I found some long lost recipes yesterday. I'm posting them here for safekeeping. From December 1999 Southern Living.

2 tablespoons butter
2 garlic cloves, pressed
1 1/2 cups milk
1 cup shredded parmesan cheese, divided
8 ounces cream cheese, softened
8 ounces mascarpone cheese
4 ounces gorgonzola
1 teaspoon salt
1 teaspoon white pepper
1/4 teaspoon ground nutmeg
10 ounces frozen chopped spinach, thawed and drained
16 ounces penne, cooked
1 cup soft breadcrumbs

Steps:

  • Melt butter in a Dutch oven over medium heat.
  • Add garlic, and saute until tender.
  • Add milk, and cook until thoroughly heated.
  • Gradually stir in 1/2 c parmesan cheese and next 6 ingredients until smooth.
  • Stir in spinach.
  • Add pasta, tossing to coat.
  • Spoon into a lightly greased 13 x 9 baking dish.
  • Bake at 400 for 7 minutes.
  • Remove from oven; sprinkle with remaining 1/2 c parmesan cheese and breadcrumbs.
  • Reduce oven temp to 350 and bake for 20 minutes.

This recipe from is from Kraft. It's a nice way to doctor up and box of deluxe macaroni and cheese dinner. You can substitute cayenne pepper for the black if you like it spicier.

1 (14 ounce) box deluxe macaroni & cheese dinner mix
1/2 cup cubed extra-sharp cheddar cheese
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
1 egg
1/2 cup milk
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 375. Grease a 2-qt. casserole dish. Prepare the deluxe macaroni and cheese dinner as directed on the package. Combine all the cheeses together, In a small bowl beat the egg, milk and pepper together. Spoon half the prepared macaroni in the casserole dish. Top with half the cheese. Repeat the layers. Drizzle egg mixture over the top.
  • Bake about 15 minutes until center is set and macaroni is heated through.

Kosher salt and freshly ground black pepper
1 pound elbow macaroni
Half a loaf day-old French bread
1 stick (8 tablespoons) unsalted butter
1/4 cup all-purpose flour
2 teaspoons mustard powder
1/4 teaspoon cayenne
3 cups milk
8 ounces fontina cheese, grated (about 2 cups)
8 ounces Gruyere, grated (about 2 cups)
1 pound sharp yellow Cheddar, grated (about 4 cups)

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just slightly softened, about 6 minutes. Reserve 1 cup pasta cooking water, then drain the pasta and rinse under cold water.
  • Meanwhile, remove the crusts from the bread and cut into 1-inch cubes. Pulse in the food processor until the bread breaks into bean-sized pieces.
  • Melt 3 tablespoons of the butter in a large skillet over medium heat. Add the breadcrumbs and cook, stirring, until toasted, 5 to 10 minutes. Remove from the heat and season with salt and pepper.
  • Melt 4 tablespoons of the butter in a large saucepan over medium heat. Whisk in the flour, mustard powder and cayenne. Cook, whisking constantly, until smooth and slightly golden, about 2 minutes. Whisk in the milk and cook, whisking occasionally, until the sauce begins to boil and thicken, about 7 minutes, then remove from heat. Stir in the fontina, Gruyere and all but 1 1/2 cups of the Cheddar until fully melted. Stir in the pasta, adding the reserved pasta water as needed to make a creamy sauce. Season with salt and pepper.
  • Melt the remaining 1 tablespoon butter in a small bowl in the microwave. Brush a 9-by-13-inch glass or ceramic baking dish with the melted butter. Spread the pasta mixture in the prepared dish. Sprinkle the remaining Cheddar evenly over the pasta, then scatter the toasted breadcrumbs on top. Bake until heated through and just bubbling, about 25 minutes. Let rest for 10 minutes before serving.

8 ounces sour cream

  • Combine breadcrumbs, melted butter, and parika in a small bowl, stirring well.
  • Sprinkle breadcrumb mixture diagonally actoss top of casserole, making stripes.
  • Bake at 350 degrees for 30 to 40 minutes or until golden brown.

2 cups small curd cottage cheese
1 cup sour cream
1 egg, lightly beaten
3/4 teaspoon salt
garlic, salt and pepper --
2 cups sharp cheddar cheese, shredded
1 (7 ounce) package elbow macaroni, cooked and drained
to taste paprika (optional)
to taste buttered bread crumb

Steps:

  • In a large bowl, combine the cottage cheese, sour cream, egg, salt, garlic salt and pepper.
  • Add cheddar cheese; mix well.
  • Add macaroni and stir until coated.
  • Transfer to a greased 2 1/2 quart baking dish.
  • Top with bread crumbs.

8 tablespoons butter
1/4 cup finely diced onion
4 tablespoons all-purpose flour
2 cups milk
8 ounces sharp white cheddar cheese, grated (you can experiment with cheeses of course, I think I put in bits of a few kinds I had on hand)
1 cup heavy cream
salt
white pepper
1 teaspoon Dijon mustard (or more to taste, regular, not honey)
3/4 lb macaroni or 3/4 lb choice of shaped pasta, cooked, drained, and cooled, tossed with a little butter to prevent sticking
1/2 cup plain breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Meanwhile, melt 4 T. of the butter in a medium saucepan over medium heat.
  • Saute onions until tender and translucent.
  • Whisk in flour to make a roux and cook for a couple minutes, stirring, until golden.
  • Slowly whisk in the milk with a wire whisk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes.
  • Remove pan from heat and whisk in grated cheese. Stir vigorously until cheese has just melted.
  • Then whisk in heavy cream to achieve the desired consistency and season to taste with the salt, white pepper and mustard.
  • In a mixing bowl combine sauce with drained macaroni and adjust salt and white pepper to desired flavor.
  • Transfer mixture to a 13 x 9 inch baking dish and spread it out evenly.
  • Sprinkle bread crumbs on top and dot with remaining 4 T. of butter.
  • Bake until hot and bubbly, about 30 minutes.
  • Let stand 5 minutes before serving.

2 cups elbow macaroni, cooked
2 tablespoons butter or 2 tablespoons margarine, if you prefer
2 tablespoons flour
1/2 teaspoon pepper
1/2 teaspoon paprika
2 1/2 cups milk
1 1/2 cups grated cheese (I use colby or jack for a milder flavor or sharp cheddar for a stronger cheese flavor)

Steps:

  • Melt butter and blend in flour and pepper, blending well.
  • Add milk and stir constantly over medium heat until thickened.
  • Add 1 cup of the grated cheese and stir until melted.
  • Combine macaroni with sauce and pour into a lightly greased 2-quart casserole dish.
  • Top with remaining cheese and sprinkle paprika on top.
  • Bake uncovered at 375° for 25 minutes.
