KOREAN SWEET POTATO NOODLES (JAPCHAE)
If you like Asian-inspired noodle dishes, you will love Korean japchae. You would never know that these satisfying noodles are made from sweet potatoes and are gluten free! Serve with kimchi as a garnish.

Steps:
- Combine 1/4 cup soy sauce, mirin, 1 tablespoon sesame oil, garlic, and 1 teaspoon pepper in a bowl. Add steak; stir to coat. Marinate for at least 30 minutes.
- Combine 1/4 cup soy sauce, honey, 1 tablespoon sesame oil, and 1 pinch pepper in a large bowl; stir sauce well.
- Fill a large pot with water and bring to a rolling boil; stir in noodles and return to a boil. Cook uncovered, stirring occasionally, about 5 minutes. Drain. Add noodles to sauce; toss to coat.
- Whisk egg in a bowl. Heat a skillet over medium-low heat; pour in egg. Cook until firm, about 1 minute per side. Slice into strips.
- Bring a large pot of lightly salted water to a boil. Add spinach and cook, uncovered, until just bright green, about 1 minute. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
- Heat olive oil in a large skillet over medium-high heat. Add carrot and onion; saute until tender, about 5 minutes. Stir in steak and marinade; cook until tender, 5 to 8 minutes. Stir in spinach. Add noodles and egg; cook and stir until well combined and heated through, about 2 minutes.

Steps:
- Whisk soy sauce, sugar, sesame oil, and garlic in a bowl until sugar is dissolved into sauce.
- Bring a large pot of lightly salted water to a boil. Cook sweet potato noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, 6 to 7 minutes. Rinse noodles under cold water and drain. Transfer noodles to a bowl, add 2 tablespoons sauce, and toss to coat.
- Squeeze beef under running water until juices run clear. Mix beef and 1 tablespoon sauce together in a bowl.
- Bring a pot of water to a boil. Cook spinach in the boiling water until just wilted, about 1 minute. Drain quickly and transfer spinach to a bowl of cold water to stop the cooking process. Squeeze excess water from spinach, place spinach in a large bowl, and season with salt and pepper.
- Heat 1 teaspoon oil in a large skillet over medium-high heat; cook onion until fragrant but crisp, 1 to 2 minutes. Transfer onion to the bowl with spinach. Heat another 1 teaspoon oil in the same skillet. Cook mushrooms in the hot oil until lightly browned but still firm, 1 to 2 minutes; add to onion mixture. Heat remaining 1 teaspoon oil in the same skillet. Cook carrot in the hot oil until lightly browned but still crisp, 1 to 2 minutes; add to onion mixture.
- Cook and stir beef in the same skillet until browned, 1 to 2 minutes; add to onion mixture. Cook and stir noodles in the same skillet until heated through, 1 to 2 minutes; add to beef-onion mixture. Add remaining sauce to beef-noodles mixture and toss to coat using your hands.

- Cook the sweet potato noodles in a large pot of boiling water for 4 to 5 minutes. Immediately drain and rinse thoroughly under cold water. Be sure not to overcook the noodles, or they will lose their chewy texture. If you like, cut the noodles with scissors into 6- to 7-inch lengths for easier eating.
- Blanch the spinach in boiling water. Rinse immediately under cold water, squeeze the water from the leaves and form into a ball, and then cut the ball in half. Combine the spinach, half the garlic, 1/2 teaspoon of the sesame oil, and 1/4 teaspoon salt in a small bowl. Set aside to let the flavors soak in.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the beef, the remaining garlic, 1 teaspoon of the soy sauce, and 1 teaspoon of the sesame oil. Stir-fry until the beef is cooked, 3 to 4 minutes. Add the onion, mushrooms, and carrot and cook until the onion is translucent, about 3 minutes. Add the green onions and stir-fry for another minute. Remove from the heat.
- In a large bowl, thoroughly combine the noodles, beef mixture, spinach, remaining 1/4 cup soy sauce, 1 tablespoon sesame oil, and the sugar. Serve warm, sprinkled with sesame seeds.
SPRING VEGETABLE JAPCHAE (KOREAN GLASS NOODLES)
Japchae is a savory Korean stir-fry with mixed vegetables, beef and sweet potato noodles. Also known as glass noodles, sweet potato noodles can be found in Asian markets; once cooked, the noodles turn translucent, light and chewy. (They are also wheat-free, so they are a great option for those avoiding gluten.) The noodles are cooked first, then sit in the sauce, absorbing all of the garlicky sesame and soy flavors like a sponge. This springtime japchae celebrates crisp asparagus and snap peas. Japchae can be made a few hours ahead and served at room temperature, making it the perfect dish for potlucks and picnics.

- Make the sauce: In a small bowl, combine soy sauce, garlic, sugar, sesame oil and 1/2 teaspoon pepper.
- In a large pot of boiling water, cook noodles until tender and translucent, 8 to 10 minutes. Transfer to a colander and run under cold water to stop the cooking. Drain well and transfer to a large bowl. Add half of the sauce (about 3 tablespoons) and toss to evenly coat.
- In a large skillet, heat 2 tablespoons safflower oil over medium. Add onion and carrots, season with salt and pepper and cook, stirring occasionally, until softened, about 3 minutes.
- Add mushrooms and half the remaining sauce (about 1 1/2 tablespoons) and cook, stirring occasionally, until tender and lightly golden, about 3 minutes. Transfer the mixture to the bowl with the noodles.
- Add the remaining 1 tablespoon safflower oil and the bell pepper to the skillet and cook, stirring frequently, for 2 minutes. Add snap peas and asparagus, season with salt and pepper, and cook, stirring occasionally, until vegetables are crisp-tender, about 2 minutes. Add the spinach to the skillet and stir until wilted, 1 to 2 minutes. Transfer the mixture into the bowl with the noodles. Add the remaining sauce and toss until well combined. Season with salt and pepper.
- Divide japchae among bowls and garnish with sesame seeds. Serve warm or at room temperature.
JAPCHAE (KOREAN GLASS NOODLES)
Dangmyeon, or Korean glass noodles, made with sweet potato starch, have a wonderful chewy, slippery texture. Combined with an abundance of stir-fried vegetables and beef, then tossed with soy sauce, sesame oil and abundant black pepper, Japchae teems with multiple savory flavors and contrasting textures. Delicious warm, at room temperature or cold, it's an ideal dish for potlucks and project-focused dinner parties alike.

- Line three baking sheets with parchment paper. Set aside.
- Cut the beef into 1/2-inch strips. Place in a medium bowl, and add sugar, soy sauce, toasted sesame oil, smashed garlic, ginger and black pepper. Toss well to combine. Set aside for 30 minutes.
- If making pickled lotus root, slice roots into 1/8-inch-thick discs, and place in a medium bowl filled with cold water. Set aside. Place a colander in the sink. Bring 4 quarts of water to a boil in a medium sauce pot. Blanch lotus-root slices for 1 minute, then drain.
- In a medium saucepan, combine 1 cup water, 6 tablespoons soy sauce, 3 tablespoons rice vinegar and 3 tablespoons sugar. Set over medium heat, and bring to a boil, stirring occasionally to ensure sugar dissolves. Cool to room temperature, then pour over cooled lotus root. Set aside.
- Place noodles in a large bowl. Cover with warm tap water, and set aside to soak for 30 minutes.
- Fill a medium pot with 3 quarts water, and bring to a boil. Season with 1 tablespoon salt. Add spinach, and blanch for 10 seconds, then use a spider or tongs to remove to a parchment-lined tray. Spread out into a single layer, and allow to cool, then squeeze out any excess water and chop roughly.
- Fill a large pot with 6 quarts of water, cover, and set over high heat to come to a boil.
- Set a large sauté pan over high heat. Add 1 tablespoon oil. When it shimmers, add scallions and a pinch of salt. Sauté for 2 minutes until they are tender but not completely soft. Transfer to a baking sheet, and spread into a shallow pile to cool quickly.
- Return pan to high heat. Add 1 tablespoon oil. When it shimmers, add carrots and a pinch of salt. Sauté for about 6 minutes until tender but not completely soft. Transfer to sheet with scallions, and spread into another shallow pile to cool quickly. Repeat with bell peppers.
- Return pan to high heat. Add 1 tablespoon oil. When it shimmers, add shiitakes, and cook until lightly caramelized, about 3 minutes. Move mushrooms to the edges of the pan, add 1 teaspoon oil to the center of the pan and add garlic. Turn off heat and allow garlic to gently sizzle for about 10 seconds, then stir garlic into mushrooms to prevent it from taking on any color. Transfer to second parchment-lined baking sheet and allow to cool, then squeeze out any extra water.
- Return pan to high heat. Add 1 tablespoon oil. When it shimmers, add onions and a pinch of salt. Sauté for about 8 minutes until lightly caramelized and translucent, but still a little crunchy within. Transfer to sheet with mushrooms and spread into another shallow pile to cool quickly.
- Return pan to high heat. Add 1 tablespoon oil. When it shimmers, add beef and sauté for about 3 minutes, until meat is tender and barely cooked through and just starting to caramelize. Transfer to sheet with onions, and spread out to cool quickly.
- Set a colander in the sink. Add 3 tablespoons soy sauce to large pot of boiling water. Add noodles and cook for 4 minutes until tender, then drain into colander, rinsing with cold water. When noodles are warm but not hot, drain and transfer to a large bowl. If noodles are unmanageably long, use kitchen shears to shorten them. Add 3 tablespoons soy sauce, ¾ teaspoon toasted sesame oil, ¼ teaspoon salt and freshly ground black pepper. Toss to coat evenly.
- Add all the vegetables and beef to the noodles. Toss thoroughly with hands to ensure everything is evenly distributed. Taste and adjust seasoning with soy sauce, sesame oil and salt as needed. Transfer to serving dish.
- Set a large nonstick pan over medium heat, and add 1 teaspoon oil. Add eggs and reduce heat to low. Cook into a thin omelet, flipping before it takes on any color. Turn omelet out onto a cutting board, and julienne into thin strips.
- Garnish noodles with egg and nori strips and lotus root, if using. Serve at room temperature.
JAPCHAE KOREAN NOODLE WITH VEGETABLE
My slightly sweet version of the vermicelli noodle loaded with veggies and meat (optional). Delicious as a main course with rice and kimchi or as a banchan (side dish) to complement nearly any Korean meal. I adapted it from Maangchi to suit my taste. *Please see directions for notes on ingredients*

- Note: Noodles should be (2) 3" bundles of Dangmyun, Korean potato starch noodle. This is the only noodle that should be used for the dish, they are translucent gray color and are hard.
- 1. Boil a large pot of water and drop the dangmyun in for 3-4 minutes (Test before removing; noodle should be soft but still chewy).
- 2. Strain noodles, reserving hot water to be put back in pot. Rinse noodles with cold water and put in large bowl #1. Cut noodles with scissors so they are more manageable. Add mixture of 1T sesame oil, 1T soy sauce and 1T corn syrup. Mix well. (I always just use my hands. Messy, but the noodles are slippery and it coats them the best).
- 3. Return water in pot to a boil. Drop in entire bag of spinach, boil for one minute only. Remove, strain and squeeze out all water with hands. Place spinach in large bowl #2 along with 1/2T sesame oil and 1/2T soy sauce.
- 4. Meanwhile in a pan, heat olive oil (not sesame oil!) and stirfry veggies one at a time in the following order: carrot, onion, mushroom, then green onion. Be sure to cook just to crisp tender and don't let them burn. After each is done, put them in bowl #2 with the spinach. Stir after each addition.
- 5. If you choose to add meat (traditionally beef), you should slice it very thinly and stir fry it with a little soy sauce, sugar, and garlic to taste. Add it to bowl #2.
- 6. Pour noodles into bowl #2 with the veggies and mix.
- 7. Make a mixture of 4T soy sauce, 4T sugar, 2T sesame oil, and 2t pepper. Stir well, and pour immediately over the noodles. Mix well with your hand or tongs until all the noodles take on a uniform color.
- 8. Make sure to taste along the way, and make adjustments accordingly. Hope you enjoy~!
VEGETARIAN KOREAN NOODLES (JAPCHAE)

- For the sauce: Combine the sugar, tamari, rice wine vinegar, sesame oil and ginger in a small bowl. Whisk until the sugar is dissolved. Set aside.
- For the noodles: Bring a large pot of salted water to a boil. Add the noodles and stir to help submerge them. Cook until the noodles are just barely cooked, 6 to 8 minutes. Drain and rinse with cold water. Using kitchen shears or a clean pair of scissors, cut the noodles into approximately 8-inch lengths. Set aside.
- Heat the grapeseed oil in a large skillet over high heat. Add the oyster and shiitake mushrooms and cook, stirring often with a wooden spoon, for about 5 minutes, or until the mushrooms are beginning to brown. Add the shallots and 1/4 teaspoon salt and cook until fragrant, another 2 minutes. Add the red pepper, garlic and scallions to the pan, reduce the heat to medium-high and cook for an additional 3 minutes, or until the peppers are beginning to soften. - If dangmyeon noodles are long, carefully cut the noodles with scissors to fit the diameter of the inner pot. Lay the noodles in a criss-cross pattern to prevent clumping.
- Lay the carrots, onions, and mushrooms on top of the noodles.
- In a small bowl, whisk sugar, soy sauce, vegetable oil, and ¾ cup of water until well-combined. Drizzle the liquid mixture over the vegetables and noodles.
- Turn and lock the lid and move the steam release valve to the sealed position. Select Pressure Cook on High and program for 3 minutes. When the cooking is complete, quick-release pressure manually and press Cancel. Unlock and carefully remove the lid.
- Select Sauté on Low. Add ¼ cup water, baby spinach, scallion, sesame oil, and black pepper. Mix thoroughly with the noodles. If the noodles are clumped together, add water, 1 tablespoon at a time, to loosen it up. Keep sautéing ingredients together until the baby spinach has wilted and water is absorbed, about 2 to 3 minutes. Press Cancel.
- Transfer japchae to a bowl. Garnish with roasted sesame seeds and serve.

- Soak the shiitake and wood ear mushrooms in cold water for 2 hours, and up to overnight. Soak the noodles in hot water for 30 minutes.
- Drain the shiitake and wood ear mushrooms. Squeeze the water from the shiitakes, and then thickly slice. Tear the wood ear mushrooms into pieces. Cut the king oyster mushrooms into 1/4-inch planks, and then 1/4-inch slices. Halve the onion, remove the root end, and slice with the grain. Cut the bell peppers into 1/4-inch slices. Grate the carrots on a mandoline using the 1/4-inch coarse-toothed blade. Cut the chives into 2-inch lengths. Keep all the vegetables in separate piles on a platter and place near the stove.
- Bring a large saucepan of water to a boil.
- Heat 3 tablespoons of the grapeseed oil in a large skillet over medium-high heat. Add the king oyster mushrooms, onions, and 1/2 teaspoon of the salt and cook, stirring with tongs, until softened, for 3 to 5 minutes. Remove from the pan to a large bowl or platter. Add 2 more tablespoons of the grapeseed oil to the pan, and then the yellow and orange peppers and 1/4 teaspoon of the salt. Cook, stirring, until softened, about 4 minutes. Remove from the pan to the bowl. Add 1 more tablespoon of the grapeseed oil to the pan, and then the red peppers, carrots, and 1/4 teaspoon of the salt, and cook, stirring, until softened, for 3 to 4 minutes. Remove from the pan to the bowl. Add 1 more tablespoon of the grapeseed oil to the pan, and then the shiitake and wood ear mushrooms and 1/4 teaspoon of the salt. Cook, stirring, until softened, for 3 to 4 minutes. Remove from the pan to the bowl. Add 3 more tablespoons of the grapeseed oil to the pan, and then the chives and 1/2 teaspoon of the salt. Cook, stirring, until limp, about 2 minutes. Remove from the pan to the bowl.
- Add the noodles to the boiling water and boil until they turn clear and soften, about 3 minutes. Drain.
- Heat 2 teaspoons of the grapeseed oil in a medium nonstick skillet over medium heat. Add the egg whites and tilt and swirl the pan so they cover the bottom in an even layer. Turn the heat to low and cook until the whites set, for 2 minutes. Flip and cook for 30 seconds on the other side. Remove to a cutting board. Add the remaining 2 teaspoons grapeseed oil to the pan and put over medium-high heat. Add the egg yolks and tilt and swirl the pan so they cover the bottom in an even layer. Cook until the yolks are set, for 2 minutes. Flip and cook for 1 minute on the other side. Remove to a cutting board. Fold each egg pancake into thirds and slice into very thin strips.
- Toss the hot noodles with tongs in a large mixing bowl with the sesame oil. Drizzle in the soy sauce and toss, coating the noodles well. Scatter in the garlic and mix well. Then add all the vegetables and mix with the tongs (or your hands if not too hot) to really get the vegetables and noodles integrated. Sprinkle in the scallions, honey, and sesame seeds and toss well. Transfer to a serving bowl and scatter the egg slices on top.

JAPCHAE: SWEET POTATO NOODLES STIR-FRIED WITH VEGETABLES
Steps:
- In a medium bowl, mix yangnyumjang sauce ingredients, whisking well. Set aside. Add 4 tablespoons of the yangnyumjang sauce to the sliced beef and combine well. Heat 2 tablespoons of oil in a wok over medium-high heat. Add beef, stir-frying until it is no longer red. Remove from the wok. Set aside. Heat 1 tablespoon of canola oil in a wok over medium-high flame. When it begins to sizzle, add 5 tablespoons yangnyumjang sauce and 1/4 cup water. Add noodles, stir-frying 3-4 minutes. Transfer to a large bowl and set aside. Mix shitake with 1 teaspoon each of: soy sauce, sugar and sesame oil, plus dash of pepper. Heat 1 teaspoon of oil in wok over medium heat. Add shitakes, stir-frying about 3 minutes. Set aside. Season oyster mushrooms with 1/4 teaspoon salt, 1 teaspoon sesame oil and a dash of pepper. Heat 1 teaspoon oil in wok over medium heat. Add mushrooms, stir-frying 1-2 minutes. Transfer to bowl with shitakes. Add 1 teaspoon of oil to wok over medium heat. When hot, add onion, stirring frequently. Sprinkle 1/2 teaspoon of salt. Saute about 3 minutes, adding a little water if onions stick. Remove from heat and transfer to bowl with mushrooms. Heat 1 teaspoon of oil in wok over medium-high heat. Stir-fry cucumber skins, 1-2 minutes. Remove from heat and spread on a plate to cool. Heat 1 teaspoon of oil in a pan over medium heat. Add carrots and cook 2-3 minutes. Season with 1/2 teaspoon salt. Remove from heat. Spread on plate to cool. Heat 1 teaspoon of oil in wok over medium-high heat. Add red bell pepper with 1-1/2 teaspoon chopped garlic and 1 teaspoon salt. Stir-fry 2-3 minutes. Remove from heat. Stir in 2 tablespoons chopped green onion, 1 teaspoon sesame salt * and a dash of pepper, combining well. When all ingredients are cool, toss beef, vegetables and 2 tablespoons of yangnyumjang sauce with the noodles. Serve at room temperature or chilled. *Available from Korean grocers or Asian markets
JAPCHAE (KOREAN STIR-FRIED SWEET POTATO NOODLES)
Prep everything then sauté the vegetables and throw in the cooked noodles...that's it! Note: Korean sweet potato noodles, also known as starch noodles or Korean vermicelli, are made from sweet potato starch and water. When cooked, these dried gray noodles turn clear. Do not confuse them with Korean "cold noodles", which are made from buckwheat. Korean sweet potato noodles can be found in Asian or Korean markets. - Mix the soy sauce and sugar together in a small bowl until the sugar has dissolved; set aside.
- Heat the 1 tablespoon vegetable oil in a large frying pan over medium heat until shimmering. Add the carrots, onion, measured salt, and measured pepper. Cook, stirring occasionally, until the onion has softened, about 8 minutes. Add the mushrooms and garlic and cook, stirring occasionally, until the mushrooms are tender, about 3 minutes.
- Increase the heat to medium high. Add the spinach and, using tongs, toss to combine. Let cook until slightly wilted, about 1 minute. JAPCHAE
This Korean stir-fried noodles and vegetables dish is one of our favorite weeknight dinners (and leftover lunches!). What's great about it is that you can eat it either hot or cold and it's just as good. The base of the recipe is sweet potato noodles that cook up in 5 to 10 minutes. These get sauteed with thinly sliced vegetables, tossed in a light tamari-based sauce and topped with some toasted sesame seeds. If you want something a bit heartier, feel free to throw in some chicken, shrimp, egg or thinly sliced beef-this recipe is very adaptable.

- Preheat the oven to 350 degrees F. Bring a large pot of water to a boil. Line a baking sheet with parchment paper.
- Spread the tuxedo sesame seeds on the prepared baking sheet and bake until the white seeds turn golden, 4 to 5 minutes. Set aside.
- Season the boiling water heavily with salt. Cook the noodles according to the package directions until soft with a little bite, 5 to 10 minutes.
- Drain and toss immediately with the sesame oil in a large bowl prevent sticking. If the noodles are very long, cut with scissors to your preferred length if desired.
- Heat a large skillet over medium-high heat. Add the avocado oil and, when shimmering, add the mushrooms and let them sit untouched until browned, 2 to 3 minutes. Add the carrots and a pinch of kosher salt and cook until softened, about 2 minutes. Add the zucchini and shallots, season lightly with salt and cook until the zucchini starts to wilt and the shallots are translucent, 1 to 2 minutes. Add the garlic and cook another 30 seconds before shutting off the heat.
- Whisk together the tamari and sugar in a small bowl until the sugar dissolves. Set aside.
- Pile the spinach and scallions on top of the cooked vegetables. Pour the drained, hot noodles on top of the spinach and scallions. Add the tamari mixture and toasted sesame seeds and toss to mix. Serve hot, at room temperature or cold.
JAPCHAE
Japchae is a sweet and savory stir-fried noodle dish that you can make with as many or as few vegetables as you like. (The word "jap" in Korean means to gather and mix many ingredients; "chae" means vegetables.) Served at special occasions, such as weddings, birthdays and holidays, as well as for everyday meals, the dish is generally prepared in large quantities and is meant to be shared. This recipe takes no shortcuts and calls for each component to be cooked and seasoned individually so the flavors are cleaner and more distinct in the finished japchae. With a little bit of planning, though, most of the prep can be done a day ahead (see Cook's Note).

- For the beef: Cut the beef against the grain into slices about 1/4-inch thick and 2 inches long. Place in a medium bowl with the soy sauce, garlic, sesame oil, sugar and a few turns of freshly ground pepper. Mix until the meat is completely coated and set aside.
- For the onions: Heat the vegetable oil in a 12-inch nonstick skillet over medium-high heat. Add the onions and cook, stirring constantly, until just tender with a little bite, 4 to 5 minutes. Season with salt and set aside; reserve the skillet.
- For the bell peppers: Wipe the skillet clean, add the vegetable oil and heat over medium-high heat. Add the peppers and cook, stirring constantly, until just tender and beginning to brown, 4 to 5 minutes. Season with salt and set aside; reserve the skillet.
- For the carrots: Wipe the skillet clean, add the vegetable oil and heat over medium-high heat. Add the carrots and cook, stirring constantly, until just tender, but not brown, 2 to 3 minutes. Season with salt and set aside; reserve the skillet.
- For the eggs: Whisk together the eggs and 1/4 teaspoon salt in a small bowl until incorporated. Wipe the skillet clean. Add the vegetable oil and heat over medium-high heat. Pour in the eggs and and swirl the pan until the mixture covers the entire surface area. Cook until the eggs are set on the bottom, about 1 minute. Flip carefully to keep the egg crepe in one piece and cook 1 minute more. Slide onto a plate or cutting board to cool, then cut the crepe into 4 equal strips horizontally. Layer all the strips together and cut into 1/4-inch strips, then set aside; reserve the skillet.
- For the mushrooms: Wipe the skillet clean, add the vegetable oil and heat over medium-high heat. Add the mushrooms and cook until browned, 6 to 7 minutes, stirring halfway through. Transfer the mushrooms to a medium bowl. Add the soy sauce, garlic and sesame oil, mix well and set aside; reserve the skillet.
- For the spinach: Bring a large pot of water to boil over medium-high heat and prepare an ice water bath. Add the spinach to the boiling water and blanch until it turns bright green, about 30 seconds. Remove the spinach with tongs or hand-held strainer and transfer to the ice bath immediately; reserve the pot and water. Once the spinach is completely cooled, remove it and squeeze dry. Cut the spinach into 1 1/2- to 2-inch pieces. Transfer to a medium bowl, add the sesame oil, garlic and 1/2 teaspoon salt. Mix well and set aside.
- For the japchae: Bring the pot of water back to the boil. Add the noodles and cook, stirring constantly to ensure the noodles don't stick on bottom of the pot, until noodles become mostly clear but are still opaque in the center and bend over the handle of a large wooden spoon, 3 to 4 minutes. (At this point, the noodles aren't cooked through all the way.)
- Drain in a strainer and rinse under cold running water, rubbing the noodles between your fingers and gently massaging them in the water. Drain and then rinse again, repeating 2 more times to remove any excess starch. Set aside in the strainer and allow to drain well.
- Wipe the skillet clean. Add the 1 teaspoon vegetable oil and heat over medium-high heat. Add the marinated beef and cook, stirring often, until browned (being careful not to burn the garlic), 5 to 6 minutes. Set aside; reserve the skillet.
- Wipe the skillet clean. Add the 1 tablespoon vegetable oil and heat over medium-high heat. Add the drained noodles and cook, stirring and mixing constantly with tongs, until there is a slight cooked smell of starch, the noodles are completely coated in oil and any moisture is cooked off, 6 to 7 minutes. (You'll hear a lot of sizzling sounds starting around the 2 minute mark; that's fine.)
- Add the soy sauce, reduce the heat to low, and loosen the noodles back up again for 1 to 2 minutes; they will turn golden brown from the soy sauce. Once all the soy sauce has absorbed, transfer the noodles to a large mixing bowl. Immediately add the sesame oil, sugar and rice syrup and toss until incorporated and the sugar has melted.
- Add the cooked onions, peppers, carrots, mushrooms, spinach and beef and toss until thoroughly mixed. Add the eggs and gently toss again (try to avoid breaking the strips). Transfer the japchae to a large serving bowl and sprinkle with the sesame seeds. Serve warm, at room temperature or cold (see Cook's Note).
SWEET POTATO NOODLES WITH BEEF AND MUSHROOMS (JAPCHAE)
Japchae is the perfect Korean dish to serve at a big party. This stir-fry favorite uses glassy sweet potato noodles that absorb the flavors of the beef, soy and sesame while retaining their unique texture. The beef can be substituted with shrimp, pork or even just more veggies.

- Put the beef in a medium bowl with 1 tablespoon sesame oil, 2 tablespoons soy sauce, 1 tablespoon brown sugar and 1 tablespoon minced garlic and mix until the meat is completely coated. Set aside.
- Put the shiitake mushrooms in a small bowl and pour in enough hot water to cover. Set aside to soften for 25 minutes. Remove the softened mushrooms from the liquid, slice thinly and set aside.
- Heat 2 tablespoons sesame oil in a large skillet. Add 2 tablespoons minced garlic, the shiitake mushrooms, shishito peppers, carrots, onions and red bell peppers and cook until slightly soft but still crunchy, for 3 minutes. Add 2 tablespoons soy sauce and continue to cook for an additional minute. Transfer to a bowl and set aside. Set the skillet aside for cooking the beef.
- Prepare a medium bowl of ice water. Bring a medium saucepan of salted water to a boil, and then add the spinach and cook for 1 minute. Remove with a slotted spoon and immediately add to the ice water. Drain the spinach and squeeze with your hands to remove the excess liquid. Roughly chop and set aside.
- In the same pan of boiling water, add the noodles and cook according to the package directions. Drain the noodles in a strainer and rinse thoroughly with cold water. Add 2 tablespoons sesame oil to the noodles and toss with your hands or tongs so they are well coated and do not stick together. Leave the noodles in the strainer and set aside.
- Place the reserved skillet over medium-high heat and cook the beef with the marinade until brown, for 3 to 4 minutes.
- Combine the noodles, vegetables and beef in a large bowl. Add the remaining 7 tablespoons sesame oil, 7 tablespoons soy sauce, 1/4 cup brown sugar, the remaining garlic, the mirin, fish sauce, rice vinegar and black pepper. Mix together, using your hands or tongs, until all the ingredients are incorporated.
- Transfer to a large serving bowl and sprinkle with sesame seeds.

- Place the beef strips into a medium bowl. Add the "beef marinade" and gently mix the sauce into the meat. Cover the bowl with food wrap and set it aside while you're working on other ingredients.
- Get the rest of the ingredients ready per below.- Prepare the vegetables as instructed in the "main ingredients" section.- Put the sliced mushroom into a medium bowl and add 1 Tbsp of "noodles & mushroom marinade" mixture. Mix them well. Set it aside until you cook it (in about 20 mins).- Blanch the spinach in rolling boiling water (5 to 10 seconds). Drain the water and quickly cool it down by running it under cold tap water. Squeeze the spinach to remove any excess water and put it into a mixing bowl. Add the "spinach seasoning" and mix them gently and evenly. Put it into a large mixing bowl where we will be adding the rest of prepared ingredients in later.- Boil some water in a large pot. Once the water starts to boil (6 to 8 mins later), add the noodles and boil them for 6 to 7 mins. Drain the water. Rinse in cold water to cool down and let the water drain for 1 to 2 mins.Cut the noodles with a pair of kitchen scissors a couple of times. (Between 15 to 20 cm / 6 to 8 inches length is good). Move the noodles into a mixing bowl and pour in the rest of the "noodles & mushroom marinade" mixture. Mix them well. Set it aside until you cook it (in about 10 mins).
- Start cooking the prepared ingredients per below. Follow the order if you can. We are cooking lighter color to darker color (to minimize the color transfer and avoid washing up in between) and will be using only one non-stick pan/skillet.Once each step is completed, move them into the large mixing bowl (except for the first two - egg white and egg yolk), where we will be mixing all ingredients in before serving.- Beat the egg white with a fork. Add some cooking oil (1 tsp) on a well heated pan and spread it well. Pour the egg white mixture and cook both sides on low heat (1-2 mins). Transfer it onto a clean cutting board and set aside.- Beat the egg yolk with a fork. (If necessary, add more cooking oil onto the pan and spread it well.) Pour the egg yolk mixture and cook both sides on low heat (1-2 mins). Transfer it onto a clean cutting board and set aside.- Add more oil if necessary. Cook the onion with a pinch of salt over low to medium heat until it softens (1-2 mins). Transfer it to the large mixing bowl.- Add more oil if necessary. Cook the carrots with a pinch of salt over medium heat until it softens (1-2 mins). Transfer it to the large mixing bowl.- Add more oil if necessary. Cook the red capsicum with a pinch of salt over low to medium heat until it softens (1-2 mins). Transfer it to the large mixing bowl.- Add more oil if necessary. Pour in the marinated mushroom (incl. the residue sauce from the bowl) and stir fry until it is cooked (1-2 mins) over low to medium heat. Transfer it to the large mixing bowl.- Add more oil if necessary. Pour in the marinated meat and stir fry until it is cooked (2-3 mins) over medium heat. Transfer it to the large mixing bowl.- Add more oil if necessary. Stir fry the marinated noodles until the noodles are well coated with the sauce (2-3 mins) over low to medium heat. Transfer it to the large mixing bowl.
- Thinly slice the egg white and egg yolk like match sticks. Add them into the large mixing bowl as used above.
- Add the rest of the "finishing touch" ingredients - sesame oil and sesame seeds in the large mixing bowl and mix them gently and evenly with your hands. (Watch your hands, as the ingredients, particularly the noodles might be still hot. You can also use a salad server to mix initially then mix with your hands once it cools down enough.) Serve.
KOREAN ZUCCHINI NOODLES RECIPE (JAPCHAE)
The recipe looks long, but in reality, this is a very simple, fast recipe that cooks in 10 minutes. I detail every step so that you can have visual clues to prevent overcooking. Beef: I like using lean sirloin, sliced very thinly. You can use pre-sliced steak that the butcher sells for cheesesteak sandwiches. For a shortcut, you can use ground beef too. Onion: Make sure you slice the onions very thin. They'll cook the same time as the beef, so if your onion is very thick, they won't cook through as well.

- In a small bowl, whisk together the soy sauce, honey and sesame oil. In a large bowl, combine the beef and the onions. Pour in just 1/3 of the soy/honey/sesame oil mixture (and reserve the rest of the sauce for later). Set beef/onions aside to marinate on the counter while you prepare the rest of recipe.
- Using a spiralizer on "spaghetti" setting (about 1/8-inch), spiralize the zucchini. Cut the zucchini noodle strands into easy-to-eat lengths, then set zucchini aside. Spiralize the carrots using the same setting. Cut carrot strands into 2" lengths to make it easier to stir fry. Gather all the remaining ingredients and have them nearby the stove for easy access. The rest of this recipe only takes 10 minutes!

Steps:
- Mix together the seasoning for the beef. Add the beef and mix well. Let sit to marinate.
- Heat 1 tsp Sesame oil in skillet. Add the beaten eggs Swirl to make it a thin layer. Cook 2 minutes on one side and then flip and cook 2 more minutes until set. Roll up and transfer to cutting board and cut into strips.
- Add more oil to same pan and add the onion, shiitake mushrooms, carrot and bell pepper. Cook until softened. Add the beef and cook until all moisture has evaporated. Remove from pan and set aside.
- Bring a pot of water to a boil. Add the spinach and cook about 15 seconds. With a slotted spoon remove the spinach and place in a bowl. Mix the spinach with the spinach seasonings.
- In the same water cook the glass noodles for about 6 minutes. Drain the noodles and mix the sauce ingredients together and pour over the noodles. Add the beef, eggs, and vegetables to the noodles and cook until warmed through.
