I used to saute onions and fresh jalapenos to top our grilled cheeseburgers. Not any more! I mix the chopped fresh jalapenos, onions and shredded cheddar right into the hamburger patties. Oh, my. To complete the flavor attack you could add slices of crispy bacon to the pile....your choice!

1/2 cup fresh jalapeno pepper, chopped
1 1/2 cups mild cheddar cheese, shredded
1/2 cup red onion
1 teaspoon season salt
1/2 teaspoon garlic salt
1/2 teaspoon pepper

Steps:

  • Finely chop the red onions and jalapenos. Add all of the ingredients to a bowl and mix well. Form hamburger patties and grill like normal.

20 ounces ground turkey breast, extra lean
1/4 cup dry breadcrumbs, unseasoned
1 egg
2 green onions, finely chopped
2 teaspoons garlic, minced (store bought)
2 -3 tablespoons barbecue sauce
1 teaspoon Mrs. Dash seasoning mix
1/2 teaspoon black pepper, coursely ground
5 tablespoons fat free shredded cheddar cheese
5 teaspoons diced jalapenos (or Giuliano Jalapeno Spread)

Steps:

  • In a large bowl, mix together the first 8 ingredients (turkey - pepper). If the turkey mixture is too wet, you can add in some more bread crumbs.
  • Lay out wax paper for forming the patties. Scoop mixture out by 1/4 cup then adjust if necessary so you have 10 equal sized mounds.
  • Form into 10 patties, with 5 of them being slightly larger than the others (to cover the filling).
  • On five of the patties, spread one tsp of the Giuliano Jalapeno Spread then top with shredded cheddar cheese.
  • Top with remaining 5 patties and press the edges to seal.
  • Patties will be piled up in the middle, so press in the middle to flatten.
  • Grill until cooked through (about 12-15 minutes).

1/2 cup finely chopped yellow onion
1/4 cup finely chopped fresh cilantro
2 garlic cloves, finely chopped
2 teaspoons chopped jalapenos
1 teaspoon ground cumin
1 teaspoon paprika
1/3 cup finely shredded cheddar cheese
kosher salt and freshly cracked black pepper
4 hamburger buns, toasted
sour cream
lettuce
red onion
guacamole
chipotle salsa

Steps:

  • Prepare an indoor or outdoor grill over medium heat.
  • Transfer the ground chicken to a medium bowl.
  • Add in the onion, cilantro, garlic, jalapeno, cumin, paprika, cheddar cheese, salt and freshly cracked black pepper. Using your hands, incorporate everything together. Make sure everything is evenly incorporated without over mixing the ground chicken.
  • Form the mixture into four 1/2"-thick patties. Grill burgers over medium heat until cooked through, 5-7 minutes per side.
  • Serve each patty in a burger bun topped with guacamole and sour cream and salsa if desired.

For the aioli:
2 tsp pureed chipotle in adobo (available in the Mexican aisle)
¼ cup barbecue sauce
¼ cup mayonnaise
For the burgers:
1 lb ground chicken breast
1 tsp oregano
1 tsp garlic powder
1 tsp cumin
¼ tsp smoked paprika (or regular paprika)
½ tsp salt
2 tbsp chopped candied jalapenos (or pickled jalapenos)
buns for serving
1 avocado for topping
1 tomato for topping
3 slices cheddar cheese

Steps:

  • To make the burgers, you'll need ground chicken breast. And, sure you could also make this recipe with regular ground chicken, ground turkey, or ground beef. It's up to you!
  • Chop the candied jalapenos. Add them to a bowl. Add the ground chicken breast as well as the spices.
  • With clean hands, toss the ground chicken gently until everything is mixed in. Don't over mix.
  • Form three burgers of equal size. You could make them into quarter pound burgers and make 4, but they'd be pretty small. If you're serving more than 2-3 people, I recommend buying extra ground chicken and upping the spices accordingly.
  • Combine the mayo, barbecue sauce, and chipotle in adobo to make the aioli.
  • Light the grill and let it get as hot as possible. Spray the grill with cooking spray.
  • Add the burgers. Cook for 5 minutes on high. Spray the burgers with cooking spray directly before flipping. Cook for another 5 minutes.
  • Because uncooked chicken is not a good idea, I use an instant meat thermometer before adding the cheese. This ensures that the center is cooked sufficiently.
  • Add the cheese and cook for 1 more minute. Toast the buns and remove the burgers from the grill.
  • Smash an avocado with some salt.
  • Slice a tomato.
  • Place some avocado on the bottom bun. Add a slice of tomato. Add the burger. Add some chipotle barbecue aioli and more candied jalapenos.

1 pound ground beef (grass fed preferred)
1 large jalapeno (thinly sliced with seeds)
1/2 cup cooked bacon pieces
1-2 ounces cheddar (grated)

Steps:

  • To form perfectly cooked patties, consider using a burger press.
  • Preheat grill or griddle to high heat. Divide ground beef equally into three portions. For each portion, take about 2/3 of it and form it into a very flat patty with sides (again, this is super easy if using the burger press). Divide the jalapeno, bacon pieces, and cheese into three equal portions. Add 1/2 of the toppings to the meat. With the remaining 1/3, form the meat into a thin circle and top patty, sealing all edges. The goal is to have only ground beef on the outside and all of the toppings in the middle.
  • Cook over a hot grill or griddle, 5-8 minutes per side, until done. Enjoy!
