1 cup instant rice, uncooked
1/2 cup onion, chopped
1/4 cup nonfat milk
4 ounces light processed cheese, cubed (such as Velveeta Light)
2 tablespoons butter or 2 tablespoons margarine, softened
2 (10 ounce) packages frozen chopped broccoli, thawed and drained
1 (10 3/4 ounce) reduced-fat reduced-sodium condensed cream of mushroom soup

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients together.
  • Place in a 2 quart casserole dish.
  • Bake for 45 minutes.

2 cans (4 ounces each) chopped green chilies
1/2 teaspoon salt
3/4 pound Monterey Jack cheese, cut into 1/2-inch cubes
2 cups sour cream

Steps:

  • In a large bowl, combine all ingredients. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes or until heated through.

1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup butter, cubed
3 cups cooked long grain rice
2 cups shredded cheddar cheese
1 cup minced fresh parsley
1 cup whole milk
4 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon salt

Steps:

  • In a large saucepan, saute onion and garlic in butter until tender. Add remaining ingredients; mix well. Transfer to a greased shallow 1-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

Number Of Ingredients 9

2 cups water
1 cup long-grain rice
1 tablespoon bouillon
16 ounces sour cream
1 1/2 cups colby cheese, shredded
1 cup monterey jack cheese, shredded
4 ounces green chilies, chopped
1/2 cup red pepper, chopped
pepper, to taste

Steps:

  • Preheat oven to 350�°F.
  • In a medium saucepan combine water, rice and
  • bouillon. Bring to a boil, reduce heat, and simmer about 15 minutes until tender.
  • In a small bowl combine all ingredients, reserving 1/2 cup of the Colby cheese.
  • Spoon mixture into a greased 9x9-inch casserole dish, and bake for 25 minutes
  • Top with remaining cheese, and bake another 5 minutes to melt.
