taco sauce (optional)

Steps:

  • In large skillet cook meat until brown. Drain off fat. Stir in 3/4 cup water, chile peppers, taco seasoning mix, and chile powder.
  • Bring to boil; reduce heat. Simmer uncovered for 15-20 minutes (until most of the liquid is gone).
  • Meanwhile, grease a baking sheet and sprinkle with the cornmeal. Pat pizza dough into a 12x8-inch rectangle on the baking sheet. Bake in a 400 degree oven for 5 minutes.
  • In a bowl, mash beans with a fork; spread over partially baked dough to within 1/2 inch of the edges.
  • Spoon meat mixture over beans. Bake uncovered, 10 minutes more, or until crust is just golden.
  • Sprinkle with cheese. Bake 1-2 minutes more (until cheese melts).
  • Top with lettuce, tomato, and onion. If desired, serve with taco sauce.
