JAM FILLED BUTTER COOKIES

This cookie recipe has been in my mother's family for more years than I've been alive. It's my favorite cookie; my comfort food!

Number Of Ingredients 5

¾ cup butter, softened
½ cup white sugar
2 egg yolks
1 ¾ cups all-purpose flour
½ cup fruit preserves, any flavor

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, cream together the butter, white sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. If dough is too soft, refrigerate for 15 to 20 minutes. Place balls 2 inches apart onto ungreased cookie sheets. Use your finger or an instrument of similar size to make a well in the center of each cookie. Fill the hole with 1/2 teaspoon of preserves.
  • Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.

1 cup butter
2/3 cup splenda
1/2 teaspoon vanilla extract
1 1/3 cups pecans, ground
2 cups almond flour
1/4 cup powdered sugar
1/4 cup strawberry jam

Steps:

  • 1. With an electric mixer, cream butter and splenda. Beat in vanilla. Gradually add pecans and flour, blending thoroughly. Cover tightly and chill so dough will be easier to handle (about 1-2 hours or for up to 3 days).2. On a floured board, roll dough to a 1/8-inch thickness. Using a favorite cookie cutter, cut the dough into shapes and transfer to an ungreased baking sheet. (The cookies will be sandwiched together. If using different cookie cutters, be sure to cut out even numbers of cookies using the same cookie cutter.) Cut out about a 1/2-inch hole in the center of half of the cookie shapes. You can use the cap from the vanilla extract or other bottle if you don't have a tiny round cutter. Bake cookies at 375 F. for about 12 minutes or until lightly browned. Transfer to cooling racks to cool completely.3. Gather the cookies with holes in one area. Sift powdered sugar over the tops of these cookies. Spread the bottom cookies with jam. Place a sugar-topped cookie on each jam-topped cookie to form a sandwich. Store in an airtight container.

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
2-1/2 cups all-purpose flour
1/2 cup apricot spreadable fruit or seedless raspberry preserves

Steps:

  • In a large bowl, cream butter and cream cheese until light and fluffy. Gradually add flour to the creamed mixture and mix well. Divide dough into four portions; cover and refrigerate until easy to handle. , On a lightly floured surface, roll one portion of dough at a time into a 10x7-1/2-in. rectangle. Trim edges if necessary. Cut into 2-1/2-in. squares., Place 1/4 teaspoon spreadable fruit or preserves near each end of two diagonal corners. Moisten the remaining two corners with water; fold over and press lightly. , Place on ungreased baking sheets. Bake at 350° for 12-15 minutes or until corners are lightly browned. 1-1/4 cups all-purpose flour
6 tablespoons sugar
1/8 teaspoon salt
4 ounces cream cheese
1/2 cup cold butter, cubed
1 tablespoon sour cream
FILLING:
1-1/4 cups chopped dried apricots
1/2 cup sugar
5 tablespoons orange juice
GLAZE:
1 cup confectioners' sugar
4 teaspoons water

Steps:

  • In a large bowl, combine the flour, sugar and salt. Cut in cream cheese and butter until mixture resembles coarse crumbs. Add sour cream, tossing with a fork until dough forms a ball. Cover and refrigerate for at least 1 hour. , Meanwhile, in a large saucepan, combine the filling ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover; simmer 7-9 minutes longer or until most of the liquid is absorbed, stirring occasionally. Cool., Divide dough in half. Shape dough into balls about 1 inch in diameter. Roll in KELLOGG'S CORN FLAKES cereal. Place about 2 inches apart on ungreased baking sheets. Make dent in center of each cookie.3. Bake at 300°F about 8 minutes. Remove from oven. Press down dent in top of each cookie. Return to oven and bake about 10 minutes longer or until lightly browned. Fill centers of cookies with jelly when cooled.
