GRILLED TEQUILA GARLIC LIME FLANK STEAK

Number Of Ingredients 17

1 cup roughly chopped garlic (about 3 bulbs)
3/4 cup freshly squeezed lime juice (about 8 large limes)
1/2 cup clear tequila
1/4 cup soy sauce
1 bunch roughly chopped fresh cilantro, leaves and stems
1 jalapeno pepper, seeded and diced
1 serrano pepper, seeded and diced
1 teaspoon cumin powder
1 tablespoon freshly cracked black pepper
1 1/2 to 2 pounds flank steak
12 corn tortillas, wrapped in foil
1/2 cup chopped fresh cilantro
1 bunch radishes, cleaned, ends cut and sliced
1/3 cup grated queso fresco cheese
2 ripe avocados, seeded and sliced
3 vine ripened tomatoes, sliced in wedges
Hot sauce, for serving

Steps:

  • Combine the garlic, lime juice, tequila, soy sauce, cilantro, peppers, cumin and black pepper in a resealable plastic gallon bag. Add the steak and let marinate in the refrigerator for 2 hours. Remove from the refrigerator, and let marinate at room temperature another 30 to 45 minutes.
  • Prepare a grill to medium-high heat. Remove the steak from the marinade, reserving the marinade. Put the marinade in small saucepot and bring to a boil. Then strain and reserve.
  • Put the tortillas on the corner of the grill and flip the package a few times to heat through while the steak is cooking
  • Place the steak on the grill. Cook for 4 minutes, turn 180 degrees, and cook for 3 minutes more (to create cross grill marks). Flip over and finish cooking for 3 to 5 minutes, depending on desired doneness. Remove from the grill to a cutting board and let rest, lightly covered, for 5 minutes.
  • Slice against the grain, and serve immediately with the reserved marinade, garnishes, tortillas and hot sauce.

1 cup tequila
1 (6 ounce) can tomato paste
1/2 cup lime juice
1/4 cup honey
2 tablespoons garlic, minced
1 teaspoon liquid smoke, hickory flavored
2 teaspoons fresh cilantro, chopped finely
1 teaspoon ancho chili, crushed

Steps:

  • In medium saucepan, add all ingredients and bring to a slow boil over medium-high heat on stovetop, stirring frequently.
  • Turn heat down to low and simmer uncovered until thickened slightly, approximately 20 minutes. Stir occasionally.
  • Use as a wet sauce for last 15 minutes of grilling for chicken or pork roasts.

1 pound sole fillets, skinned
Sea salt
4 tablespoons olive oil
4 flour tortillas, grilled
4 large iceberg lettuce leaves
1 (2 pound) lobster, boiled, meat removed and chopped
2 tablespoons fresh epazote, chopped (fresh cilantro may be substituted)
2 tablespoons serranos, minced
1 Roma tomatoes, sliced into rings
1/2 cup scallions, cut thin on bias
1 1/2 cups Tequila-Lime Salsa, recipe follows
2 ounces tequila
1/2 ear corn, grilled and kernels cut from cob
1 avocado, diced
3 limes, juiced
1/2 cup tomatoes, diced
1/4 cup white onions, diced
1/2 jalapeno, seeds removed and minced
1 tablespoon cilantro, chopped
Sea salt

Steps:

  • Prepare an outdoor grill on medium to high heat.
  • Season the sole fillets with the sea salt and brush the fillets with olive oil. Grill each fillet until it begins to flake. Remove from the grill.
  • Lay out each grilled tortilla. Place each leaf of iceberg on top of the tortilla. Layer the grilled sole on next. Place the cooked lobster meat on each taco. Then sprinkle on the epazote and serranos over each taco. Add tomato slices and scallions in layers. Spoon the Tequila-Lime Salsa over each taco. Fold the leaves and tortilla around the filling and serve.
  • In a mixing bowl, combine all of the ingredients. Season with the salt. Refrigerate 30 minutes before use.
  • Yield: about 3 cups of salsa

TEQUILA BBQ SPARE RIBS

Two 4-pound slabs pork spare ribs, St. Louis style-cut
2 tablespoons ground cumin
2 tablespoons granulated garlic
2 tablespoons onion powder
2 tablespoons paprika
2 tablespoons kosher salt
2 teaspoons ground black pepper
1 teaspoon ancho chile powder
Tequila BBQ sauce, for serving, recipe follows
1 small California/New Mexico dried chile
One 6-ounce can tomato paste
1 cup packed light brown sugar
1/2 cup white tequila
1/4 cup lime juice
1 tablespoon minced fresh garlic
1 tablespoon molasses
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 275 degrees F.
  • Begin by trimming the ribs of any excess fat or sinew. Remove the thin membrane from the back side of the ribs and discard. Make the rub by combining the cumin, garlic, onion powder, paprika, salt, pepper and ancho chile powder together in a mixing bowl.
  • Set a few large sheets of foil out (one set for each slab). Place 1 rack on each sheet and divide the dry rub between each slab. Rub the mixture into the ribs on both sides, and then fold the foil over to form a sealed pouch around each rack. At this stage make sure the racks are meat-side down. Place each pouch on a roasting tray and bake in the oven for 2 hours. After 2 hours, open up the foil and peel back so the ribs are exposed. Carefully turn the meat over so the meat side is on top, and then cook for 1 1/2 more hours with the open foil. When done, the ribs will be tender and the meat will have shrunk back from the bones. Finish under the broiler to add more color, 1 to 2 minutes.
  • Serve the ribs with Tequila BBQ Sauce.
  • Begin by placing the dried chile in a bowl with 1/4 cup hot water to rehydrate. In a medium saucepan, add the tomato paste, light brown sugar, tequila, lime juice, garlic and molasses. Stir well and bring to a gentle simmer. Add in the chile and soaking water, season with salt and pepper and simmer until the flavors meld together, 2 to 3 minutes. Process with a blender until smooth and serve with the ribs as a dipping sauce.

1/2 cup white tequila
2 tablespoons freshly squeezed lime juice
2 tablespoons minced shallots
1 teaspoon minced garlic
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
3 turns freshly ground black pepper
1/4 cup heavy cream
8 tablespoons unsalted butter, cut up, at room temperature (1 stick)
Essence, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately.
  • Remove the rellenos from the oven. Spoon 1/4 cup of the sauce on each plate and place the rellenos directly on top. Garnish with the tortilla strips and the cilantro sprigs. Sprinkle Essence on the rim.
  • Combine all ingredients thoroughly.

1/2 cup fresh lime juice
1/2 cup chopped fresh cilantro leaves and stems, plus more chopped leaves, for serving

1/3 cup canola oil
1 tablespoon tequila
2 teaspoons kosher salt
1/2 teaspoon crushed red pepper flakes
2 cloves garlic, chopped
Freshly ground black pepper
3 to 4 boneless, skinless chicken breasts, cut into twenty-four 1-inch pieces
2 zucchini, cut into 1/2-inch rounds
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces

Steps:

  • Special equipment: 6 wooden skewers
  • In a large ziptop bag, add the lime juice, cilantro, oil, tequila, salt, red pepper flakes, garlic and some black pepper. Mix together and then add the chicken. Let the chicken marinate for 2 hours. During the last 20 minutes, soak the wooden skewers in water.
  • Preheat a grill to medium heat.
  • Remove the chicken from the marinade and pat dry (discard the marinade). Alternate threading the chicken, zucchini and bell peppers on each skewer. Cook the kabobs, turning after grill marks form, until the chicken is cooked through and the vegetables are charred at the edges, 12 to 15 minutes. Sprinkle with the remaining chopped cilantro before serving.

3 tablespoons olive oil
3 tablespoons tequila
1 tablespoon lime zest, from about 2 limes
4 cloves garlic, minced
1¼ teaspoons ground ancho chili pepper
½ teaspoon ground coriander
¼ teaspoon dried oregano
1¼ teaspoons salt
½ teaspoon freshly ground black pepper
2 teaspoons honey
4 boneless skinless chicken breasts (or about 2 pounds), pounded to an even ½-inch thickness
1 lime, sliced into wedges, for serving (optional)

Steps:

  • Combine all of the ingredients except for the chicken breasts in a 1-gallon freezer bag. Close the bag and squish the marinade around to mix. Add the chicken breasts and massage the marinade into the meat until evenly coated. Seal the bag and place it in a bowl in the refrigerator (the bowl protects against leakage); marinate for at least 6 hours or overnight.
  • Clean the grill and preheat to high. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. (Alternatively, you can spray the grates with a non-flammable cooking spray.) Place the chicken breasts on the grill and spoon any remaining marinade from the bag over top. Grill, covered, for 2 to 3 minutes per side (turning only once). Serve immediately with lime wedges.

1/4 c soy sauce
1/4 c tequila or margarita mix
2 or 3 tsp garlic cloves pressed or 2 tsp garlic powder
2 tsp onion powder or 1/2 small onion minced
1/2 c brown sugar light or dark
1/2 tsp adobo powder
1 tsp cayenne pepper
juice from 1 lime
1/4 c apple vodka or apple juice or pineapple juice
1 tsp lime flavor kool-aid powder
1 c honey
1/4 tsp ginger powder

  • 1. Mix all ingredients and let sit about half an hour.

2 tablespoons canola oil
1/4 cup diced green chilis
1 jalapeno pepper, minced
1/2 cup pickled cactus pieces, coarsely chopped (nopalitos)
1/4 cup minced onion
3 ounces tequila
1 tablespoon lime juice
1/2 cup orange juice
2 tablespoons neufchatel cheese
1 tablespoon egg substitute
1 teaspoon turbinado sugar
1/2 teaspoon salt

Steps:

  • Heat a skillet over medium high heat.
  • Add enough canola oil to coat, then add chiles, jalapeno, cactus, and onion.
  • Saute until onion starts to become transparent.
  • Turn off heat.
  • In a blender, combine tequila, lime juice, orange juice, cheese, egg substitute, sugar, and salt.
  • Blend until smooth.
  • Add blended mixture to skillet and reheat over low flame, stirring constantly.
  • Simmer (continuing to stir) until juice starts to thicken.
  • Serve over meat of your choice.
