These are the best waffles I have ever had. It is important. Be sure to whisk and fold the egg whites in. It makes a world of a difference.

2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1 teaspoon active dry yeast
3/4 cup unsalted butter, melted and cooled
1 1/2 cups milk
1 teaspoon vanilla extract
3 eggs, seperated

Steps:

  • Start the night before. Mix dry ingredients and sift. Add remaining ingredients except for eggs. Cover the bowl with plastic wrap and leave out overnight. Room temperature.
  • Come morning, beat in egg yolks to yeast mixture. Beat egg whites with whisk until stiff peaks are made. Fold the egg whites into the mixture with a spoon. Cook for 3 minutes in preheated deep waffle iron.

2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
2 eggs
1/2 cup vegetable oil
2 cups milk
1 teaspoon vanilla

Steps:

  • Oil the waffle maker.
  • Sift the dry ingredients together in a large bowl.
  • In separate bowl, separate egg whites and beat until stiff peaks form.
  • In a separate bowl, mix together the egg yolks, milk, oil , and vanilla, stir slightly.
  • Add to dry ingredients and mix well.
  • Fold in egg whites.
  • Cook in waffle iron on medium-high heat for around 5-10 minutes.

1 1/2 teaspoons active dry yeast
1 cup warm water
3 cups all-purpose flour
1/2 teaspoon salt
1 cup whole milk
1/2 cup butter, melted
2 large eggs, separated
1/2 teaspoon pure vanilla extract

Steps:

  • 1.In a small bowl, dissolve the yeast in the water. In a large bowl, stir the flour with the salt. Whisk in the yeast mixture, milk, butter, egg yolks and vanilla until smooth.
  • 2.In a medium bowl, beat the egg whites until soft peaks form. Fold them into the batter and let stand for 20 minutes.
  • 3.Preheat the oven to 225°. Heat and grease a waffle iron. Pour 1 1/4 cups of the batter into the iron and cook until the waffles are golden, 6 minutes. Transfer the waffles to the oven. 2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons unsalted butter, melted
2 cups milk
non-stick cooking spray

Steps:

  • Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. 1 package active dry yeast, 1 tablespoon
1/2 cup warm milk (100 to 105 degrees)
2 cups flour
1/4 cup granulated sugar
1/4 teaspoon salt
8 tablespoons butter, melted and cooled
1 1/4 cups warm milk
1/2 teaspoon vanilla extract
2 eggs, separated

Steps:

  • Sprinkle yeast over the 1/2 cup warm milk in a small bowl; set aside about 5 minutes to soften.
  • In a large bowl, mix together flour, sugar and salt.
  • Lightly beat the egg yolks with a fork.
  • In a small bowl mix melted butter, 1 1/4 cup warm milk, vanilla, egg yolks.
  • Add the butter, milk, vanilla, egg yolks to flour mixture. Mix until smooth.
  • Beat egg whites until soft peaks form.
  • Stir in the yeasted milk.
  • Fold egg whites gently into batter.
  • Leave it out on the counter until doubled in volume, then bake.
