ITALIAN-STYLE PORK CHOPS
An Italian-style version of pork chops was one of the first recipes I tried making in the early years of my marriage. I've changed it over the years to be healthier by reducing added oil and fat, and by adding in some vegetables. It works well served over hot rice. -Traci Hoppes, Spring Valley, California

- In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In the same skillet, brown chops in remaining oil. Add the marinara sauce, olives, remaining salt and pepper, and reserved pepper mixture. Bring to a boil. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 10-15 minutes. Let stand for 5 minutes before serving.

- Preheat oven to 425 degrees F (220 degrees C).
- In a medium bowl, combine the crushed saltines, Parmesan cheese, Italian-style seasoning and garlic powder and mix together well.
- Dip the chops in the melted butter and then dredge each chop in the cracker mixture, coating all sides thoroughly. Place the chops in a 9x13 inch baking dish.
- Bake at 425 degrees F (220 degrees C) for 30 to 40 minutes, or until internal pork temperature reaches 145 degrees F (63 degrees C).

- Heat the oil in a 12-inch nonstick skillet over medium-high heat, add the pork chops and sprinkle both sides with the rosemary (or oregano) and salt, cook the chops, turning occasionally, until well browned on both sides, about 6-7 minutes.
- Add the onion, garlic, and zucchini slices, and continue cooking until the onions are soft about 5-6 minutes longer.
- Add the pasta sauce, stirring until it is well combined with the chops and vegetables, adjust the heat so that the sauce simmers gently and cook 6-8 minutes longer, or until the zucchini slices are crisp tender and the chops are just cooked through, tested in the thickest part with the point of a paring knife.
- Serve the chops and zucchini sauce mixture over the pasta.

- Sprinkle pork chops with a little salt and pepper.
- Brown chops on both sides in oil in skillet over medium heat.
- Remove chops from skillet; drain and set aside.
- Cut the top off of 1 bell pepper; remove the seeds.
- Cut six 1/4 -inch thick rings from the other bell pepper; set aside.
- Seed and chop remaining bell pepper.

- 1. I am using 1 thick cut pork chop per person and 2 sausage links per person, so you can portion size this dish according to how many your feeding. Could be 6 or 8, size pan accordingly.
- 2. POTATOES FIRST: With skins on, clean and boil until fork tender all your potatoes, set aside and cool. When cooled and remove skins and cut into wedges, set aside.
- 3. PORK CHOPS AND SAUSAGE: Pan should be the size needed to hold all chops,sausage and potato wedges. Put in the bottom of the pan just a sprinkle of olive oil and 3/4 cup of water. Place your pork chops, sausage and potato wedges on top of olive oiland water for all to fit. Sprinkle with just a little grated cheese.
- 4. TOPPING: Chop vidalia onion, add grated cheese, Italian seasoned bread crumbs and mix together. Sprinkle all of this all over the chops, sausage and potato wedges. Sprinkle with a little more olive oil and BAKE 350 for 1 hour until pork chops are done, check that they are done and sausage is done according to your ovens heat. TENDER ITALIAN-STYLE PORK CHOPS IN A CROCK-POT
Whenever I prepare this crock-pot dish the "F" word comes to mind ...FLAVORFUL! The porkchops slowly simmering in tomatoes, garlic, onion, wine and Italian seasonings will have your kitchen smelling wonderful and your family's mouths watering. The chops are so moist and tender that you can cut them with your fork. It makes for a perfect weeknight family meal, the church pot-luck dinner, or a relaxed dinner party. One taste, and everyone is sure to come back for seconds.

- Wash chops and pat dry with paper towels. Trim excess fat from meat.
- In a large skillet, heat the olive oil.
- Coat the pork chops in a mixture of flour, salt, garlic and onion powders, and Parmesan cheese. Lightly brown on both sides in the heated oil (YOUR PORKCHOPS SHOULD NOT BE COMPLETELY COOKED); drain chops on paper towels.
- Place the mushrooms, onion, and garlic in the bottom of your crock-pot; add the chops by laying them on top.
- In a large mixing bowl, combine the tomato sauce, whole tomatoes, wine or sherry, lemon juice, salt and spices (except the bay leaves). Give a good stir.
- Pour the tomato sauce mixture over the pork chops. Add bay leaves to crock-pot. Cover and cook on LOW for 7 - 9 hours (HIGH: 4 to 5 hours).
- 30 minutes before the cooking time is up, turn crock-pot to HIGH and arrange the green and yellow pepper rings on top of the pork chops. Cover and continue cooking for the last 30 minutes.
- Just before serving, top with mozzarella cheese. Serve with your favorite hot cooked pasta and a freshly tossed garden salad. Don't forget the warm and crusty Italian bread to dip into the delicious tomato sauce.

Just a little something I threw together in the crockpot. Goes nicely over cooked noodles or rice, or even better- with a nice loaf of crusty Italian bread to soak up the sauce. Some nice Chianti wine would be excellent with this!

- Brown chops in oil in a skillet.
- Place chops in the bottom of the crockpot.
- Cover chops with peppers, onions, and artichoke hearts.
- Stir together remaining ingredients in a small bowl.

I searched and searched and found 2 recipes on here that sounded good, but combined the 2 with my own personal tastes and ideas. - Remove to a platter. Wipe out excess oil and fat with a paper towel.

- Add chops and top each (covering completely)with most of the sauce, leaving some on the bottom underneath each chop.
- Place on tight-fitting lid, and bring to a simmer.
- Simmer for about 1 hour on LOW heat til very tender, stirring sauce ocaisionally so it doesn't burn or stick. (*I didn't need to turn these, but did always make sure they were totally covered with the sauce to keep them moist.).
- Serve over or with mashed potatoes, rice or noodles.
- Note: I made 3 pork chops, and there was plenty of gravy to go with our mashed potatoes. Served them also with green beans, bread and butter and a nice salad! :).
- *If making 4 chops, there might not be enough gravy to top mashed potatoes or noodles, etc., so plan ahead and either make more sauce or top what you are serving it with, with a little butter.

- 1. Trim the fat off the pork chops, rinse well and pat dry . Cut the pork chops in half or however you need so you can fit them in your pot.
- 2. In a large pot, mix spaghetti sauce, tomato sauce, garlic, parsley, basil and spices. If sauce is very thick add a water a few tablespoons at a time until it reaches a slightly thin consistency. Place pork chops into the sauce so they are covered. Bring to a simmer on medium-low heat then turn down to low heat. Cook 1 1/2 to 2 hours. Gently stir occasionally, making sure the pork chops stay covered.
- 3. Add the onions, peppers, mushrooms and canned tomatoes and cook another 1 1/2 to 2 hours, gently stirring. Pork will slowly cook and become very tender. This dish is done when it can be easily separated with a fork.
- 4. Using a fork and spoon (I use a large salad fork and wooden stirring spoon) separate the pork so it is in bite size and smaller pieces. Serve hot over pasta with a sprinkle of grated Parmesan on top.
- 5. If you want to do this in the crockpot, add 1 cup of water to the sauce and double the cook times. Cook on low heat.
