ZESTY MIXED SALAD WITH ITALIAN SAUSAGE
Our FAVORITE salad ever. . .it's a spin on one of Giada's recipes. Great as a main dish or as a side. I love the mix of the lettuce, warm salty sausage, creamy cheese and beans along with the sweet dressing. Sure to please anyone!

Steps:
- Mix up the Italian Dressing as per the instructions on the package (I usually add a little extra water, but that's up to you). It is also good to use raspberry flavored vinegar.
- Add honey to the dressing and shake/mix well.
- Brown the sausage, drain and set aside (keeping warm, but not hot).
- In the meanwhile place the lettuce on the bottom of a big bowl.
- Top with the tomatoes, both types of beans, green onions and finally the cheese.
- Top the salad with the warm sausage.
- Pour 3 or 4 turns of the dressing over the salad and mix well with tongs. Add more dressing if you like, but be forwarned that a little dressing goes a long way with this salad.

- Heat the oil in a heavy medium skillet over medium-high heat. Add the sausage and cook until brown and cooked through, breaking the sausage into bite-size pieces, about 5 to 8 minutes. Transfer the sausage to a plate. Cool to room temperature.
- Chop and combine the lettuce, tomatoes, cheese, and cooked sausage in a large bowl. Add beans and enough vinaigrette to coat. Season the salad with salt and pepper, to taste, and serve.

- Cook in a skillet coated with nonstick spray about 3 minutes each side, meat thermometer should read 165 degrees.

My family's version. Great for any recipe that calls for Italian sausage. I have had some luck shaping into sausages and *carefully* browning them on all sides, covering the skillet with a lid, and cooking over medium heat for 8-10 minutes.

- Shape into patties, links, or crumble into skillet and brown over medium heat.

- 1. Prepare charcoal grill with medium-hot coals or heat gas grill to medium-high; coat rack with nonstick cooking spray. For dressing, whisk together 4 tablespoons of the oil, the vinegar, garlic, oregano, salt, and pepper. Set aside. 2. Brush tomatoes, eggplant, and onion with remaining 1 tablespoon oil. Pierce sausages several times with the point of a small knife. Grill vegetables and sausages, turning often, 13 to 15 minutes, or until sausages are no longer pink and vegetables are crisp-tender. 3.
