3 large eggs, beaten
1 c sugar
1 tsp freshly grated nutmeg
1 tsp cornstarch
1 1/2 tsp vanilla
1 1/2 c whole milk (not buttermilk)
1 9-inch deep-dish prepared pie shell (store-bought or homemade)

Steps:

  • 1. Preheat the oven to 350 degrees.
  • 2. Whisk the eggs, sugar, nutmeg, vanilla, cornstarch and milk together in a medium bowl until combined. Pour into the pie shell and bake for 45 minutes, until the pie is set; a knife inserted into the center should come out clean. Let the pie cool to room temperature before serving.

I'm a former Home Economics teacher and found this in one of my 1978 Favorite Recipes of Home Economics teachers. A great use for egg yolks left over from Egg Nog!!

Number Of Ingredients 8

6 egg yolks
1/2 c sugar
1/3 tsp salt
1/4 tsp nutmeg
2 c scalded milk
3/4 tsp vanilla
1 unbaked pie shell
oil

Steps:

  • 1. Beat eggs yolks slightly;beat in sugar, salt, nutmeg, scalded milk and vanilla. Brush pie shell lightly with oil. Pour egg mixture into pie shell. Bake at 450 degrees for 15 minutes; reduce heat to 350 degrees. Bake 25 to 30 minutes longer or until knife inserted in center comes out clean. The center may still look a bit soft but will set later. Baking too long makes custard watery. Best if served slightly warm.

3 eggs
1 cup white sugar
¼ cup butter, melted
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon vanilla extract
½ teaspoon ground nutmeg
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Bake pie shell at 400 degrees F (205 degrees C) for 5 minutes. Set aside.
  • Combine melted butter or margarine, sugar, flour, milk, vanilla, and nutmeg. Add beaten eggs, and blend well. Pour filling into partially baked pie shell.
  • Bake at 325 degrees F (165 degrees C) for 45 to 55 minutes, or until an inserted knife comes out clean. Do not overcook.

1 1/2 c sugar
5 eggs
2 c milk
1/2 stick butter
tsp vanilla
pillsbury pie crust

Steps:

  • 1. Preheat oven to 350 degrees. Put a pillsbury pie crust into pie plate. Put pie crust into oven while you prepare filling. This will prevent bottom from being soggy.
  • 2. Mix sugar and eggs until creamy. Bring milk to boil and add to mixture. Melt butter and add along with the vanilla.
  • 3. Pour into crust and bake for 20 minutes until set.
