ITALIAN MEATLOAF
Italian Meatloaf blends Italian sausage and ground beef with spices and cheese for a tender one dish meal. The perfect family meal!

Steps:
- Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
- In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
- In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
- Add crumbled ground beef and sausage, breaking into small pieces.
- Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
- Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
- Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
- Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
- Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

My mom gave me this recipe, and everyone agrees it is the best ever, I think it's because of the Italian sausage. It's great the next day too. But we usually don't have many leftovers.

- Preheat oven to 400 degrees F (200 degrees C).
- Chop sausage finely. In a large bowl combine beef, sausage, egg beat, bell pepper, onion, cereal, milk, Worcestershire sauce, salt and pepper. Mix together and press into a loaf pan.
- Bake in the preheated oven for 1 hour, or until cooked through. Drain grease from loaf pan periodically during baking. Let stand 10 minutes before serving.

ITALIAN SAUSAGE MEATLOAF SANDWICH
This simple recipe was devised from a rare flash of inspiration and ingredients I had on hand. I started out making a regular pasta dinner & got sidetracked after I had made the bread and thawed the meats. I used premade basil pesto & jarred onion-garlic marinara sauce to speed this dinner along. This could be easily changed to reflect what you have to use up. *Definitely a recipe for skinny, heart healthy folks! The rest of us can only lick our chops.

Steps:
- Preheat oven to 350°F.
- Mix meatloaf ingredients together (use your hands, it's easier).
- Dump meat mixture into a baking dish and pat into shape and size to fit your bread.
- Bake for 20 minutes, remove from oven & cover with 1/2 cup pasta sauce. Return to oven & bake 20 minutes more.
- Cut bread into thick slices -3/4-inch or so. Slather with pesto.
- Slice hot meatloaf into 1/2-inch slices. (tricky but you can do it!) Place a slice on top of pesto.
- Mix 1/2 cup pasta sauce with cheese & spread on top of meatloaf.
- Put sandwiches under the broiler till bubbly & hot & bread is crispy on the edges.
- Serve with the rest of the sauce, heated in the microwave for 30 seconds.
- You will need a knife & fork!
- * If you really want to go for the gusto, top sandwich with a slice of mozzarella or your favorite cheese before broiling.
- Cooks note: As written, the number of servings is just a guess. Depends on the hollowness of the diners' legs. ;-).
