CHEF JOHN'S HOMEMADE EGGNOG

Imagine a luxuriously textured bourbon-spiked custard being sipped through a thin layer of nutmeg-scented meringue. Based on Alton Brown's famous version, this eggnog is vastly superior to the store-bought product.

4 egg yolks
⅓ cup white sugar
2 cups whole milk
1 cup heavy cream
¾ teaspoon freshly grated nutmeg
2 fluid ounces bourbon whiskey, or more to taste
4 egg whites
1 tablespoon white sugar
1 pinch freshly grated nutmeg

Steps:

  • Place egg yolks in a saucepan. Whisk in sugar until well blended and creamy. Add milk and cream; whisk until blended. Place pan over medium heat; whisk frequently until mixture reaches a temperature of between 170 to 180 degrees F (75 to 80 degrees C) using an instant-read thermometer. Remove from heat. Stir in nutmeg and whiskey.
  • Chill pan in cold water until cool. Transfer mixture to a container (a large pitcher is ideal). Cover and refrigerate until thoroughly chilled, 2 to 3 hours.
  • Place egg whites in a bowl and whisk until soft peaks form. Add sugar and continue whisking until egg whites hold a firmer peak. Whisk egg whites into custard base until thoroughly blended. Refrigerate until chilled, about 30 minutes.
  • Whisk eggnog again just before serving and between each pour to ensure even distribution of the egg whites which tend to float to the top. Serve with a dusting of nutmeg.

1 ¼ cups white sugar
1 cup dark rum
1 cup bourbon
1 cup brandy
1 pinch salt
1 teaspoon vanilla extract
1 pinch ground nutmeg, or to taste
1 quart half-and-half
1 pint heavy whipping cream
5 eggs

Steps:

  • Mix sugar, rum, bourbon, brandy, salt, vanilla extract, and nutmeg in a blender on medium speed until combined. Transfer liquor mixture to a large bowl.
  • Mix half-and-half, cream, and eggs in the blender on low speed until combined. Stir egg-cream mixture into the liquor mixture.
  • Ladle eggnog mixture into the blender in batches; blend on low speed. Transfer blended eggnog to a punch bowl or pitcher. Refrigerate until cold, 1 to 2 hours.

IMHO this is the single best eggnog recipe I've ever had. I've had it with both cognac and rum, never with brandy or whisky, though I suspect Jack Daniels would be wonderful for this.

12 eggs, separated
1 cup sugar
3 pints half-and-half
1 teaspoon vanilla
1 tablespoon nutmeg
1/2 cup brandy or 1/2 cup whiskey

Steps:

  • Whip yolks until yellow and thick.
  • Add sugar gradually, blending as you go, until thick and well-blended (on high in the mixer).
  • Add half-and-half little-by-little. Add vanilla, nutmeg and alcohol. Blend well.
  • Beat whites of eggs until stiff peaks form.
  • Add to yolk mixture. Strain into pitcher and serve.
  • NOTES : You may increase the vanilla up to 1 tablespoon and the alcohol up to 1 cup, as desired.

1 tablespoon white sugar
1 teaspoon vanilla extract
4 ½ cups milk
4 egg whites
1 fluid ounce rum
¼ teaspoon ground nutmeg

Steps:

  • In a large mixing bowl, beat egg yolks until they are thickened and light. Gradually stir in condensed milk, sugar, vanilla and milk. Beat the egg whites until stiff, then add them to the milk mixture. Stir rum into the mixture (to taste). Garnish with nutmeg.
