Steps:
- Combine the rice and 6 cups of cold water in a pot. Sprinkle in the salt and bring to a boil over medium-high heat. When the liquid comes to a boil, reduce the heat to low and cover. Cook the rice for 20 minutes, without peaking under the lid, the steam is most precious in cooking rice. When the rice has absorbed the water it will form "craters" or holes in the top.
- Let the rice sit off the heat, undisturbed with the lid on, for at least 5 minutes. This allows the rice to steam, with the bottom layer as fluffy as the top.
- Fluff the rice with a fork and transfer to a serving bowl. Add the blanched peas, green onions, lemon juice and zest, mint, and oil; season with salt and pepper. Toss gently, taking care not to smash the grains of rice. Garnish with pea tendrils before serving, if using.

Steps:
- Combine 1 3/4 cups water, rice, and salt in large saucepan.
- Cook until just cooked-- do not overcook.
- Fluff with fork.
- Cool.
- Cook peas in medium saucepan of boiling salted water 1 minute.
- Drain.
- Rinse under cold water.
- Drain.
- Heat oil in large nonstick skillet over medium-high heat.
- Add all but 2 tablespoons green onions; sauté 30 seconds.
- Add rice and sauté until heated through, stirring to break pieces, about 4 minutes.
- Add peas, lemon juice, parsley, and lemon peel.
- Sauté 2 minutes to blend flavors.
- Garnish with remaining green onions and serve immediately.
JASMINE RICE WITH LEMON AND MUSHROOMS
A great way to use cold, cooked rice. I've never made this with other types of rice, but a basmati-type of rice would work too.

Steps:
- Melt butter in sauté pan.
- Add garlic and sauté 'til fragrant, approximately 2 minutes.
- Add onions and peppers and fry 1 minute.
- Add tarragon and salt.
- Add mushrooms and sauté until heated.
- Add cooked rice to pan and gently combine. Don't break up all the rice clumps.
- When warmed through, add the lemon peel and juice.
- Stir gently and serve.

This pilaf is made with jasmine rice, an aromatic rice popular in Thai cuisine.

- In a large saucepan over a medium-low heat, warm the oil. Add onion and saute for 3 to 5 minutes. Mix in green peas, bay leaf, and jasmine rice. Stir to coat the rice.
- Pour 3 cups water into the saucepan and add the salt. Increase the heat to medium and let the rice come to a quick simmer. Reduce heat to low and let rice simmer lightly and sit uncovered until all of the liquid is absorbed. Cover the rice and remove from heat. Let sit for about 40 minutes.

JASMINE RICE WITH CARAMELIZED GREEN ONIONS
Asian inspired sweet 'n' spicy jasmine rice with caramelized green onions and coarsely chopped peanuts! Now, for the record, I don't like green onions cooked, but caramelizing them is a whole other story. From Canada's Company's Coming. Don't omit the garnishes: coarsely chopped peanuts!

- If necessary, lightly roasted the peanuts and coarsely chop. You want the peanuts coarsely chopped, not ground!
- Place the water, jasmine rice and 1/4 teaspoon salt in a rice cooker and cook. Once done, keep warm.
- In a saute pan, heat up the peanut oil on medium-low heat and saute the green onions, garlic and sambal oelek for about 2-3 minutes or just until softened. Stir occasionally.
- Increase the heat to medium and add the rice vinegar, sugar and remaining salt. Cook, stirring constantly until the mixture starts to caramelize, about another 3-4 minutes. Do not burn!
- Lastly, add the cooked jasmine rice and coarsely chopped peanuts; mix well.

- Rinse the rice well several times until the water runs clean; drain thoroughly.
- Bring water to a boil in a lidded saucepan; stir in rice, bouillon, salt, orange and lemon zest, and the optional smashed garlic clove.
- Cover, reduce heat and simmer for about 20 minutes or until water has been absorbed. Do not stir during the cooking process to prevent gumming.
- Remove from heat, add optional green onions and fluff with fork.
