ROASTED TURKEY BREAST WITH PEACH ROSEMARY GLAZE



Roasted Turkey Breast with Peach Rosemary Glaze image

2 cups apple cider, plus 2 tablespoons
1/4 cup salt, plus more for turkey
3 to 5 sprigs thyme
3 sprigs rosemary plus 1 teaspoon chopped
1 (3 3/4-pound) boneless turkey breast with skin
1/2 cup onion, finely chopped
1 tablespoon olive oil, plus more for turkey
Freshly ground black pepper
1 (10-ounce) bag frozen peeled and sliced peaches, chopped
2 tablespoons honey
1 teaspoon Worcestershire sauce
1 tablespoon brown sugar

Steps:

  • In a large bowl, whisk together 2 cups apple cider, salt, thyme and rosemary. Add turkey breast and enough water to cover the bird. Cover and let brine in the refrigerator 2 hours.
  • Preheat oven to 425 degrees F.
  • In a small saucepan, saute onions in oil until softened. Add peaches, honey, Worcestershire sauce, brown sugar and remaining 2 tablespoons apple cider. Bring to a boil. Lower to a simmer and cook until peaches break down and glaze thickens, about 12 minutes.
  • Remove turkey from brine and pat dry with paper towels. Brush with oil and season with pepper. Place turkey in a roasting pan. Cook 15 minutes until skin begins to turn golden. Reduce the oven temperature to 350 degrees F and brush the top generously with the glaze. Continue cooking until an instant-read thermometer inserted in the thickest part of the breast reaches an internal temperature of 165 degrees F, about 45 minutes. Let the turkey rest at least 10 minutes. Its temperature will continue to rise.

JALAPEñO-PEACH TURKEY BREAST

FOR THE PASTE:
1 tablespoon black peppercorn
1 tablespoon cumin seeds
1 tablespoon chili powder
1 tablespoon dried oregano
1 tablespoon dried sage
1 teaspoon granulated garlic
1/4 cup fresh lime juice
2 tablespoons extra-virgin olive oil
4 to 5 pounds turkeys breast (with bone), split in half
FOR THE JAM:
6 firm ripe peaches, peeled and finely chopped (about 4 cups)
1 cup peach preserves
2/3 cup peach nectar
1/4 cup granulated sugar
2 tablespoons cider vinegar
4 jalapeño peppers, stemmed, seeded, and minced
1 tablespoon chopped fresh cilantro
mesquite chunks or chips soaked in water for at least 30 minutes
vegetable oil
kosher salt

Steps:

  • TO MAKE THE PASTE: Crush the peppercorns and cumin seeds, then combine with the remaining paste ingredients. Rinse the turkey under cold water and pat dry with paper towels. Coat with the paste. Place in a large, resealable plastic bag, press the air out of the bag, and seal tightly. Refrigerate for 8 to 24 hours. TO MAKE THE JAM: In a heavy-bottomed saucepan combine the peaches, preserves, juice, sugar, and vinegar. Bring to a boil, then reduce heat to medium-low and continue cooking, stirring often, until the peaches are cooked and the liquid has thickened, 30 to 40 minutes. Allow to cool for 10 minutes, then pour into a food processor and process until smooth. Add the jalapeños and cilantro. Cool to room temperature, cover, and refrigerate. (The jam may be made up to 3 days in advance. Bring to room temperature before serving.) Follow the grill's instructions for using wood chunks. Lightly brush or spray the turkey with vegetable oil and season with salt. Grill, skin side up, over Indirect Medium heat until the internal temperature reaches 170°F, 1 to 1 1/2 hours. 1 bone-in whole turkey breast (5 to 7 lb), thawed if frozen
3 cloves garlic
1 jalapeño chile, cut in half, seeded
3 teaspoons chili powder
2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons olive oil
6 tablespoons gold tequila
6 tablespoons lime juice
1/4 cup orange juice
1/4 cup chicken broth
1 lime, cut into wedges

Steps:

  • Heat oven to 325°F. Place turkey breast, skin side up, in shallow roasting pan.
  • In mini food processor, place garlic and jalapeño. Cover; process until finely chopped. Add chili powder, salt, pepper, oil, 2 tablespoons of the tequila and 2 tablespoons of the lime juice. Cover; process, using on-and-off pulses, until smooth.
  • Loosen turkey skin, using fingers or spoon; rub garlic mixture under and over turkey skin. Insert ovenproof meat thermometer so tip is in thickest part of breast and does not touch bone.
  • Pour orange juice, broth and remaining 1/4 cup each tequila and lime juice into roasting pan.
  • Roast uncovered 2 hours to 2 hours 30 minutes or until thermometer reads at least 165°F. Place turkey on warm platter; cover with foil. Let stand 15 minutes before carving. Spoon pan juices over turkey; garnish with lime wedges.

2 whole chicken breasts with skin and bones (about 2 pounds total), halved
1 tablespoon olive oil
3 firm-ripe peaches, quartered
3 medium onions, quartered lengthwise
6 jalapeño chilies, quartered lengthwise and seeded (wear rubber gloves)
6 large garlic cloves
1 lemon, quartered
Accompaniment: basmati rice

Steps:

  • Preheat oven to 450° F.
  • Season chicken breasts with salt and pepper and arrange, skin sides up, in an 18- by 11 1/2-inch roasting pan. Drizzle chicken with oil and roast 20 minutes. Scatter peaches, onions, jalapeños, garlic, and lemon over and around chicken.
  • Reduce temperature to 375° F. and roast chicken, covered with foil, 30 minutes more. Remove foil and roast chicken, basting occasionally with pan juices, until peaches and onions are soft, about 30 minutes more. Transfer chicken mixture to a platter, spooning any pan juices over it.
  • Serve chicken with rice.
