Jello Fruit Salad - A classic sweet side dish that has been a tradition around holiday dinner tables since the '70s. Cranberries, apples, pineapple, and mandarin oranges all held together with raspberry Jello. Part salad, part side dish, part dessert all wrapped into holiday tradition!

6 oz raspberry Jello crystals (2 small boxes)
2 cups boiling water
1 1/2 cups cold water
1/2 cup orange juice (prepared not freshly squeezed)
1 cup granulated sugar
1/2 lb whole cranberries (partially thawed from frozen, rough chopped)
1 medium apple (peeled, cored and chopped)
1 cup canned crushed pineapple (drained from juice)
1/2 cup canned or jarred mandarin oranges (slices halved)
1/4 cup walnuts (chopped)

Steps:

  • Add the Jello crystals to a large bowl. Stir in boiling water until crystals are completely dissolved. Add in sugar and stir until completely dissolved. Add in cold water and orange juice and stir.
  • Add the cranberries, apples, mandarin oranges, pineapple and walnuts. Stir until mixed. Fruit will float to the top likely but that is fine.
  • Pour the Jello and fruit mixture into the 9" X 13" glass dish. Cover tightly with plastic wrap and let set in the fridge for a minimum of 6 hours or overnight. Check that Jello is set and then serve in the same dish or a pretty bowl. Top with more fruit, nuts, marshmallows, sugared cranberries or whipped cream.

This crowd pleasing Jello Fruit Salad is packed with fruit, including apples, cranberries, bananas, strawberries and pineapple, and has a softer texture than regular rubbery Jello. It's the side dish for potlucks and parties.

1 medium apple (, peeled and grated)
2 bananas (, chopped)
1 teaspoon lemon juice
6 ounces Strawberry Jell-O
2 cups boiling water
40 ounces crushed pineapple (, undrained)
16 ounce tub sweetened strawberries (, slightly drained)
14 ounce can whole cranberry sauce
Whipped cream (, for topping, optional)
pecans (, or walnuts, for topping, optional)

Steps:

  • Add the shredded apple and chopped bananas to a bowl and toss in lemon juice.
  • Empty Jello-O packets into a large bowl. Add 2 cups boiling water and stir well until Jello-O is dissolved.
  • Add crushed pineapple and strawberries and stir to combine. Stir in whole cranberry sauce. Stir in shredded apple and chopped bananas.
  • Pour into desired serving dish--I use a 9x13'' pan, but you could put it in a trifle or other dish-- and refrigerate for several hours or until firm.
  • Serve with a dollop of whipped cream and chopped walnuts or pecans, if desired.

1 envelope unflavored knox gelatin
1/4 cup strawberry, diced
1/4 cup raspberries
1/4 cup kiwi fruit, peeled,diced
1/8 cup grapes, red,seedless,halved
1 teaspoon walnuts, chopped
1/2 cup water
1/4 tablespoon banana extract
1/4 tablespoon orange extract

Steps:

  • Place gelatin in water and stir until dissolved.
  • Add fruits and extracts to gelatin and heat using medium setting for 10 minutes, gently stirring.
  • Pour into a serving dish and refrigerate.
