Do not be fooled by this little recipe. So few ingredients but believe me! It-is-a one right after another pop it in your mouth oh I cannot stop eating these. Before you know it, you will have to make another batch for the rest of your family. I got this from my best friend Robin who got it form her Taste of Home Cookbook.

1 cup butter, no substitutes
2/3 cup sugar
1/2 teaspoon almond extract or 1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup jam, for the centers

Steps:

  • Cream butter and sugar
  • Beat in extract
  • Gradually blend in flour
  • Cover and refrigerate for an hour
  • Roll into one-inch balls and place one inch apart on un-greased cookie sheet
  • With the end of a wooden spoon make a indention in the ball and fill with jam
  • I have used Variety of jams and jellies Raspberry being the best! but Apricot is yummmie too, along with apple, blackberry, blueberry the possibilities are endless.
  • Bake at 350 for 14 to 18 minute.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Butter 2 cookie sheets.
  • Beat butter and sugars together using an electric mixer until creamy. Beat in egg, salt, baking soda, baking powder, and vanilla extract. Stir in flour and oats until just blended. Fold in jelly beans.
  • Drop rounded spoonfuls of the cookie dough about 2 inches apart onto the prepared cookie sheets.

PEANUT BUTTER AND JELLY THUMBPRINT COOKIES

These cookies are great for kids of all ages. I usually double the recipe when I make them. Using a cookie scoop and soda bottle cap to make the indentations results in uniform cookies, which makes a nice presentation. But you can improvise with other lids; just aim for something about the size of a quarter. Use any variety of jelly, but I do not recommend jelly with chunks of fruit, like strawberry. Attempting to move the cookies prior to cooling completely will cause them to break.

1 ⅔ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter
⅔ cup creamy peanut butter
½ cup white sugar
½ cup brown sugar
½ teaspoon vanilla extract
1 egg
¾ cup seedless raspberry jam

Steps:

  • Sift flour, baking soda, and salt together in a bowl.
  • Beat butter, peanut butter, white sugar, brown sugar, and vanilla together in a separate bowl with an electric mixer until light and fluffy, 1 to 2 minutes. Scrape sides of bowl with a rubber spatula. Add egg to butter mixture and beat on medium speed until blended. Scrape side of bowl down again.
  • Beat flour mixture into butter mixture on low speed until just blended. Scrape bowl and mix a few more seconds.
  • Scoop dough into 2 tablespoon-sized balls and arrange on a baking sheet. Cover baking sheet and refrigerate at least 4 hours (overnight is ideal).
  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper and arrange cookie balls atop paper.
  • Bake cookies in the preheated oven until partially cooked, 11 minutes.
  • Place raspberry jam in a bowl and stir until syrup consistency.
  • Press a soda bottle cap into the center of each cookie until edges of cookies bulge and begin to crack, making an indentation. Fill each indentation with about 1 teaspoon jam.
  • Bake cookies until edges are lightly browned, 7 minutes longer. Cool cookies completely on the baking sheet before transferring to a wire rack.

  • Preheat an oven to 350 degrees F (175 degrees C); line a baking sheet with parchment paper.
  • Beat the butter and sugar with an electric mixer in a large bowl until smooth; add the vanilla and continue to beat. Mix in the flour mixture until just incorporated. Nonstick cooking spray
1 cup unsalted roasted peanuts
1 cup old-fashioned rolled oats
1 cup all-purpose flour
1/4 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup of your favorite jelly (I like grape)

Steps:

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and spray with nonstick cooking spray.
  • Pulse the peanuts in a food processor until they are a fine meal. Add the oats, flour and salt and process until blended. Transfer to a bowl. In the food processor, combine the butter and sugar and process until light and fluffy. With the motor running, add the egg and vanilla. Process until smooth. Add half of the dry ingredients back into the processor and pulse to combine. Add the remaining half and pulse again until combined.
  • Drop the cookie dough by the tablespoonful (I use an ice cream scoop) onto the prepared baking sheets, leaving about 1 1/2 inches between the cookies. Use your thumb to make a thumb print in each cookie.
  • Bake until the bottoms of the cookies are lightly golden brown, 12 to 15 minutes. Cool on a wire rack.
  • Stir the jelly in a small bowl to loosen it up and fill each thumbprint with about 1 teaspoon.

50g peanut butter
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
2 tbsp chopped peanuts
½ tsp bicarbonate of soda
10 heaped tsp raspberry jam

Steps:

  • Heat oven to 180C/160C fan/ gas 4 and line two baking sheets with parchment. Cream the butter, peanut butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, chopped peanuts, bicarb and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Make a thumbprint in the centre of the cookies and fill each with 1 heaped tsp raspberry jam (you could make your own jam for this). Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

1/2 cup Smucker's® Creamy Natural Peanut Butter, stirred
1/2 cup packed light brown sugar
1/3 cup unsalted butter
1/4 cup honey
1 large egg
2 cups flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1 1/2 cups Smucker's® Strawberry Jelly or 1 1/2 cups Smucker's® Concord Grape Jelly

Steps:

  • MIX peanut butter, brown sugar, butter, honey and egg in large bowl. In a separate bowl, whisk together flour, salt and baking powder; add to the peanut butter mixture and mix well. Divide the dough into 4 equal portions. Wrap each portion in plastic wrap or waxed paper and refrigerate 2 hours or overnight.
  • REMOVE portions from refrigerator and place each portion between 2 sheets of plastic wrap or waxed paper. Roll each portion into a "sheet" about 1/8-inch thick (refrigerate dough again if it becomes too soft to handle).
  • HEAT oven to 350ºF. Using a drinking glass or cookie cutter, cut the dough into circles. Using a smaller drinking glass or cookie cutter, cut smaller circles or "windows" in the center of half of the circles. Transfer cookies to a nonstick baking sheet, leaving 1/2 inch between them.
  • BAKE all cookies 5 to 6 minutes or just until they begin to brown. Using a spatula, transfer the cookies to a cooling rack. When cookies have cooled, spread the jelly on the plain cookies and top with the "window" cookies.

My mom made these excellent buttery rich cookies. They are a soft cookie that melts in your mouth. They are excellent with any kind of jam but chokecherry or raspberry jelly are my favorites. I don't know how many this makes as I always double the recipe and they get eaten so fast I've never had time to count. Refrigerate the dough for three hours minimum, or make in batches days apart.

1/2 cup shortening
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg, beaten
2 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup jam or 1/2 cup jelly

Steps:

  • IF USING SELF-RISING FLOUR REDUCE THE BAKING SODA TO 1/4 TEASPOON AND OMIT THE SALT.
  • Beat together the shortening and butter.
  • Beat in sugars well, then beat in the egg.
  • Add the dry ingredients, and mix well.
  • Shape the dough into two rolls 1 1/4" in diameter, sealing well in waxed paper.
  • Refrigerate for a minimum of 3 hours or overnight.
  • Heat oven to 400°F.
  • Slice dough into 1/8" thick disks.
  • Put 1/2 teaspoon of jam/jelly on half the slices, keep it in the center of the disk.
  • Top each disk with another slice and bake. You can sprinkle these with sugar for a crunchier cookie (optional).
  • Bake for 8 - 10 minutes.
  • Store in an air tight container once the cookies have cooled.

Golden Grahams™ cereal gives PB&J a twist in this no-bake treat.

4 cups Golden Grahams™ cereal
1/3 cup honey-roasted peanuts
1/2 cup dried cranberries
1/2 cup creamy peanut butter
2 tablespoons butter, cut into pieces
1 bag (10 oz) miniature marshmallows

Steps:

  • Line cookie sheets with waxed paper or cooking parchment paper. Spray large bowl with cooking spray; place cereal, peanuts and cranberries in bowl.
  • Spray medium microwavable bowl with cooking spray; add peanut butter, butter and marshmallows. Microwave uncovered on High 2 to 3 minutes or until smooth, stirring after each minute.
  • Pour hot marshmallow mixture over cereal mixture; stir until cereal is well coated. Drop mixture by rounded tablespoonfuls onto waxed paper. If mixture becomes hard to scoop, reheat in microwave 1 minute.
  • Cool completely, at least 1 hour. Store covered in airtight container at room temperature.

PEANUT BUTTER AND JELLY SWIRLED ICE CREAM WITH VANILLA COOKIES



Peanut Butter and Jelly Swirled Ice Cream with Vanilla Cookies image

2 cups lowfat vanilla ice cream, softened
1/4 cup grape jelly or jam or strawberry preserves
1/4 cup smooth peanut butter
8 vanilla wafer cookies
Sprinkles
Chocolate chips
Peanuts
Chocolate fudge
Mini chocolate sandwiches (recommended: Oreos)

Steps:

  • In a large bowl combine the ice cream, grape jelly and smooth peanut butter. Gently stir to combine, leaving streaks of jelly and peanut butter throughout the ice cream. Spoon the mixture into 4 dessert bowls. Garnish each bowl with 2 vanilla wafer cookies and various toppings, if so desired.
