JAN'S JALAPENO POPPER PIZZA

8 slices bacon, cut into 1-inch pieces
¾ cup chopped onion
2 cloves garlic, chopped
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon ground black pepper
1 (8 ounce) package reduced-fat cream cheese, cut into cubes
¼ cup sour cream
1 prepared 16-inch pizza dough pastry
1 cup shredded mozzarella cheese, or more to taste
½ cup shredded reduced-fat Cheddar cheese
4 jalapeno peppers, sliced into thin rings
1 tablespoon dried parsley flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon with a slotted spoon to drain on paper towels, reserving drippings in the pan.
  • Saute onion in bacon drippings until translucent, 5 to 7 minutes. Add garlic; continue to saute until garlic is golden, 2 to 3 minutes. Season the onion mixture with cumin, oregano, and black pepper. Stir cream cheese and sour cream into the onion mixture until smooth and spreadable.
  • Spread the cream cheese mixture evenly over the pizza dough; top with mozzarella and Cheddar cheeses. Arrange bacon and jalapeno pepper rings over the cheese layer. Sprinkle parsley over the entire pizza.
  • Bake in preheated oven until crust is firm and crispy and the cheese is browned and bubbly, about 30 minutes.

1/4 cup milk
3 tablespoons finely chopped fresh jalapeño chiles
1/2 teaspoon ground cumin
20 Totino's® Pizza Rolls™ frozen pepperoni or cheese pizza snacks

Steps:

  • In small bowl, beat cream cheese and milk with whisk or fork. Stir in jalapeño chiles and cumin. Cover; refrigerate 1 hour to blend flavors.
  • Bake pizza snacks as directed on package. Serve with dip.

I came up with this idea one day while eating a calzone with a side of Jalapeno Poppers. I thought a jalapeno popper pizza would be awesome. I came home and searched online for a recipe like the one I had in mind and found recipes for jalapeno popper pizzas, but none quite like my idea. We tried it this evening and found it to be delicious and EASY!! This would also make a great appetizer sliced into small squares. Can't wait to try this with different meats, like sausage or ham!

1 (8 ounce) package cream cheese, softened
1 (1 ounce) package ranch dressing mix
1 (12 inch) pre-baked pizza crust
3 fresh jalapeno pepper, seeded and sliced
1 (3 ounce) jar cooked real bacon pieces (such as Hormel™)
1 cup shredded Mexican cheese blend
1 tablespoon butter, melted
¾ cup seasoned bread crumbs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Stir together the softened cream cheese and ranch dressing mix in a bowl until smooth. Spread the mixture on the pre-baked crust. Sprinkle the jalapeno slices and bacon on top of the cream cheese mixture; then top with the shredded cheese.
  • Combine the melted butter and seasoned bread crumbs. Sprinkle the mixture over the top of the pizza. Bake in preheated oven until the bread crumbs are nicely browned and the cheese has melted, about 15 minutes.

1 pound refrigerated pizza dough
Coarse cornmeal, for dusting
4 ounces cream cheese, at room temperature
1 cup shredded pepper jack cheese (about 4 ounces)
Kosher salt
1/2 cup spicy marinara sauce
1/2 cup shredded part-skim mozzarella cheese (about 2 ounces)
Extra-virgin olive oil, for brushing
2 jalapeno peppers (red and/or green), thinly sliced

Steps:

  • Put a pizza stone or inverted baking sheet on the middle oven rack and preheat to 425 degrees F for 1 hour. Meanwhile, bring the pizza dough to room temperature. Sprinkle a 15-inch round pizza pan with cornmeal.
  • Mix the cream cheese, 1/2 cup pepper jack and 1/4 teaspoon salt in a medium bowl until combined.
  • Stretch the dough almost to the edge of the pizza pan, pressing with your fingertips (lightly oil your hands if the dough is too sticky). Spoon the cream cheese mixture in a thin border around the edge of the dough, about 1/2 inch from the edge. Fold the edge of the dough over the cream cheese mixture and pinch to seal.
  • Put the pan on the hot stone and bake until the crust is lightly golden, 5 to 8 minutes. Remove from the oven, spread the sauce in the middle and top with the mozzarella and the remaining 1/2 cup pepper jack. Brush the crust with olive oil and top with the jalapeno slices. Bake until the crust is browned and crisp and the cheese is bubbling, 8 to 12 more minutes.

A great recipe for all of those jalapeno popper lovers out there. I got creative in the kitchen today and this is what we had for lunch. My hubby loved it, hope you enjoy it as much as we did.

1 store bought pizza crust
4 oz cream cheese; sliced
1/2 cup mozzarella
jalapeno peppers; sliced
WHITE SAUCE
2 tbsp butter
2 tbsp all-purpose flour
1 cup milk
1 tsp garlic powder

Steps:

  • 1. Preheat oven and follow directions on pizza dough. (Most will have you cook the dough for about 5 minutes before adding the toppings). Add white sauce, mozz, cream cheese, and jalapenos (in that order) and finish baking time according to dough package. Remove, cool, and serve.
  • 2. For the white sauce: In a small saucepan over medium heat, melt butter and add garlic powder. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more milk depending on desired consistency. (Use as much of this as you like on your pizza, I usually have some left over).

1 (14 ounce) package prepared pizza crust (or homemade crust and many good recipes on food.com)
olive oil or olive oil flavored cooking spray
4 -6 slices bacon, chopped
2 jalapenos, sliced (to taste)
1 -2 teaspoon olive oil
1 shallot, sliced (can sub 1/2 white onion)
6 ounces cream cheese, softened
1 1/2 cups grated monterey jack cheese (or more to taste)

Steps:

  • Preheat the oven to 475 degrees. Lightly coat baking sheet or pizza pan with olive oil or cookng spray.
  • Heat small skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside. Note: Can cook bacon slices whole and then crumble.).
  • In small bowl, combine jalapenos and shallot with 1-2 teaspoons olive oil.
  • Roll out pizza dough into a 10-inch-diameter round. Transfer to prepared baking sheet or pizza pan. Bake the crust 5-8 minutes then remove from oven.
  • Spread the cream cheese evenly over top of pizza crust, leaving a 1-inch border. Top with monterey jack, jalapenos, shallots and bacon.
  • Bake for 15-20 minutes, or until the crust is crisp and brown on the bottom and the cheese is melted on top.

JALAPENO POPPER PIZZA

This tasted just like the poppers I make only with a crust! NOTE: Prep time does not include cooking bacon or making dough from scratch.

- pizza dough, see note below
8 oz - cream cheese, room temperature
4 oz - cheddar, grated
4 oz - monterey jack cheese, grated
4 oz - cotija cheese, crumbled
1/2 - red bell pepper, diced finely
2 tbsp - sweet onion
2-3 - fresh jalapenos, sliced into rings
2-3 slices - bacon, cooked and crumbled

Steps:

  • I recommend using or rolling your dough out thinly. You could make two pizza's with this amount of cheese, but I wanted to really get a popper flavor, so I used a LOT of cheese on just one pizza.
  • Bring cream cheese to room temp and place in mixing bowl with the other cheeses, diced red bell pepper and diced onion. Mix till well combined. NOTE: You can add diced jalapeno to the cheese if desired. Also you can use any white melting cheese instead of Monterrey Jack.
  • Place dough on a pizza pan or in a cast iron skillet. Spread cheese mixture out over dough. Add sliced (rings) of fresh jalapeno and crumbled bacon on top.
  • Bake till cheese is melted and bubbly. I used a 12" cast iron skillet, baked at 425º for 30 min. Cool slightly then slice and enjoy.
