SKILLET JACKPOT CASSEROLE

My mother use to make this as an oven casserole when I was a child. I decided to jazz it up a little bit and cook it on the stovetop to avoid heating up the oven during the summer. It's a quick after work dinner to make that will please adults and children.

1 box macaroni, cooked
1 can(s) tomato sauce (15 oz)
1 can(s) corn, drained
1 onions, yellow, medium, diced
1 lb ground beef
1 pkg taco seasoning mix
1 c cheese, shredded

Steps:

  • 1. Cook macaroni, rinse and set aside. Dice onion.
  • 2. In a non stick skillet, cook onion until translucent and add LEAN ground beef, cook until done. Drain.
  • 3. On medium heat, add tomato sauce (15 oz), drained corn, and half of sauce can of water to meat/onion mixture. Stir in taco seasoning and warm through.
  • 4. Add cooked macaroni to above mixture until desired ratio of macaroni to meat mixture, warm through.
  • 5. Add shredded cheese to top of meat/macaroni mixture and turn heat down to medium low until cheese melts. I used a jack & cheddar mix. Serve.

8 ounces rotini pasta, cooked and drained
1 lb lean ground beef
1/2 cup chopped onion
1 teaspoon seasoning salt
1 teaspoon chili powder
1 dash fresh ground black pepper
1 (10 3/4 ounce) can tomato soup
1/2 cup water
1 (15 ounce) can red kidney beans, rinsed and drained
1 1/2 cups grated cheddar cheese

Steps:

  • Spray a large skillet with cooking spray.
  • Saute onion in skillet until tender.
  • Add ground beef and cook until browned.
  • Add rest of ingredients except cheese.
  • Simmer until heated through.
  • Add grated cheese and heat through until cheese is melted.

1 pound ground beef
1/2 cup onion, chopped
1 can creamed corn
1 can tomato soup
1 1/2 cups water
1 can black olives, chopped
8 ounces egg noodles
1 1/2 cups American cheese, grated
2 teaspoons Worcestershire sauce

Steps:

  • Brown ground beef in Dutch oven.
  • Add chopped onion and saute with browned beef until transparent.
  • Add creamed corn, tomato soup and water to beef and onions; bring to a simmer.
  • Add noodles and bring to a boil.
  • Remove from heat; when cooled a bit, mix in the worcestershire sauce; the black olives; 1/2 of the cheese and season with pepper to taste.
  • Pour the mixture into a buttered 9X13 casserole dish; top withe the remaining cheese.
  • Bake in oven at 350 degrees for at least 45 minutes (until noodles are done).
  • NOTE: You could use as much as 2 total cups of cheese and Worcestershire can be adjusted to taste.

1 pound ground beef
1 tablespoon sugar
1/2 teaspoon garlic salt
2 (8-ounce) cans tomato sauce
2 tablespoons water
1 (4-ounce) package cream cheese, softened
1/2 cup milk
1 cup light sour cream
1 (8-ounce) package elbow macaroni, cooked according to package directions
2 cups grated Cheddar cheese

Steps:

  • Preheat oven to 350 degrees. In a large frying pan, brown ground beef until no longer pink. Drain if necessary. Add sugar, garlic salt, tomato sauce, and water to ground beef. Simmer for 5 minutes. In a small bowl, combine cream cheese, milk, and sour cream. In a greased 9 x 13-inch pan, layer half the cooked noodles, half the sauce and 1 cup cheese. Repeat layers. Bake 30 minutes.
