Lots of shredded chicken plus onion, pepper and chiles mixed with a sauce that's a little sweet, a little spicy. Don't leave out the chocolate! Something a little different for dinner that looks quite nice with an easy lattice top.

1 teaspoon butter
2 cups chopped onions
1/2 cup chopped green bell pepper
1/3 cup diced seeded poblano chiles or 1 (4 1/2 ounce) can chopped green chilies, drained
1 small garlic clove, minced
1 1/2 teaspoons cumin seeds
1 teaspoon ground coriander
1/4 cup cider vinegar
4 cups shredded cooked chicken breasts (about 1 1/2 pounds)
2 tablespoons brown sugar
1 ounce unsweetened chocolate, grated
1 (12 ounce) bottle chili sauce
1 (10 1/2 ounce) can low sodium chicken broth
1 (11 1/2 ounce) can refrigerated cornbread twists dough

Steps:

  • Melt butter in a large nonstick skillet coated with cooking spray over medium-high heat.
  • Add onion, peppers and garlic and saute 5 minutes. Stir in cumin and coriander and cook 2 minutes.
  • Stir in vinegar, scraping skillet to loosen browned bits. Add the chicken and the next 4 ingredients and cook 15 minutes or until thick, stirring occasionally.
  • Spoon chicken mixture into 11x7 inch baking dish coated with cooking spray.
  • Unroll corn bread dough, separating into strips. Place strips in a lattice fashion over chicken mixture.
  • Bake at 375 degrees for 25 minutes or until golden brown; let stand 15 minutes before serving.

It's just plain fun for us and the kids will love to eat their dinner. It's a tiny bit fiddly but so much fun you won't mind at all. I have to admit that, my "doesn't like anything" DH loves it!

1 lb ground beef
1 medium onion, chopped
2 garlic cloves, pressed
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup ketchup
1 teaspoon Worcestershire sauce
1 (15 ounce) package refrigerated pie crusts
1 tablespoon prepared mustard
3 cups shredded monterey jack cheese, divided use
2 tablespoons water
1 large egg
red food coloring
yellow liquid food coloring

Steps:

  • Cook first 5 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain. Stir in ketchup and Worcestershire sauce; cool.
  • Unfold 1 piecrust, and place on a lightly greased baking sheet. Spread mustard evenly over crust. Stir together meat mixture and 2 cups cheese; spoon onto center of crust, leaving a 2-inch border.
  • Unfold remaining piecrust, and cut out a jack-o'-lantern face, reserving pastry cutouts to use as a stem. Place crust over meat mixture; crimp edges of crust, and fold under. Place stem on top of jack-o'-lantern face.
  • Whisk together 2 tablespoons water, egg, and 1 drop each of red and yellow food coloring; brush over crust.
  • Bake at 425*F (220*C) for 20 minutes; remove from oven, and brush again with egg mixture. Fill eyes, nose, and mouth with remaining 1 cup cheese. Bake 5 to 10 more minutes or until golden brown.
