Wonderful, traditional candied yams ... my way! Not for those counting calories and enough to feed a crowd!

6 (29 ounce) cans yams in syrup, drained
1 ½ cups brown sugar
2 tablespoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
¼ cup heavy cream
1 (10.5 ounce) package miniature marshmallows
aluminum foil
cooking spray

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 2 pieces of aluminum foil with cooking spray.
  • Mash drained yams in a large bowl with a fork. Add ingredients in the following order, mixing well after each addition: brown sugar, cinnamon, cloves, allspice, and heavy cream. Pour mixture into two 8-inch square baking dishes. Sprinkle 1/2 of the marshmallows over each dish and cover with aluminum foil, spray-side down.
  • Bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 5 minutes.

This is a simple and quick way to enjoy a Thanksgiving favorite! Canned yams or sweet potatoes may be used.

1 (29 ounce) can sweet potatoes
¼ cup butter, cut into pieces
½ cup brown sugar
1 ½ cups miniature marshmallows

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
  • Bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.

My honey kept asking for candied yams with the OJ and marshmallows. I couldn't find a recipe, so I made one up. I must say it came out mighty fine!

2 ½ pounds yams
2 tablespoons butter
2 cups brown sugar
1 cup orange juice
1 teaspoon ground nutmeg
3 cups marshmallows

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Roast whole yams in preheated oven until heated through but not quite tender, 35 to 40 minutes. Allow to cool.
  • Reduce oven heat to 350 degrees F (175 degrees C).
  • Melt butter in a large pot over medium heat. Stir brown sugar, orange juice, and nutmeg with the melted butter to dissolve the sugar completely; bring to a boil, reduce heat to low, and cook until the liquid thickens into a syrup, 10 to 15 minutes.
  • Peel cooled yams. Cut yams into bite-size chunks; arrange in a single layer in a 13x9-inch baking dish. Drizzle syrup over the yams.
  • Bake in the preheated oven, twice opening the oven to spoon syrup over the yams, until the chunks are fork-tender, about 35 minutes. Arrange marshmallows over the yams and continue baking until the marshmallows are puffy and browned, about 10 minutes more.

The basic recipe came from my mother's oh so yummy, candy yams. When my mother-in-law was diagnosed as a diabetic, at her request, I decided to try and create a variation of my Mamma's Candied Yams. The results were amazing. I have now passed it around to all the Aunts and Uncles... and would love to share it with those of...

as desired whole fresh yams peeled and washed
splash of orange juice
as desired honey drizzled over top
1 bottle pure maple syrup
as desired butter pads

Steps:

  • 1. The amount of Yams is up to you. I usually buy about 10-12 yams and it will feed at least 12 people depending on your eaters. Mamma used the old method for this recipe.. a pinch of that, a drizzle of this and a pad of that... lol
  • 2. Wash and Peel your yams
  • 3. chop yams cottage style
  • 4. place yams in the bottom of a foil pain large enough to have a single layer of yams, this makes the candy process yummier,
  • 5. drizzle orange juice over yams - lightly covered - I probably only use barely an 1/8 of cup
  • 6. take butter and slice into pads. Place butter pads between yam slices - nothing fancy just thrown them down,
  • 7. Drizzle honey over yams til well covered, or to your liking.
  • 8. Pour your Pure Maple Syrup over the yams covering really well. For a huge pan of yams, I use a full bottle of syrup. Adjust your syrup accordingly. You want them well covered but not drowned as it just takes too long to candy if there is too much liquid.
  • 9. cover with foil and place in an oven at 375 degrees for about 45 minutes. Check and if they are not tender cook bit longer. Adjust your cooking time accordingly, you want your yams but not mushy, just cook til tender.
  • 10. Once your yams are tender throughout, take the foil off and put pan back in an oven of 425 and bake until your yams are sticky, gooey and fully candied. It takes about 30-45 minutes longer for them to candy (depending on quantity of yams in pan). Make sure your pan is in the middle of the oven so they don't burn too easily.
