GRILLED ITALIAN SAUSAGE WITH PEPPERS AND ONIONS
Italian sausage, bell peppers, and onions made easy on the grill. You can also serve the sausage in hot dog buns and finely chop the veggies once grilled as a "relish". I like to add a squirt of mustard when I serve them this way.

EASY ITALIAN SAUSAGE, PEPPERS AND ONIONS FOR A CROWD OR A FEW
When my children are home for the summer they always ask for grilled foods and Italian sausage subs are a great meal for dinners or lunch. Well making 6-8 is easy enough on the grill but then all the friends are here (LOVE THAT) so I need to make enough for 20-30. Came up with this easy way to do sausage and they do taste great.

ITALIAN SAUSAGE WITH PEPPERS AND ONIONS OVER POLENTA
Steps:
- In a large skillet, warm 2 tablespoons olive oil over medium-high heat. Add the sausages and brown well. Remove and set aside. Reduce heat to medium and stir in the peppers and onions. Sauté, stirring often, until very tender and lightly browned, about 8 minutes. Return the sausage to the pan and stir in the remaining olive oil and the oregano. Reduce heat to very low, cover and set aside while you make the polenta. To make the polenta, bring water to a boil in a teakettle. Turn off heat. Bring broth to boil in a large, heavy saucepan. Reduce heat to low. Stir in the salt and olive oil. Add the polenta very, very gradually, stirring constantly with a wooden spoon. Take your time. Once all the polenta is added let it cook over very low heat for about 5 minutes, stirring constantly. If the polenta becomes to thick to stir, pour in some hot water and blend it in. The polenta is done when it is smooth, shiny and tender. Turn off the heat and stir in the butter and Parmesan. Divide polenta among 4 bowls. Spoon sausage, peppers and onions over the polenta and serve. Pass extra Parmesan for sprinkling.

ITALIAN SAUSAGE WITH POTATOES, ONIONS, AND PEPPERS
I got this recipe from my mother inlaw, it is cheap and easy to put together. I love to throw this together on a cold, snowy Sunday morning - then I can just throw it in the oven later and go about my business while dinner cooks. Add a salad or crusty itallian bread for a side and you are all set. I sometimes use turkey sausage for a lower fat dish.

It's not even difficult, and so impressive, fun, colorful and filling. You can even prepare the sauce in advance and rewarm it when you're ready to cook the pasta.

ITALIAN SAUSAGE, PEPPERS, AND ONIONS
he daily consumption of fresh meat began to decline by 1550 as the population was now fully recovered from the Black Death of two centuries before, and, as a result, more land was devoted to the more labor-intensive agriculture rather than stock rearing. As fresh meat consumption declined, the salting of meat grew to supply the men of many ships and to form a part of the meager diet of the poor.

Steps:
- We cook our sausage, peppers, and onions dish in the oven so the cooking process is fairly straightforward. Begin by adding the cut sausage and diced peppers and onions to a large, and flat, oven proof glass casserole. Season the items with Kosher salt and freshly ground black peppers. Drizzle the your layer of sausage, peppers, and onions with high quality extra virgin olive oil and mix well. Next, add your diced garlic, 1/2 cup of chopped parsley, tomatoes, and 1 tablespoon of dry red chili pepper flakes. Mix well and add the white wine. Place the casserole, uncovered, in a 375 degree Fahrenheit oven for 30-40 minutes (stirring the mixture every 15 minutes or so) or until the sausage is golden brown and the vegetable have caramelized and cook down a bit.
