SPICY CHIPOTLE SHRIMP WITH JALAPENO GREEN RICE



Spicy Chipotle Shrimp with Jalapeno Green Rice image

2 cups medium-grain rice
1 1/2 cups chicken broth
1 cup loosely packed fresh cilantro, chopped
1 small onion, chopped
3 tablespoons Dijon mustard
2 tablespoons olive oil
1 to 2 jalapenos, seeded and chopped
2 cloves garlic, chopped
Salt
Zest of 1 lime
One 15-ounce can crushed fire-roasted tomatoes
2 chipotle chiles in adobo sauce
2 tablespoons olive oil
3 cloves garlic
Salt
1 pound medium shrimp, peeled and deveined
Chopped fresh cilantro, for sprinkling

Steps:

  • For the rice: Combine the rice and enough cold water to cover by 1 inch; let soak 30 minutes.
  • Meanwhile, in a medium saucepan, stir together the chicken broth, cilantro, onion, mustard, oil, jalapeno(s), garlic, 3/4 teaspoon salt and 3/4 cup water; bring to a boil over medium-high heat. Using an immersion blender, blend until finely chopped.
  • Drain the rice. Return the broth mixture to a boil and stir in the rice. Cover tightly and simmer over medium-low heat until the rice is tender, about 15 minutes. Remove the pan from the heat and let the rice stand, covered, 5 minutes. Add the lime zest and fluff with a fork.
  • For the shrimp: Meanwhile, combine the tomatoes, chipotles, oil, garlic and 1/2 cup water in a blender and puree until smooth; season with about 1 teaspoon salt. Transfer the tomato mixture to a large skillet and cook until heated, about 5 minutes. Add the shrimp and simmer, stirring occasionally, until cooked through, about 4 minutes. Serve with the rice and sprinkle with cilantro.

2 tablespoons butter
1 jalapeno pepper, seeded and minced
1/2 yellow onion, finely chopped
1/2 green bell pepper, chopped
Kosher salt
1 clove garlic, minced
1 1/2 cups white rice, uncooked
1/2 cup chicken stock
Zest and juice of 1 lime

Steps:

  • Melt the butter in a large sauce pan. Then add the jalapeno, onions and green peppers, sprinkle with salt and cook over medium heat until tender, about 5 minutes. Add the garlic and stir. Add the rice and cook over medium-high heat, stirring frequently, until the rice is golden, about 5 minutes. Turn the heat up to high and add 2 cups water and the stock. Bring to a boil, cover tightly, and reduce the heat to a simmer for 20 minutes. Remove from the heat and let rest, still covered, 3 minutes longer. Sprinkle with the lime zest and juice before serving.

4 ounces cream cheese, softened
¼ cup shredded Mexican blend cheese
1 ½ teaspoons taco seasoning mix
1 teaspoon chopped fresh cilantro
12 large jalapeno peppers, halved lengthwise, seeds and membranes removed
1 cup panko bread crumbs
1 tablespoon melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Prepare rice according to package directions. Allow to cool slightly.
  • Mix rice, cream cheese, shredded cheese, taco seasoning, and cilantro together in a bowl. Combine thoroughly.
  • Fill each jalapeno half with about a teaspoon of rice mixture, depending on size of jalapeno. Arrange filled jalapeno halves on prepared baking sheet.
  • Mix panko bread crumbs and melted butter together in a small bowl. Top filled jalapenos with crumb mixture.
  • Bake poppers in preheated oven until lightly golden on top, about 15 to 20 minutes.

1/2 bell pepper, red or green, finely chopped (optional)
1 can(s) whole kernel corn or mexicorn, drained
1 can(s) creamed corn
2 Tbsp jalapeno peppers, finely chopped with seeds, more or less to your taste
1 1/2 - 2 c velveeta cheese, regular or mexican, cubed
2 1/2 - 3 c white rice, cooked

Steps:

  • 1. Option 1: Preheat oven to 350* F. In a large baking dish combine all ingredients and mix well.
  • 2. Bake for 35 minutes or until heated through. Stir well and serve.
  • 3. Option 2: In large microwave safe baking dish with lid, combine all ingredients together. Cover and cook on HI for 5 minutes. Stir, cover and cook on HI for another 5 minutes. Stir again, cover and cook on HI for 5 minutes more. If you want it creamier you can add a little milk before cooking the last 5 minutes.
  • 4. Remove from microwave, keep covered and let sit for 5 minutes. Enjoy! *TIPS: You can also add crushed red pepper flakes instead of jalapeno peppers if desired.

1 1/2 cups long-grain white rice
2 cups water
1 1/2 teaspoons kosher salt
1 cup fresh cilantro, loosely packed
1/2 cup white onion, chopped
1/4 cup scallion, chopped
1 1/2 tablespoons fresh jalapenos, including seeds, chopped
1 1/2 tablespoons fresh lime juice
1 teaspoon olive oil

Steps:

  • Bring rice, water, and 1 t salt to a boil in a 1 1/2-2 quart heavy saucepan, then reduce heat to low and cover pan with a tight, fitting lid. Cook 20 minutes.
  • Remove from heat and let stand, covered, 5 minutes. Remove lid and fluff rice with a fork.
  • While rice is cooking, puree cilantro, onion, scallion, jalapeno, lime juice, olive oil and remaining 1/2 t salt in blender( if necessary add 1 to 2 T water to facilitate blending).
  • Add mixture to rice and stir with a fork until combined well.

1/4 cup chopped onion
1/2 cup vegetable oil
4 cups water
4 tablespoons butter or 4 tablespoons margarine
2 cups rice
3 -4 jalapenos (whole)
1 lb American cheese, cubed

Steps:

  • Combine onion, oil, water, butter and rice in large pot.
  • Add whole jalapenos to pot.
  • Bring to a boil.
  • Cover and simmer over medium-low heat until rice is tender. This can take about 30 minutes.
  • Carefully remove the jalapenos from the rice, deseed them, chop them and return to the rice. Mix well.
  • Add the cheese to the pot and mix well. Cheese will melt upon mixing.
  • Serve and enjoy!

1 small onion, chopped
3 garlic cloves, minced
1 cup uncooked long grain rice
2 jalapeno peppers, finely chopped seeds removed
2 cups chicken broth or 2 cups vegetable broth
3/4 teaspoon cumin
salt and pepper
2 tablespoons fresh snipped cilantro
shredded cheese (Mexican, queso, cheddar, etc.) (optional)

Steps:

  • In a large saucepan heat the oil on medium-high heat. Saute onions until golden brown. About a minute before completing the onions, add garlic and jalapenos; saute another minute.
  • Add in uncooked rice, broth, cumin, salt and pepper; bring to a boil. Reduce the heat and cover the saucepan. Simmer on low heat for 20-25 minutes or until liquid is gone and rice is tender and fluffy. Remove from heat. The longer you leave on the lid, the fluffier the rice will become. Add minced cilantro and stir gently.
  • Top each serving with cheese, if desired.

1 cup long grain white rice
2 1/2 cups chicken broth
1/4 cup tomato paste
1/8 teaspoon hot sauce, to taste
2 -3 tablespoons bacon grease
1 onion, chopped fine
2 jalapenos, seeded and chopped fine
2 garlic cloves, minced

Steps:

  • NOTE: This step is important as it removes the starch from the rice so it will not stick. --- Place rice in a fine mesh strainer and rinse under cold running water until water runs clear- about 1-2 minutes, stirring with your (clean) fingers or shaking rice around in the strainer. Shake afterwards also to remove excess water/moisture. Set aside.
  • In a large measuring cup or bowl, whisk the broth and tomato paste (and hot sauce if using) to incorporate. Set aside.
  • Heat grease/oil over medium high heat in a Dutch oven (or heavy pot). Add rice and stir until rice is translucent, about 3-5 minutes.
  • Add the onion, jalapeno, and garlic. Saute' for 1-2 minutes until onion is translucent. Stir the broth/paste mixture into the rice. Increase heat to medium high, and bring to a boil.
  • Once it begins to boil, give a final stir and reduce heat to low, cover pot and simmer 20 minutes.DO NOT REMOVE LID. Remove from heat and let sit for an additional 5 minutes STILL covered.
  • Remove lid and stir, fluffing rice. NOTE: If you have little browned crispy rice at the bottom of the pan (not burnt), this is considered a delicacy in Mexico, so don't fight over it!

This is a super-easy, tasty, flavorful, low fat side dish that my husband & I concocted to go with our tequila lime marinated chicken (Lowry's and Super Target in the US carry a yummy 30 minute marinade). I've seen this posted with sour cream and/or cheese added, but we were going for low-fat here. Adding these would cut the heat of the peppers, but by removing many of the seeds we were able to make this just spicy enough while keeping it low fat.
